Pumpkin Ginger Soup Recipe by Tasty image

This dairy-free pumpkin ginger soup is the perfect warming dish to welcome in fall! The slight bite from the jalapeño and Sriracha perfectly balances out the sweetness from the pumpkin. Whip it up this weekend for a cozy day in!

Provided by Rachel Gaewski

Categories     Lunch

Time 45m

Yield 4 servings

Number Of Ingredients 15

1 tablespoon coconut oil
1 medium white onion, diced
2 teaspoons kosher salt
4 cloves garlic, minced
1 fresh ginger, 3 in (7 cm) peeled and grated
1 jalapeño, seeded and minced
2 teaspoons sriracha
2 cans unsweetened pumpkin puree
2 ½ cups vegetable stock
1 can full-fat coconut milk, 13.5 ounce can (380 grams) room temperature
1 lime, juiced
⅓ cup pepitas, toasted
1 can coconut cream, 13.5 ounce can (380 grams), chilled
1 lime, zested
1 cup fresh cilantro leaves, packed, plus more for garnish

Steps:

  • In a large pot, melt the coconut oil over medium heat. Add the onion and 1 teaspoon of salt. Cook for 10-15 minutes, until the onions are translucent and softened.
  • Add the garlic, ginger, and jalapeño. Sauté for 3-5 minutes, until fragrant and softened.
  • Add the Sriracha, pumpkin purée, and vegetable stock and stir to combine. Cover the pot, reduce the heat to low, and simmer the soup for 15-20 minutes, until all of the vegetables are completely broken down.
  • While the soup simmers, make the cilantro coconut cream: Add the chilled coconut cream to a liquid measuring cup or tall, narrow container, along with the lime zest and cilantro. Using an immersion blender, blend until the cilantro is completely broken down and the coconut cream turns pale green in color. Chill the cilantro cream in the refrigerator until ready to serve.
  • Remove the soup from heat and stir in the coconut milk. Using an immersion blender, blend the soup until completely smooth. Season with the remaining teaspoon of salt. Stir in the lime juice. Season to taste with more salt, if needed.
  • Ladle the soup into bowls and top each serving with 1 tablespoon of cilantro cream and toasted pepitas.
  • Enjoy!

PUMPKIN SOUP WITH GINGER CROUTONS

Pumpkin Soup With Ginger Croutons image

Provided by Florence Fabricant

Categories     soups and stews, appetizer

Time 1h30m

Yield 6 - 8 servings

Number Of Ingredients 10

4 slices white bread
3 teaspoons ground ginger
1 tablespoon extra-virgin olive oil
2 tablespoons unsalted butter
1 cup chopped celery
1/2 cup chopped onion
2 cloves garlic, minced
4 1/2 cups pumpkin or butternut squash, in 2-inch cubes
6 cups vegetable stock or water
Salt and freshly ground black pepper to taste

Steps:

  • Remove the crusts from the bread and dice it. Put it in a nonstick skillet over medium heat and cook, stirring, until it is evenly golden brown. Sprinkle with one teaspoon of ginger and the olive oil. Cook another minute or so, tossing the bread cubes so they become evenly coated with the oil and ginger. Remove the croutons from the heat and set aside.
  • Heat the butter in a heavy saucepan. Add the celery and onion, cover and put over medium-low heat about 15 minutes, until the vegetables are tender. Check and stir them from time to time to see that they do not brown. Stir in the garlic and remaining ginger and cook over low heat a minute or so longer.
  • Stir in the pumpkin. Add the stock or water, cover and simmer until the pumpkin is tender, about 40 minutes. Allow the mixture to cool about 15 minutes, then puree it in one or two batches in a food processor.
  • Return the puree to the saucepan and reheat. Season to taste with salt and pepper, then serve garnished with the ginger croutons.

CARROT-GINGER SOUP WITH CURRIED CROUTONS

Carrot-Ginger Soup with Curried Croutons image

This warm and comforting soup is a perfect for cool weather. The ginger in the soup delivers a nice little kick and the curried croutons add great flavor and crunch. If you'd like to make the soup dairy free, replace the melted butter for the croutons with olive oil and omit the butter that's blended into the soup.

