HONEY AND FLAXSEED BREAD
A delicious whole grain bread. It is my favorite bread of all time! It is for bread makers. You may substitute vegetable oil for flaxseed oil if flaxseed oil is unavailable.

HONEY AND SOY MILK BREAD WITH FLAX SEED
A lovely soft healthy bread that is so simple to make! You can even vary it infinitely (different types of flour and nuts).

Steps:
- Stir warm soy milk, honey, and brown sugar together in a bowl until sugar is dissolved; stir in yeast and let sit until mixture becomes foamy, about 5 minutes. Stir 3 cups flour, ground flax seed, butter, and salt into yeast mixture. Mix remaining flour, 1/2 cup at a time, mixing well after each addition, until dough pulls together.
- Turn dough onto a lightly floured surface; knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl and place dough in the bowl, turning to coat. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 30 minutes.
- Carefully turn dough onto a lightly floured surface; punch dough down. Divide dough into 2 equal pieces and form into loaves. Place loaves into 2 lightly greased 9x5-inch loaf pans. Cover loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Place loaves in the preheated oven and reduce heat to 375 degrees F (190 degrees C); bake until the tops are golden brown and bottom of loaves sound hollow when tapped, 27 to 30 minutes.

HONEY WHEAT BREAD WITH CHIA AND FLAX
This bread is hearty and nutritious. The honey lends excellent flavor, while the chia gel and flax meal give it a nutrional boost. It is great as a sandwich bread or toast.

Steps:
- Place all ingredients into bread machine in the order listed and mix on the "dough" cycle. Punch down dough after the cycle is complete and roll into a sandwich loaf and place in a well-greased bread pan. Allow dough to rise in a warm location for about 45-60 minutes, then bake at 375 degrees for 40 minutes.
- Optional - brush the dough with milk or egg wash prior to baking.
- * Note - prior to making this recipe, soak chia seeds in water to create a chia gel. I keep a fair amount of chia gel in my fridge and use about 2 tbsp of chia gel in this recipe, however food.com does not recognize Chia Gel as an ingredient.
HONEY WHOLE WHEAT BREAD WITH OATS AND FLAX SEED
I liked this one bread recipe but it was lacking some of the healthy additions I like so much in my bread.

Steps:
- The easy way: Throw it all into a bread machine and select dough. When finished proceed to step 9.
- The hard way: Dissolve yeast in warm water.
- In a large bowl, combine butter, molasses, honey and salt and mix well.
- Add yeast mixture and then gradually add flours.
- Turn onto floured surface and knead until smooth.
- Place in buttered bowl and let rise until double.
- Punch down and let rest for a few minutes.
- Divide dough into 4 parts and shape into loaves.
- Place in greased pans and let rise for about an hour.
- Bake at 375* for 35 to 40 minutes.

MILK-AND-HONEY WHITE BREAD

- In a large bowl, dissolve yeast in warm milk. Add honey, butter, salt and 5 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured board; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and shape into 2 loaves. Place in greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Cover loosely with foil if top browns too quickly. Remove from pans and cool on wire racks.
