GRANDPA'S AUTUMN WAFFLES

Grandpa's Autumn Waffles image

These waffles make a delicious breakfast on a cold Iowa morning. This is my father's original recipe, and I've used it all my life. I've handed it down to my seven children, and I'm sure they'll pass it on to their own children!

GRANDMA B'S SUPER WAFFLES

Grandma B's Super Waffles image

This was my grandma's favorite waffle recipe. It has become a family favorite enjoyed on special occasions not only by her grandchildren but great-great grandchildren as well. The clipping is yellow with age clipped I suspect from the local daily paper many many years ago.

GRANDMA JOYCE'S FAMOUS WAFFLES

Grandma Joyce's Famous Waffles image

My grandmother makes the greatest waffles I've ever had - and I think a lot of the flavor has to do with her special touch, knowing exactly how thin the batter should be. This is the recipe she gave me, and it is really tasty, but be wary that the batter s-h-o-u-l-d be kind of thin (like thin pancake batter). I sometimes have to use twice the amount of liquid because it is very dry where I live and humid where she's from, so feel free to thin the batter to your liking with water. Don't worry - you won't mess these delicious, buttery waffles up! Serve with butter and homemade syrup (recipe below).

Categories     Breakfast

Time 25m

Yield 12 large squares, 4-6 serving(s)

Number Of Ingredients 6

2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 1/4 cups milk (try powdered milk mixed with water)
2 eggs
2/3 cup shortening, melted

Steps:

  • Sift together flour, baking powder, and salt.
  • In a separate bowl, mix together eggs and milk, then stir in melted shortening (you may substitute oil or butter but the resultant texture won't be quite as good!).
  • Pour into dry ingredients and mix well.
  • *Batter needs to be somewhat thin. Add more water if necessary.
  • Waffle iron has to be good and hot before pouring in the batter. Waffles are done when steam stops (if the waffle iron is hot enough, you should be able to hear the waffles steam. You may also see steam around the edges of it. Be careful!).
  • Grandma's Famous Syrup!: In a saucepan, bring to a boil the following ingredients: 2 cups white sugar, 2/3 cup water, pinch of salt, 1 Tbs. white corn syrup. Simmer about 5 minutes, then add 1 Tbs. Maple flavoring.

GRANDMA'S SOURDOUGH WAFFLES

Grandma's Sourdough Waffles image

When we were kids, my grandmother used to make this waffle recipe for us every time we would visit. I loved these waffles, but no matter which restaurants I visited I could never find any I liked as well. I recently bought a waffle iron, and my grandmother sent me the recipe. It tastes best, of course, with real maple syrup. Just a warning: this recipe must be started the night before. I've found, in my own experience, that the taste is stronger if you let it sit for 10-10.5 hours instead of, say, 7.5-8 hours. (I've tried it both ways.) We like it stronger. Note: Down below I included the overnight time under "cooking" since it is considered passive work time. The waffles do NOT cook for that long, of course! Enjoy!

Categories     Breakfast

Time 8h15m

Yield 8-9 waffles, 4 serving(s)

Number Of Ingredients 10

3 cups white flour
1 package dry yeast (1/4 oz. OR 2.25 tsp., depending on your system of measuring)
2 1/2 cups lukewarm water
2 eggs
2 tablespoons oil or 2 tablespoons milk (I like milk)
1 teaspoon baking soda
2 tablespoons sugar
nonstick cooking spray
butter or margarine (for serving)
syrup (for serving)

Steps:

  • The night before you want your waffles, mix the flour, yeast, and lukewarm water.
  • Put in tall bowl, as it will rise quite a bit.
  • Cover with towel and let sit in room temperature overnight.
  • In the morning, uncover and stir.
  • Don't be put off by the texture. It is supposed to look weird. Really.
  • Add the eggs and oil/milk, enough to make it thin enough to use.
  • It might be a little tough to make it all mix together, because it tends to be a bit sticky, but keep at it.
  • Usually helps if you've mixed the eggs a little in a separate bowl, so you're not dealing with a whole yolk.
  • In small, separate bowl combine baking soda and sugar. Mix until no lumps.
  • Add to soda & sugar mixture to bowl with waffle dough.
  • Stir until mixed in.
  • Let sit about fifteen minutes. (A good time to start preheating your waffle iron.)
  • Spray waffle iron with cooking spray. You'll need to repeat this occasionally as the spray wears off.
  • Experiment with amounts of waffle dough to put in the iron and times. For us, we use a ladle and cook each waffle for 3-5 minutes. Those sizes and times work perfectly for us, but I'm sure waffle irons vary in size and cooking times.
  • You can get creative with adding other ingredients. I haven't tried any of these yet, but I've heard adding crumbled bacon, blueberries, grated apples, etc. to the mix before making the waffles works well.
  • For us, the recipe usually yields 8-9 waffles, enough for 3-4 people. It might differ for your waffle iron.

GRANDMA'S WAFFLE COOKIES (PIZZELLES)

Grandma's Waffle Cookies (Pizzelles) image

I could always count on finding these authentic Italian cookies in Grandma's freezer, and her house always smelled yummy! They're great dipped in milk. Grandpa was a blacksmith and actually made their waffle iron, which I still have, although I use my modern electric pizzelle maker when making these.

Provided by Darla O

Categories     World Cuisine Recipes     European     Italian

Time 1h

Yield 72

Number Of Ingredients 8

6 eggs
2 ½ cups white sugar
½ cup vegetable oil
½ cup butter, melted and cooled
1 teaspoon anise oil, or more to taste
5 cups all-purpose flour, or as needed
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Combine eggs, sugar, vegetable oil, butter, and anise oil in the bowl of a stand mixer fitted with a paddle attachment. Beat until creamy and well combined. Mix in 1 cup flour, baking powder, and salt until combined. Slowly add remaining flour, 1 cup at a time, mixing on low speed until mixture resembles a thick pancake batter.
  • Preheat a pizzelle cooking iron according to manufacturer's instructions. Drop a teaspoon of dough onto each plate of the cooking iron and close the lid. Cook just until steaming slows, 10 to 20 seconds. Repeat with remaining batches of batter.