Provided by Danielle Alex

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil
1 1/2 pounds carrots, peeled and chopped (about 4 cups)
1 medium onion, chopped (about 1 cup)
1-inch piece peeled and grated fresh ginger (about 1 teaspoon)
1 clove garlic, chopped
Kosher salt
Cracked black pepper
1 cup full-fat canned coconut milk
4 tablespoons unsalted butter
4 slices bread (country, wheat or sourdough)
2 teaspoons curry powder

Steps:

  • Place a baking rack in the middle of the oven and preheat to 400 degrees F. Line a small baking sheet with parchment and set aside.
  • Heat the oil in a large pot over medium-high heat. Add the carrots. Cook, stirring occasionally, until the carrots turn bright orange, about 2 minutes. Add the onions and cook until translucent, about 3 minutes. Add the ginger, garlic, 1 teaspoon salt and 1/4 teaspoon pepper and cook, stirring, until fragrant, about 2 minutes. Stir in the coconut milk and 3 cups water. Bring to a boil, reduce the heat and simmer until the carrots are completely tender, about 10 minutes.
  • Meanwhile, make the croutons: Melt 2 tablespoons of the butter. Remove the crust from the bread and cut the slices into 1/2-inch cubes. Toss the cubes with the melted butter, curry powder, 1/4 teaspoon salt and pinch pepper. Spread the bread over the prepared baking sheet and bake in the middle of the oven until golden brown, 8 to 10 minutes.
  • Once the carrots are tender, transfer the soup to a blender in two batches. Add 1 tablespoon of the remaining butter to each batch and blend until smooth. Reheat the soup if necessary. Taste and adjust the seasoning. Serve hot topped with the croutons.

EASY ROASTED CARROT GINGER SOUP WITH GREEK YOGURT AND CROUTONS

Easy Roasted Carrot Ginger Soup With Greek Yogurt and Croutons image

I make variations of this soup whenever I don't feel like doing a whole lot of work. It's warm and satisfying on a cold day, and is pretty good for you, too! It's one of those recipes that's very easy to play around with - roast whatever extra veggies you have around the house, make up new garnishes... Another version I enjoy is using shrimp stock and putting a few sauteed shrimp in each bowl. The recipe could easily be doubled for a larger group of people, but I find that these measurements work very well for a dinner for 2. For a vegan version, simply substitute tofu sour cream for the greek yogurt.

Provided by CptShane

Categories     Vegetable

Time 55m

Yield 2-3 serving(s)

Number Of Ingredients 13

3/4 lb carrot, diced
1 red pepper, diced
4 garlic cloves, halved
2 shallots, sliced thick
4 tablespoons olive oil
coarse salt, to taste
fresh cracked pepper, to taste
2 tablespoons fresh ginger, grated
1 1/2 cups vegetable stock (or whatever stock you like, sometimes I'll use shrimp stock and garnish the soup with sauteed shrimp)
1 dash soy sauce
1 dash hot sauce (optional, I like Louisiana Hot Sauce or Aardvark sauce)
1/4 cup Greek yogurt (or tofu sour cream, for vegans)
1 cup crouton (can be store-bought, or make your own)

Steps:

  • Preheat the oven to 400 degrees.
  • Dice the pepper and the carrots and halve the garlic cloves. Toss with olive oil, salt, and pepper, and spread on a baking sheet in a single layer.
  • Roast the veggies for 40 minutes, or until they start to get brown and caramelize. Stir once or twice during roasting.
  • Put grated ginger, stock, and a glug or two of soy sauce into the food processor. Add some hot sauce if you like it spicy.
  • Put all the roasted veggies into the food processor and puree until smooth.
  • At this point the soup will have cooled down a bit, so you can either pop it in the microwave or put it in a pot on the stove for a few minutes to warm it up.
  • Serve with a dollop of greek yogurt on top and lots of crunchy croutons!
