This Chicken Egg Foo Young recipe keeps you low carb and on track when you're craving a good asian dish.

4 large eggs
4 oz chicken thigh
1/2 cup Broccoli
2 tbsp coconut oil
1/2 tbsp liquid aminos
1/2 tsp garlic powder
1/4 tsp pepper
Pink Himalayan Salt ((to taste))
1/4 medium white onion

Steps:

  • Mix four eggs and set aside.
  • Heat skillet to medium-high heat and add 1 tbsp of coconut oil.
  • Add cut up chicken thigh and heat until fully cooked through.
  • Add broccoli and onion to cooked chicken and cook for additional 3-5 minutes.
  • Add chicken, onion and broccoli to eggs. Add garlic powder, soy sauce, salt and pepper.
  • Add second tbsp of coconut oil to heated pan.
  • Using a 1/3 measuring cup scoop out some of the egg, chicken and broccoli mixture and pour into the pan.
  • Using a spatula push egg mixture towards center of pan making a smaller circle. Cook for 2-3 minutes and flip. Cook for another 2 minutes.
  • Repeat until all mixture is used. Serve warm and enjoy!

8 large eggs
1/4 cup thinly sliced celery
1 cup chopped kale
1 cup alfalfa sprouts
1 cup chopped cooked chicken
salt and pepper (to taste)
14.5 fl ounces chicken broth
5 drops liquid stevia
2 tablespoons tamari (or coconut aminos)
1/2 teaspoon xanthan gum

Steps:

  • Beat eggs in a large bowl and then stir in remaining ingredients for the omelette.
  • Heat 1-2 tablespoons oil in a medium skillet over medium heat. When pan is hot, drop about 1/2 to 2/3 of omelette mixture into pan at a time. Brown each omelette on both sides, about 2-3 minutes each. Remove each cooked omelette to a plate.
  • Heat chicken broth, stevia, tamari (or coconut aminos), and xanthan gum in a saucepan over medium high heat until boiling, stirring occasionally. Remove from heat.

8 Eggs
8 ounces Chicken (fineley chopped and cooked )
1/2 Red Bell Pepper (finely chopped )
1/2 Medium Onion (finely chopped )
1/2 cup Bean Sprouts
1/3 cup Green Onion (chopped )
1/2 tsp Garlic Powder
1 cup Chicken Broth
1/2 tbsp Rice Wine Vinegar
2 tbsp Soy Sauce
1/2 tsp Xanthan Gum

Steps:

  • Combine all of the ingredients for the egg foo young together in a large mixing bowl, and whisk to combine well.
  • Heat a few inches of oil in a deep sided skillet over medium high heat on the stove.
  • Drop ⅓ cup of the mixture at a time into the heated oil, and cook for 2-4 minutes on each side until done to your liking. Drain on a paper towel lined rack to cool.
  • Add the chicken broth, rice wine vinegar and soy sauce to a saucepan over medium heat on the stove until heated through.
  • Sprinkle the xanthan gum onto the mixture a little at a time, and whisk to combine. Continue to cook until the mixture has thickened and then let cool.
  • Serve the egg foo young topped with gravy with additional green onions for garnish if desired.

1 slice fresh ginger root, minced
6 green onions, chopped
1 stalk celery, sliced
2 cups bean sprouts

Steps:

  • Heat 2 teaspoons oil in a large skillet over medium-high heat. Saute ginger, green onions, celery, bean sprouts, mushrooms, green pepper, ham and salt until vegetables are tender.

½ cup chopped onion, or more to taste
½ cup chopped broccoli
1 tablespoon coconut aminos
½ teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons avocado oil, divided
1 stalk green onion, thinly sliced (green part only)

Steps:

  • Mix together eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a bowl.
  • Heat 1 tablespoon oil in a saute pan over medium-low heat. Add 1/3 of the egg mixture and cook for 2 to 3 minutes. Flip and cook the other side for 2 to 3 minutes. Repeat twice more to cook remaining 2 servings, adding remaining oil as needed.
  • Garnish servings with green onions.

2 chicken tenders, chopped
4 egg whites
1 dash soy sauce
½ cup bean sprouts
½ cup finely chopped water chestnuts
1 green onion, chopped, or to taste

Steps:

  • Spray a skillet with cooking spray, and place over medium heat. Cook and stir the chicken until lightly browned and no longer pink, about 5 minutes. With a spatula, spread the chicken pieces out into the bottom of the skillet. Spray again with cooking spray if needed.
  • In a bowl, beat the egg whites with soy sauce, and stir in the bean sprouts, water chestnuts, and green onion. Pour the egg mixture into the skillet over the chicken, and let cook until the bottom is lightly golden and the top has nearly set, about 3 minutes. Flip the egg pancake over, and cook the other side until lightly golden and set, another minute or two.
