KETO BAKED AVOCADO EGGS
A protein loaded, super delicious, keto, low carb, egg-avocado combo is definitely the best way to start your day. It's a super healthy and easy to perfection recipe that you will absolutely love.

Steps:
- Preheat the oven to 300F. Wash the avocado and chop it in two. Remove the seeds and about four tablespoons of pulp. (You can use 2 small avocados instead of 1 large)
- Chop the cheese and bacon into small pieces.
- Put the halves of avocado in a baking dish and sprinkle with olive oil.
- In the center of each avocado, pour two eggs, and cover with cheese and bacon.
- Bake for about 25 minutes or until the cheese is browned.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Scoop out a little of the avocado from where the pit was to make room for 1 egg. Place on a baking sheet and crack 1 egg on top of each avocado half.
- Bake in the preheated oven until egg is cooked, 15 to 20 minutes. Sprinkle Cheddar cheese on top and season with salt and pepper. Garnish with fresh parsley.

- Remove pits from avocados by cutting them in half lengthwise. Using a spoon, carefully remove a small amount of the avocado flesh around the pit to give the egg more space.
- Into a small bowl, crack one egg. Transfer this carefully to one of the avocado halves. Place the avocado on the muffin tin and repeat the process for all four halves. Season each half with salt and pepper to taste.
- Place into pre-heated oven and bake for 20-25 minutes (or until eggs are cooked to your desired consistency).
