1 (15 ounce) can pumpkin
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
  • Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

4 ounces cream cheese, softened
1 tablespoon milk or half and half
1 tablespoon sugar
1 ½ cups frozen non-dairy whipped topping, thawed
1 (6 ounce) KEEBLER® READY CRUST® Graham Pie Crust
1 cup cold milk
2 (3.4 ounce) packages vanilla instant pudding and pie filling mix
1 (16 ounce) can pumpkin
2 teaspoons pumpkin pie spice*

Steps:

  • Mix cream cheese, 1 tablespoon milk and sugar in large bowl with wire whisk until smooth. Gently stir in whipped topping. Spread on bottom of crust.
  • Pour 1 cup milk into bowl. Add pudding mixes. Beat with wire whisk 1 minute. (Mixture will be thick.) Stir in pumpkin and spices with wire whisk until well mixed. Spread over cream cheese layer.
  • Refrigerate 4 hours or until set. Garnish with additional whipped topping, if desired. Refrigerate leftovers.

1 Keebler® Ready Crust® Graham Pie Crust
1 egg yolk, lightly beaten
2 large eggs eggs, slightly beaten
1 (15 ounce) can pumpkin
1 (14 ounce) can sweetened condensed milk
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
¼ teaspoon ground ginger

Steps:

  • Brush bottom and sides of crust with 1 egg yolk. Place on baking sheet. Bake at 350 degrees F for 5 minutes. Remove from oven. Increase oven temperature to 425 degrees F.
  • In large mixing bowl beat 2 eggs, pumpkin, sweetened condensed milk, cinnamon, nutmeg, salt and ginger on low speed of electric mixer until combined. Pour into crust.
  • Bake on baking sheet at 425 degrees F for 15 minutes. Reduce temperature to 350 degrees F. Bake for 35 to 40 minutes more or until knife inserted 1 inch from crust comes out clean. Cool for 1 hour. Refrigerate at least 2 hours.
  • Garnish as desired. Store in refrigerator.

I make this recipe every year...very delicious. So much lighter than an ordinary pumpkin pie, and simple to make (no "cooking" involved). =) I found this recipe on a Keebler Ready Crust insert a couple years ago.

1/2 cup cold milk
1 (6 ounce) package vanilla instant pudding mix
1 teaspoon pumpkin pie spice
1 cup canned pumpkin
2 1/2 cups Cool Whip, thawed
1 graham cracker pie crust

Steps:

  • In a large bowl, beat milk, pudding mix, and spice with whisk for 1 minute. (Mixture will be very thick.)
  • Whisk in pumpkin.
  • Stir in whipped topping.
  • Spread in crust.
  • Refrigerate at least 2 hours or until set.
  • Garnish as desired. Store in refrigerator.
