Steps:
- Line a rimmed baking sheet with parchment paper or a silicone baking mat.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil and microwave until the chocolate is melted. Use a rubber spatula to mix until smooth. Let cool just slightly before using. Alternately, this can be done in a double boiler. (See note below)
- Add the nuts to the bowl with the melted chocolate. Mix until all of the nuts are coating in the chocolate.
- Drop large spoonfuls of the mixture onto the prepared baking sheet. Be sure to space them out enough that they do not run together.
- Refrigerate until solid. Store leftovers in an airtight container in the refrigerator for up to 3 weeks. Alternatively, you can store them in the freezer.

- 1. Prepare two 13x9 inch pans by lining bottom with wax paper. Set aside. 2. In a medium microwave safe mixing bowl, add chocolate chips and coconut oil. 3. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1-1½ minutes total). 4. Add peanuts. Stir until peanuts are completely coated with chocolate. 5. Drop by spoonfuls onto wax paper lined pans. Sprinkle with coarse salt if desired. 6. Freeze for 30-45 minutes or until completely set. 7. Serve immediately or store, covered, in the refrigerator until ready to serve.

- Place almond bark in a slow cooker. Stir occasionally on High until mostly melted, about 2 minutes. Reduce heat to Low. Stir in chocolate chips until mixture is completely dark, about 30 seconds. Add peanuts.
- Drop a spoonful of the peanut clusters onto a parchment paper-lined countertop to test if they are thick and chunky. Mix in more peanuts and chocolate chips if the mixture is too loose and runny.
- Line 4 to 5 baking sheets with parchment paper. Lay spoonfuls of the peanut clusters on top using a melon baller. Allow to harden, about 1 hour.

- In a small cupcake pan or sheet of parchment paper, place 3 or 4 almonds down together. Have the nuts already placed so that once you melt the chocolate you can drizzle it over the nuts before the chocolate cools off and hardens.
- Microwave on high for 30 seconds at a time until the chips are melted. Be sure to stir in between each blast of 30 seconds because it may look as though the chips are still solid but will melt together once you stir them. It will be very important not to burn them. Once you overcook the chocolate it will not be useable. This process should only take 30 seconds to a minute to fully melt the sugar free chips.
- Use a spoon and drizzle just enough chocolate over the nuts to cover them and get them to stick together in a cluster. The nuts don't have to be fully covered.
