SHRIMP COCKTAIL WITH REMOULADE SAUCE

Steps:
- Prepare a large bowl of ice water; set aside.
- Bring the white wine, salt and 8 cups water to a boil in a pot, then reduce to a low simmer. Stir in the shrimp and cook at a very low simmer until the shrimp are pink, firm and cooked through, 3 to 5 minutes. Drain and transfer the shrimp to the prepared ice water bath. Once cooled, drain and serve with Remoulade Sauce on the side.
- Put the mayonnaise, sour cream, relish, seafood seasoning, tarragon, vinegar, lemon zest and juice and shallot in a large bowl and whisk to combine. Season with salt if using and cracked pepper. Serve immediately or cover and refrigerate until ready to serve.
AUTHENTIC MEXICAN SHRIMP COCKTAIL (COCTEL DE CAMARONES ESTILO MEXICANO)
I prepare this refreshing shrimp cocktail for my family a lot during the hot summer days. Being a Mexican family, we always add Mexican hot sauce (such as Valentina® or Tapatio®) and serve with saltine crackers on the side. The trick is to start with well-chilled shrimp, ketchup, and tomato juice cocktail so it can be ready after only chilling 1 hour in the fridge. Top with additional hot sauce and avocado slices if desired. Enjoy!

- Mix onion with lime juice in a small bowl and allow to stand for 10 minutes. Meanwhile, toss shrimp, roma tomatoes, cucumber, celery, jalapeno, salt, and black pepper in a bowl until thoroughly combined.
- Whisk tomato and clam juice cocktail, ketchup, cilantro, and hot pepper sauce in a separate bowl; stir dressing into shrimp mixture. Gently fold in avocados. Cover and chill thoroughly, at least 1 hour.

CHEF JOHN'S SHRIMP COCKTAIL
Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant. I'm sure I enjoyed the shrimp, but what I really loved was dipping the crackers in the spicy, horseradish-spiked cocktail sauce.

Steps:
- Stir water, onion, lemon, garlic, tarragon, seafood seasoning, peppercorns, and bay leaf together in a large pot; bring to a simmer and cook until flavors blend, about 15 minutes.
- Whisk ketchup, chili sauce, horseradish, lemon juice, Worcestershire sauce, hot sauce, and salt together in a bowl; refrigerate until chilled, at least 15 minutes.
- Bring poaching liquid to a rapid boil. Cook the shrimp in the boiling liquid until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Transfer shrimp to a bowl of ice water and immerse in ice water until cold; drain. Arrange cold shrimp on a platter and serve with chilled sauce.

K-JON'S JAMBALAYA
I got this recipe from a cookbook by Frank Davis a Chef from New Orleans. I have doctored it up over the years to suit my tastes. I hope you enjoy.

Steps:
- 1.) Brown the sausage till crisp, remove and set aside.
- 2.) Brown the chicken in sausage oil, remove and set aside.
- 3.) Saute your Holy Trinity (peppers, celery and onion) 5minutes.
- 4.) Add dry spices and cook 5 minutes more.
- 5.) Add meat, tomatoes, rice and stock and bring to a simmer.
- 6.) Now you can cover and cook on stove top for 1 hour or transfer to a 10 X15 glass pan cover with foil and cook 1 hour.
- 7.) If you want to add shrimp do it at minute 45 and cook for 15 more minutes.
- 8.) Now add Fresh Parsley and scallions and fold into rice mixture and serve with ice cold beer!

K-JON'S CREOLE COCKTAIL SAUCE
I grew up in New Orleans and this is as close as it gets to the bold, tangy and rich sauce used for all southern seafood. Fried shrimp, raw oysters, and catfish this makes a giant explosion of flavor in your mouth. I hope you like as much as my family and I do!

CREOLE BOILED SHRIMP COCKTAIL
This recipe is from Emerils cookbook "Emeril's kitchens", which is basically a compilation of recipes from all of his restaurants. This one is from Delmonico's Steakhouse. It is really easy prepare despite all the ingredients. It is absolutely the best shrimp cocktail I have ever eaten.

