1 cup all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
4 cups Kellogg's® corn flakes (crushed to 1 cup) or 1 cup corn flake crumbs
1 cup milk
1 egg
1/4 cup shortening

Steps:

  • 1. Stir together flour, sugar, baking powder and salt. Set aside.2. In large mixing bowl, combine KELLOGG'S CORN FLAKES cereal, milk, egg and shortening. Beat well. Add flour mixture, stirring only until combined. Portion evenly into nine 2 1/2-inch muffin-pan cups coated with cooking spray..3. Bake at 400°F about 25 minutes or until golden brown. An uncomplicated treat for breakfast. These muffins have great texture and huge taste appeal. Great with butter and/or jelly.

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
2 cups corn flakes, slightly crushed (not frosted flakes)
1 1/4 cups milk
1/2 teaspoon vanilla (optional)
1 egg
1/3 cup vegetable oil

Steps:

  • Stir together flour, baking powder, salt and sugar; set aside.
  • Combine crushed corn flakes and milk in large mixing bowl.
  • Let stand about 2 minutes or until cereal is slightly softened. (DO NOT let corn flakes soak in milk any longer than 2 minutes!).
  • Add egg and oil; beat well. Stir in vanilla.
  • Add flour mixture, stirring only until combined.
  • Portion batter evenly into 12 greased 2 1/2-inch muffin pan cups.
  • Bake at 400° about 20 minutes or until lightly browned.
  • Serve warm.
  • NOTE: Variation: Decrease sugar to 2 tablespoons-- Add 1/2 cup shredded Monterey jack cheese with jalapeño peppers to egg mixture before adding flour mixture.

1 cup milk
1/2 cup finely snipped pitted medjool dates or 1/2 cup golden raisin
1 1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs, lightly beaten
1/3 cup unsweetened applesauce
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/4 cup kellogg's corn flakes cereal

Steps:

  • In a medium bowl combine 2 cups KELLOGG'S CORN FLAKES cereal, milk, and dates or raisins; let stand 5 minutes.
  • Meanwhile, in another medium bowl combine flour, sugar, baking powder, and salt; set aside.
  • Add eggs, applesauce, oil, and vanilla to cereal mixture;.beat well.
  • Stir in flour mixture just until moistened.
  • Spoon batter into forty 1 3/4-inch muffin cups greased or coated with cooking spray, filling each 3/4 full; sprinkle tops with finely crushed cereal.
  • Bake at 400F 8 to 10 minutes or until lightly browned and tops spring back when touched.
  • Cool muffins in pans on a wire rack 5 minutes.
  • Remove from pans; cool.
  • Cut muffins in half; fill with assorted fillings (if desired).
