Combine blueberries and bananas in these tender, golden loaves. Whether you enjoy a slice as a snack or for breakfast, this bread is so flavorful, you won't need butter.

2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This banana bread is one of the best low carb bread I've ever made. It's moist and doesn't taste healthy or low carb at all. You would be making this every week and will surely blow you away!

1 1/2 cup blanched almond flour
1 1/2 Banana (save the other half for decorations)
3 eggs
2 tbsp butter (melted and cooled)
1/4 cup stevia
1/2 tsp cinnamon
1 tsp baking powder
1/4 cup walnut (crushed)
1/4 cup blueberry
1/2 tsp vanilla extract

Steps:

  • Preheat the oven to 355 degrees F. Line loaf pan with parchment paper all the way to the sides.
  • Mash 1 banana in a large size bowl (do not mash the other half, we are going to use it for decoration). Add in eggs, vanilla extract and melted butter. Stir well with a hand whisk until combined.
  • In another bowl, mix together almond flour, stevia, cinnamon, and baking powder. Add to the bowl of the banana mixture and stir to combine. Fold in blueberries.
  • Transfer banana mixture to the prepared loaf pan, spread the top evenly using an offset spatula. Add the banana on top and sprinkle with crushed walnut all over the top.
  • Bake for 40-45 minutes or until the toothpick comes out clean. Start checking at minute 30. Remove from the oven and let it completely cool before taking out of the pan.

3 ripe bananas
2 eggs
½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
  • Allow to cool for 15 minutes before serving.
  • Enjoy!

½ cup unsalted butter, at room temperature
¾ cup white sugar
2 large eggs
4 each ripe bananas
1 teaspoon pure vanilla extract
2 cups unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup fresh blueberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Beat butter in a large bowl until nice and creamy. Add sugar and mix until smooth. Add eggs one at a time, mixing until blended. Mix in bananas and vanilla extract.
  • Sift flour, baking soda, and salt together in another bowl. Mix into the banana mixture and fold in blueberries. Pour into the prepared loaf pan.
