Katie Lee's Best Barbecue Ribs Ever image

In a small bowl, combine first 8 ingredients. Pat ribs dry with paper towels. Pat rub mixture onto both sides of ribs. Refrigerate 1 hour and up to overnight.

¼ cup brown sugar
2 Tbsp chili powder
1 Tbsp salt
1 tsp freshly ground black pepper
1 tsp dried oregano
½ tsp cayenne
½ tsp garlic powder
½ tsp onion powder
2 racks baby back ribs
1 cup low-sodium chicken stock
2 Tbsp apple cider vinegar
1 cup barbecue sauce, (bottled or homemade)

Steps:

  • In a small bowl, combine first 8 ingredients. Pat ribs dry with paper towels. Pat rub mixture onto both sides of ribs. Refrigerate 1 hour and up to overnight. Preheat oven to 250°F. In a roasting pan, combine stock and vinegar. Add ribs. Cover pan tightly with foil. Bake 2½ hours. Transfer ribs from pan to a platter. Pour liquid from pan into a saucepan; bring to a boil. Reduce heat; simmer 5 minutes or until reduced by half. In a large bowl, combine reduced liquid and barbecue sauce. Preheat grill to medium-high. Grill ribs 5 minutes on each side or until browned and slightly charred. Add ribs to bowl with barbecue sauce mixture; toss to coat. Serve hot.

  • 1. Preheat oven to 250°F. Combine the chili powder, salt, pepper, garlic powder, and onion powder in a small bowl and rub the mixture on both sides of the ribs.
  • 2. Place each rack of ribs on a large piece of aluminum foil, shiny side up. Wrap tightly and place on a baking sheet. Bake for 3 hours.
  • 3. Preheat an outdoor grill to medium high (if you don't have access to a grill, use your broiler). Unwrap ribs and baste with a few tablespoons of barbecue sauce. Grill about 5 minutes per side until browned and crispy.
  • 4. Cut the ribs between the bones and toss in a large bowl with remaining barbecue sauce. Serve hot.