Steps:
- FOR SHRIMP:.
- In a large bowl toss the shrimp with 2 tablespoons of the creole seasoning or essence.
- Coat evenly.
- Combine 3 gallons water, the Zatarains boil, salt, remaining 2 tablespoons of creole seasoning, the 2 halved lemons, onion, celery, bay leaves, and garlic in large stockpot.
- Bring to a boil and taste.
- The salinity of the water should be that of saltwater.
- Add the shrimp and cook stirring frequently until pink and cooked through, 3-4 minutes.
- drain in colander, transfer to a bowl and cover with plastic wrap and refrigerate about 1 hour.
- FOR CREOLE SEASONING:.
- Combine all ingredients and mix thoroughly.
- Store in an airtight container for up to three months.
- FOR COCKTAIL SAUCE:.
- Combine all ingredients and whisk well.
- Cover and chill for 2 hours.
- Will keep in the refrigerator for up to two days.
- Serve shrimp with the remaining lemon cut into wedges and the cocktail sauce.

I have been making this dish for Christmas Eve for about 17 years. I did skip a year and got yelled at by the elders who "waited all year" to eat it. It is rich and spicy and very much my tastes. I hope you enjoy.

Steps:
- Boil Tripe in a broth of the following for 6 hours:.
- 3 gallons water.
- 1 tablespoon of each of the following: crush red pepper, thyme, paprika,.
- granulated garlic, onion powder, parsley, caraway seeds.
- 1 bottle of white wine.
- 1 onion ¼ er'd, 1 bulb garlic, ½ cup salt.
- Remove tripe and rinse well, remove garlic bulb and save for stew,.
- Reserve 1 quart of strained broth for stew. ( add to taste! very spicy).
- When cool, rinse again & cut tripe in ½"X 2" pieces set aside.
- Stew.
- Sautee all of the following for 15 minutes on mid-high heat:.
- 1 stick butter.
- 4 cups onion (chopped).
- 4 cups bell pepper (chopped).
- 3 cups celery (chopped).
- 2 tablespoons minced garlic.
- Add all of the following and stew for 4 hours:.
- 2- 28oz. can whole tomatoes (Crushed with by hand).
- 1- 28oz. can crushed tomatoes.
- 1 tbs. each: Parsley, Basil, Thyme, Oregano, cayenne pepper.
- 2 Bay Leaves, 2 tbs. sugar,.
- 1 cup calamata olives (pitted& Chopped), ½ cup capers.
- 12 oz. Ham (cubed) (I like Black Forest).
- 2 smoked Ham Hocks ( add meat & remove bone & fat when done).
- Add the following and cook 1 hour more:.
- Tripe, Boiled Garlic (pealed), and reserve broth.
SHRIMP CREOLE II
Steps:
- In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes; set aside. Meanwhile, preheat oven to 300 degrees F (150 degrees C).
- In a large saucepan or pot, melt butter over medium heat, and saute carrots, onions, bell pepper, celery, mushrooms, and zucchini, until just tender. Stir in tomatoes and tomato sauce. Let cook, stirring constantly, for 5 minutes.
- Mix shrimp, pimientos, and chili powder into the pot. Stir in cooked rice and simmer on low heat for 10 minutes.
- Pour mixture into a 9x13 inch dish. Bake in preheated oven until the rice mixture thickens, about 40 minutes.

- Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
- Stir in paprika, cumin and cayenne; cook for 1 minute.
- Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
- Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
- Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

- 1st thaw the shrimp in cold water.
- Brine the shrimp:.
- boil the water and sugar and salt.
- now add the ice and let in melt completely.
- brine should be cold.
- add shrimp for 20 minutes then rinse well under cold water.
- Cook the shrimp:.
- boil the last 7 ingredients for 10 minutes.
- now add the shrimp -- cook for 3- 5 minutes, DO NOT OVER COOK!
- when shrimp are bright pink they are done.
- quickly strain shrimp and add to ice bath for 10 minutes.
- serve with lemon wedges and my creole shrimp sauce #433042.
