LAZY MAN'S BREAD (NO-KNEAD BREAD)
This easy but extra rich No-Knead Sandwich Bread can save you on lazy days! Made with a combination of whole wheat and all-purpose flour, the dough is ready in less than 5 minutes and there's no need to knead. If you're craving something hearty and homemade but have no time to waste, this recipe is for you.

Steps:
- Melt the butter and warm up the milk. Microwaving each for 30 seconds is enough.
- In a medium bowl, mix butter, milk and eggs.
- In a large bowl, combine the dry ingredients. Mix the wet mixture until dough is form and no dry spots remain. It's a very wet dough, so use a spoon or spatula. Don't try to mix it using your hands.
- Let it rest for 1 hour, covered with a damp kitchen towel.
- Place into baking pan. You can use a large loaf pan, or two medium. Grease the loaf pan first with butter or cooking spray.
- Let it rest for 30 minutes on the loaf pan while you preheat your oven to 375°F.
- Bake bread for 40 to 45 minutes, or until the top is nicely golden.
- Wait 10 minutes to serve. No need to wait for more than 10 minutes for this bread. Have it still warm, with lots of butter or whatever your heart desires!

Steps:
- In large sauté pan or saucepan melt butter.
- Add Onions and garlic. Cook on low heat for 2 minutes.
- Add mushrooms. Cook 3 minutes. Add flour and cook 1 minute. Add Sherry and clam juice. Cook until mixture is thick.
- Add light cream, lobster, and the rest of the ingredients. Simmer for 10 minutes.

LAZY MAN'S BREAD
This recipe is a quick bread that takes less than 45 minutes to make from start to finish. . .including the twenty minutes it takes to preheat the oven! I have tweaked the recipe by adding a little something extra depending on what I was going to be serving with the bread. I have added a bit a garlic to serve with chili or a bit of cinnamon to serve as a breakfast bread or make french toast. I have also used Bisquik in place of the self rising flour when I discovered that I did not have any self rising flour.

- Pre-heat oven to 350 degrees (twenty minutes)
- Spray 8 inch cast iron skillet with non stick spray (if your skillet is well seasoned, you do not have to do this step) place one tablespoon of shortening from the 1/4 cup into the skillet
- When oven has preheated for 15 minutes, place cast iron skillet into oven to heat while you make the batter.
- In a medium bowl, combine shortening, flour and milk. Mix well. (May add one of the optional ingredients at this time) Pour immediately into hot cast iron skillet. Return to oven to bake.
- Bake approximately 15 minutes until the top is golden brown. For high altitudes: Add approximately 5 to 8 more minutes to the baking time
MOM'S LAZY MAN COBBLER
The easiest and most tasty cobbler ever. My mother was always able to whip up a wonderful and quick dessert thanks to this recipe.

Steps:
- Pre heat oven to 350.
- place stick of butter in 9x13 size casserole pan and let sit in oven during preheating to melt butter.
- Mix flour, sugar, milk and vanilla with blender until well mixed.
- Pour batter over melted butter.
- Pour fruit and juice evenly over batter. (My husband prefers more bread, less juice so I drain half.).
- Bake for 1 hour.
- Serve warm with ice cream.

- Combine Wet Ingredients. In a separate bowl (or measuring cup) whisk melted butter with the buttermilk and the egg.
- Add Wet to Dry. Pour the liquid ingredients over the dry ingredients. Gently fold all the ingredients until all the flour has been incorporated and a shaggy, wet batter is formed.
- Bake. Bake for 45-50 minutes. Let the loaf cool in the pan for 10 minutes before removing and slicing.
