Keto chocolate waffles are award winning waffles, AND they're low carb. So what's not to love about that? Make extra and keep them for school lunches served with cream cheese and berries in the middle of a waffle 'sandwich'.

5 eggs - medium (separated)
4 tbsp coconut flour
25 g cocoa powder (unsweetened) (unsweetened)
4 tbsp granulated sweetener of choice (or more, to your taste)
1 tsp baking powder
2 tsp vanilla extract
3 tbsp full fat milk (or cream)
110 g butter (melted)

Steps:

  • Whisk the egg whites until firm and form stiff peaks.
  • Mix the egg yolks, coconut flour, cocoa, sweetener, and baking powder.
  • Add the melted butter slowly, mixing to ensure it is a smooth consistency.
  • Add the milk and vanilla, mix well.
  • Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and fluffiness as possible.
  • Place enough of the waffle mixture into the warm waffle maker to make one waffle. Cook until golden.
  • Repeat until all the mixture has been used.

Chocolate Keto waffles are so simple to make you'll want more.

Number Of Ingredients 9

1/4 cup (60 g) of coconut flour
2 Tablespoons (24 g) of cacao powder
2 Tablespoons (24 g) of erythritol
pinch of salt
1 teaspoon (2 g) of baking powder
2 medium eggs
1/2 cup (126 ml) of unsweetened almond milk
2 Tablespoons (30 ml) of ghee
Confectioner's erythritol, to dust

Steps:

  • Mix the coconut flour, cocoa powder, erythritol, salt, and baking powder in a bowl.
  • In a separate bowl, whisk together the egg, almond milk, and melted ghee. Add this to the coconut flour mixture and whisk well until you achieve a thick slurry consistency. If it is too thick, add a dash of almond milk until you have the consistency you want.
  • Grease your waffle maker and allow to get hot. Add the batter, cooking the waffles until crispy. Remove carefully and serve with a dusting of confectioner's erythritol.
