NEW YORK STYLE LEMON CHEESECAKE RECIPE - (4.1/5)

- Preheat oven to 350°F. Grease bottom and sides of a 9-inch springform pan. (Wrap pan in foil if doing water bath. I did not do a water bath but did place the pan on a large cookie sheet to catch butter that would leak out.) Combine cookie crumbs and butter. Press evenly into bottom of pan and up the sides an inch or so. In the bowl of an electric mixer, beat the cream cheese and sugar on medium to high speed until smooth. Blend in milk and then mix in the eggs all at once, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Beat in lemon juice and lemon zest. Pour filling into crust. Bake for 1 hour and 20 minutes or until the center appears firm. Remove from oven and let cool completely on a wire rack. Chill for at least 4 to 24 hours before serving. Top with homemade whipped cream just before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the cracker crumbs, sugar, and butter in a bowl until evenly moistened. Press into the bottom and 1/2 inch up the sides of a 9-inch springform pan.
- In a large bowl, mix together the cream cheese and sugar with an electric mixer until smooth. Blend in the eggs, 1 tablespoon of vanilla, and cream of tartar. Pour over the pie crust.
- Bake in preheated oven until the center is set, about 50 minutes. Allow to cool on counter for 5 minutes.
- Mix together the sour cream, 1 teaspoon vanilla, and 1/2 cup sugar in a bowl until smooth; carefully pour over cheesecake starting from the sides of the pan and working your way to the center.
- Return to oven for another 5 minutes. Allow to cool in pan to room temperature. Refrigerate for at least 6 hours before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Lightly grease the bottom and sides of a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter in a bowl until evenly moistened. Press crumb mixture into the bottom and about 1/2-inch up the sides of the springform pan.
- Whisk flour, sour cream, and vanilla extract in bowl. Set aside.
- Stir cream cheese and sugar with a wooden spoon in a large bowl until evenly incorporated, 3 to 5 minutes.
- Pour milk into cream cheese mixture and whisk until just combined.
- Whisk in eggs, one at a time, stirring well after each addition.
- Stir in lemon zest, orange zest, and sour cream mixture; whisk until just incorporated.
- Pour mixture into prepared springform pan.
- Bake in the preheated oven until the edges have nicely puffed and the surface of the cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken, about 1 hour.
- When the cheesecake is done, turn off the oven and let it cool in the oven for 3 to 4 hours. This prevents any cracks from forming on the top of the cheesecake.

- Preheat oven to 350°F.
- mix together graham cracker crumbs, 1/4 cup melted butter and sugar with a fork until crumbs moistened.
- Pour crumbs into the bottom of a 9 inch springform pan and press down firmly.
- set aside pan and crust.
- In a blender, blend sour cream, 1/2 cup sugar, eggs and vanilla on medium-high speed for about one minute or until smooth.
- Leaving the blender running, add pieces of cream cheese through top of blender one at a time; blend to smooth.
- Blend in lemon zest and juice.
- Turn of blender and gently stir mixture to get out air bubbles.
- Pour into prepared pan.
- Bake for 45 minutes.
- When finished allow to cool in oven.
- Refrigerate for at least 4 hours before serving.

KEVIN'S FAMOUS HINT OF LEMON CHEESECAKE
This recipe comes from my uncle Kevin he takes it to Glamis every year and it is always a big hit with the moter heads. For this recipe you will need a spring form pan. When baking this recipe you should not open the oven door till it is complete Also it must be exactly 1/4 cup leveled off flour or it dose not turn out good.

- Lay butter and cream cheese out for a hour or so till they are nice and soft.
- Put a pan of water on the bottom shelf of your oven.
- Preheat Oven to 450° Degrees.
- Mix gram cracker crumbs with the softened 4 tablespoons of butter and the 1 teaspoon of sugar.
- Press the graham cracker mixture into the bottom of the spring form pan and about half way up the sides.
- In a large bowl mix the 4 8oz packages of softened cream cheese and the 1 1/2 cups of sugar until smooth. Then mix in the 3/4 cup of whole milk until smooth. Then mix in the 4 eggs 1 egg at a time mix just enough to incorporate then add the next egg and so on. Then mix in the 1 1/8 Cups sour cream the flour the 1 1/8 table spoon pure vanilla extract the juice from 1/2 of a lemon and mix till smooth.
- Pour the cheese cake mixture into the spring form pan.
- Put the spring form pan on the top shelf of the oven and bake at 450° degrees for 10 minutes. Do not open the oven door.
- Turn the temperature of the oven down to 250° degrees and bake for another 1 hour and 20 minutes. Do not open the oven door.
- Turn the oven off and let the cheese cake sit in the oven for 1 hour.
- Remove the cheesecake from the oven and refrigerate it overnight.

- Preheat oven to 325°. Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square).
