Steps:
- Heat cranberries in 1 1/2 cups water to boiling; reduce heat. Simmer uncovered until berries pop, about 8 minutes.
- Press cranberries through sieve to remove skins. return juice to saucepan. Add sugar, 1 cup water and the salt; heat to boiling.
- Add farina gradually, stirring constantly. Cook, stirring occasionally, until thickened, 3 to 5 minutes.
- Pour into small mixer bowl. Beat on high speed until pudding becomes fluffy and light pink, 3 to 5 minutes.

FINNISH RAUMA COOKIES (RAUMAN PIPARKAKUT - FINLAND)
This is from "Best of Finnish Cooking", a cookbook by which the author is passing on Finnish cooking heritage to her sons. I haven't tried it yet. It differs from the other piparkakut recipes in that it doesn't use corn syrup. I think the sour cream in this one takes the place of it.

Steps:
- Beat eggs with the sugar until light. Stif in melted butter, sour cream and brandy.
- In another bowl, sift together the flour, cookie crumbs, soda, baking powder and spices.
- Stir the flour mixture into the egg mixture. Mix well. Dough will be very soft. Refrigerate overnight.
- Preheat oven to 350. Make 1-inch balls with your hands. Put them on a cookie sheet lined with parchment or lightly greased.
- Bake until nicely browned, about 15 minutes. Let cookies dry at room temperature a day before storing them in airtight tins.

- Lay swiss cheese over each breast.
- Sprinkle with seasoned salt.

- Preheat oven to 350F.
- Peel, quarter, core and slice the apples.
- Put them in a saucepan with the brown sugar, cinnamon and cranberries bring to the boil and simmer for 1 to 2 minutes.
- Pour this mixture into a greased ovenproof dish, 3 inch deep, 9 inch diameter, (the dish needs to be deep to avoid fruit bubbling out during baking).
- Cream the butter and sugar until light and fluffy.
- Add the beaten eggs a little at the time and incorporating them well before adding more egg.
- Fold in the ground almonds.
- Spoon this almond cake mix on top of the apple-cranberry mixture in the dish and even it out a little bit.
- Put the dish in the oven and bake for 45 to 55 minutes.

- Heat 1 inch salted water to boiling, using 1/2 teaspoon salt to 1 cup water. Add mushrooms. Heat to boiling; reduce heat. Cover and simmer 1 minute. Drain and chill.

- In a bowl, cream butter and sugar. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Stir in cranberries. Pour into a greased 8-in. square baking pan. Bake at 350° for 40 minutes or until lightly browned. Meanwhile, for sauce, combine sugar, flour and salt in a saucepan. Add water and stir until smooth. Cook and stir until mixture comes to a boil.
