Steps:
- 1. Cut or tear the central rib out of each kale leaf and discard. Roughly slice the leaves and put in the small bowl of a food processor with the garlic, pumpkin seeds, basil, olive oil, 2 tbsp lemon juice and 4 tbsp water. Season then pulse, scraping down the sides of the bowl. 2. Transfer the pesto to a bowl and stir in the pecorino. Season and add the extra 1 tbsp lemon juice, if needed. Use as a dip for vegetable crudités and flatbreads or as a sauce for pasta. It is lovely spooned into soups and dressings or stirred into risottos.

VEGAN KALE PESTO PASTA
Whizz up kale, pumpkin seeds, basil and garlic to make this easy kale pesto. It's perfect stirred through wholemeal spaghetti for a healthy vegan meal

Steps:
- Bring a pan of water to the boil. Cook the kale for 30 secs, drain and transfer to a bowl of ice-cold water for 5 mins. Drain again and pat dry with kitchen paper.
- Put the basil, garlic, seeds, oil, nutritional yeast, lemon juice and zest, and drained kale in a food processor. Blitz until smooth, then season. Loosen with a splash of water, if it's too thick.
- Cook the pasta following pack instructions, then toss with the pesto and serve.

- Add all ingredients except for the pumpkin seeds and olive oil to your food processor. Turn on until mixture is pretty smooth (about 1-2 minutes), pausing and scraping down the sides of the food processor as needed.
- Add the pumpkin seeds (1/2 cup). Cover the food processor and gradually pour in the extra-virgin olive oil (1/3 cup) as you pulse the food processor about 10-20 times, or until pumpkin seeds are finely chopped up and olive oil has fully incorporated into the sauce.
- Store the pesto in an airtight container or jar in your fridge for about a week, or in the freezer for up to 6 months. Use on sandwiches, on pasta, on chicken/fish, or any other way you would use basil pesto!
