Beef and Bok Choy Stir Fry image

This amazing fifteen minute meal is packed with tender beef, crunchy bok choy, and earthy mushrooms an easy homemade stir fry sauce. So good and so easy.

1/4 cup low sodium chicken broth
1/4 cup oyster sauce (GF if needed)
2 tbsp low sodium soy sauce (GF if needed)
1 tbsp ginger, minced
1 tbsp garlic, minced
1 teaspoon cornstarch
4 tsp. vegetable oil, divided
1.33 lbs. lean sirloin steak, cut into strips
1 lb bok choy, chopped
1 cup mushrooms
4 green onions, chopped

Steps:

  • Add the chicken broth, oyster sauce, soy sauce, garlic, ginger, and cornstarch to a small bowl. Stir to combine.
  • Add half the oil to a pan or wok over high heat. Add the beef and cook for 1-2 minutes until browned but not fully cooked. Remove and set aside.
  • Add remaining oil to the pan. Add the vegetables to the pan and cook for 3-4 minutes. Turn the heat down to medium and add the sauce. Cook for 3-4 minutes until sauce thickens and vegetable are tender crisp.
  • Add the beef to the pan and cook for 1 minute or until steak is cooked to your liking.

2 tablespoons coconut oil
3 cloves garlic, minced, or more to taste
1 medium head bok choy, stems and greens chopped and separated
2 (8 ounce) packages sliced fresh mushrooms
1 cup chopped fresh parsley
1 teaspoon ground cumin, or more to taste
1 teaspoon pink Himalayan salt, or to taste

Steps:

  • Heat lard and coconut oil in a large skillet over medium heat. Add garlic and cook until browned and fragrant, 1 to 3 minutes. Add bok choy stems and cook until they are slightly soft on the edges, about 5 minutes. Add bok choy greens and mushrooms. Cook and stir until greens are wilted and mushrooms are soft, about 5 minutes.
  • Stir in parsley and season with cumin and salt. Lower heat and simmer for 2 more minutes.

1 lb. boneless, skinless chicken breasts ( (cut into bit-sized pieces))
1 1/2 cup bok choy ((cleaned and cut into 1/2 inch slices))
1/2 cup raw cashew pieces
1/2 cup stalks celery ((sliced thin))
1/2 cup coconut milk ((canned, full-fat))
2 tsp. garlic powder ( (or 3 cloves fresh garlic, minced))
1/3 cup shallot ( (both "cloves" minced))
1/4 cup coconut oil
2 Tablespoons coconut aminos
1/2 cup fresh cilantro ((chopped))
salt and pepper (to taste after cooking)

Steps:

  • Melt the oil in a large skillet and add the shallots, celery and garlic (if using fresh garlic). Sauté until shallots are translucent.
  • Add the chicken and cook until browned. Then add the cashews, bok choy, garlic powder (if using) and finally, the coconut milk. Stir in between each addition.
  • Cook until the meat is cooked through and the coconut milk has reduced down almost to a glaze rather than a sauce.
  • Remove skillet from heat and quickly toss in the coconut aminos and fresh cilantro.
  • Add salt and pepper to taste and serve.
