Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Combine beef, pork rinds, Parmesan cheese, tomato sauce, onion, egg, parsley, salt, pepper, and garlic powder in a bowl and shape into a loaf. Transfer to the prepared pan.
- Bake in the preheated oven until browned and no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Steps:
- Preheat oven to 375 degrees.
- Mince the green pepper, onion, and garlic.
- Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
- Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
- Cut the bacon slices in half and drape over the meatloaf.
- Bake for 25 minutes.
- Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
- Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
- Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
- Let rest 5 minutes before slicing and serving.

EASY KETO MEATLOAF
This easy keto meatloaf recipe uses pork rinds and a low carb tomato topping for a moist and hearty weeknight dinner or meal prep!

- Preheat the oven to 375°F degrees and grease a loaf pan (if using).
- Add all meatloaf ingredients to a large bowl. Using your hands, combine well. Form the mixture into a loaf shape and place on a greased baking dish or press into your greased loaf pan and flip out on the baking sheet.
- Bake for 20 minutes.
- While the meatloaf is baking, add all topping ingredients to a small bowl and whisk together.
- Remove meatloaf from oven and top with the ketchup mixture. Bake for an additional 10-15 minutes or until the meatloaf reaches 165°F.
- Remove from the oven and allow to rest for 15 minutes to let the juices settle before slicing and serving.
- Best stored in an air tight container in the fridge up to 5 days.

- Lightly spray a 5x9 inch loaf pan with oil or line with foil.
- Combine all ingredients in large bowl and mix until blended.
- Pat into loaf shape and place in pan.
- Bake at 350 degrees F until meat thermometer registers 165 degrees F (about 1 hr to 1 hr 15 min).
- When meat is done, juices will be clear. Drain any fat and let sit about 10 minutes before slicing. If desired, brush top with ketchup and place under broiler for about 5 minutes.

KETO MEATLOAF RECIPE
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Combine the ground beef, sausage, and pork rinds in a large bowl. Mix until the ingredients are evenly distributed, but make sure not to overmix or else the meat will be tough.
- Whisk together the egg, Parmesan cheese, milk, parsley, Italian seasoning, salt, and pepper.
- Pour the egg mixture over the meat mixture. Add in the onion and garlic. Combine until all of the ingredients are evenly distributed.
- Form the meat mixture into a loaf shape.
- Wrap the meatloaf with the strips of bacon.
- Carefully pick up the meatloaf and place it on a cooling rack over an aluminum foil-wrapped baking sheet. Pour the tomato sauce over the top of the meatloaf.
- Bake in the preheated oven uncovered for 1 hour or until the top is caramelized and the internal temperature is 165 F. You can increase the temperature to 375 F for the last 5 minutes to further caramelize the top and crisp up the bacon.
- Remove from the oven and allow to cool slightly. Slice and serve immediately with your favorite keto sides, like mashed cauliflower and Brussels sprouts.

- Place the pork rinds in a 1-gallon Ziploc bag. Use a meat pounder or a rolling pin to crush them into tiny crumbs, similar to Panko. You can also crush the pork rinds in a food processor. Set the crushed pork rinds aside.
- Use a pastry brush or your hands to coat both sides of the pork chops with mustard. Sprinkle them with kosher salt, black pepper, and garlic powder.
- Place about 2 heaping tablespoons of the crushed pork rinds on a plate. Dip one pork chop into the pork rinds and press to coat on both sides. Repeat with the remaining pork chops. You can also do as I do in the video and sprinkle all the pork chops with the "breadcrumbs" on one side, press to adhere, then turn them to the other side (place them on a new, clean plate) and repeat.
- Coat a nonstick double burner griddle with olive oil and heat it over medium-high heat, 2-3 minutes. Add the coated pork chops.
