Strawberry Chicken Poppy Seed Salad image

A crisp and refreshing Strawberry Chicken Poppy Seed Salad that is both beautiful and delicious. Fresh greens topped with chopped chicken breast, sweet sliced strawberries, red onions and drizzled with homemade poppy seed dressing. This recipe is Keto, Paleo and can easily be tailored to Whole30 with a simple modification.

6-8 cups of lettuce or greens of choice
3 medium chicken breast, cooked and chopped
1/3 cup sliced red onions
Micro greens for garnish (optional)
4 large strawberries, sliced
1/2 cup LIGHT olive oil
1/4 cup white wine vinegar or champagne vinegar
1/2 tsp salt
1 small shallot
1 tbsp lemon juice
1 1/2 teaspoons Dijon mustard
2 1/2 teaspoons monk fruit sweetener (omit for Whole30)
1 tablespoon poppy seeds

Steps:

  • In a large bowl add all of the ingredients for the salad. This can also be done by dividing the ingredients into 4 individual bowls.
  • Drizzle with the poppy seed dressing and give it a big toss.
  • Garnish with fresh micro greens if desired.
  • Enjoy!
  • In a blender or food processor, combine monk fruit sweetener, vinegar, salt, mustard and onion and process for 20 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream.
  • Pour in a mason jar and stir in the poppy seeds with a spoon

1 cup diced cooked chicken
4 large strawberries, hulled and sliced
1 ounce goat cheese, crumbled (1/4 cup)

¼ cup chopped toasted pecans

Steps:

  • Place greens, chicken, strawberries and goat cheese in a large bowl. Add dressing and toss to coat. Sprinkle with pecans, if desired.

2 tablespoons olive oil
3 tablespoons nonfat greek yogurt
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon honey
1 teaspoon poppy seed
½ teaspoon dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
1 boneless, skinless chicken breast, sliced into 1/2-inch (1-cm) pieces
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon paprika
2 teaspoons olive oil
2 cups baby spinach
½ cup strawberry, hulled and sliced
½ avocado, sliced
1 tablespoon sliced almond, toasted

Steps:

  • In a bowl, add the olive oil, Greek yogurt, red wine vinegar, lemon juice, honey, poppy seeds, mustard, salt, and pepper in a small bowl and whisk until emulsified.
  • Season the chicken with salt, pepper, and paprika.
  • Heat olive oil in a pan over medium heat. Once the oil begins to shimmer, add the chicken and cook until browned on both sides, about 4 minutes per side.
  • Once cooled, slice the chicken on a cutting board.
  • Toss spinach, strawberries, avocado, almonds, and sliced chicken together in a large bowl and drizzle with poppy seed dressing.
  • Enjoy!

1- 12.5 oz can of cooked chicken breast drained 1/4 cup of mayo (I used Duke's) 1/4 cup of Poppy Seed Dressing 1/4 cup of sliced almonds 1/4 cup of strawberries chopped or sliced a good pinch of salt a dash of pepper **optional- Celery sticks

Steps:

  • Drain canned chicken & place in a bowl.
  • Add Poppy Seed Dressing and mayo.
  • Add sliced almond, salt & pepper.
  • Slowly mix in the chopped strawberries.
  • Eat with celery sticks or toasted low carb tortillas cut into crackers or in lettuce boats.
  • Enjoy.

2 cups cooked chicken, cubed (rotisserie chicken also works great)
1/2 cup diced strawberries
2 Tbsp. fine diced red onion
1/4 cup fine diced celery
1/4 cup sliced almonds, toasted
1-2 Tbsp. chopped fresh basil
1/4-1/3 cup mayonnaise (we recommend Primal Kitchen Mayo)
2 Tbsp. lemon juice
1 tsp. poppy seeds
Salt & pepper to taste
Leaf lettuce or butter lettuce
Chopped green onion

Steps:

  • In a medium bowl, combine the chicken, strawberries, onion, celery, toasted almonds and fresh basil.
  • To toast almonds: place almonds in a small pan over medium heat. Toast until slightly browned tossing occasionally. This only takes a few minutes so watch closely.
  • In a small bowl, combine the mayonnaise, lemon juice, and poppy seeds. Gently stir into the chicken mixture. Salt and pepper to taste.
  • Serving option: scoop into a lettuce leaf or scoop onto a bed of greens and top with green onions and a few toasted almonds.

Microgreens
White wine vinegar ¼ cup

Shallots 1
Lemon juice 1 tbsp
Dijon mustard 1 ½ tsp
Monk fruit sweetener 1 ½ tsp
Olive oil ½ cup
Poppy seeds 1 tbsp

Steps:

  • In a large bowl, combine 6-8 cups lettuce, 3 cooked and chopped chicken breasts, ⅓ cup sliced red onions, and 4 large sliced strawberries.
  • In a blender or food processor, combine ¼ cup white wine vinegar, ½ teaspoon salt, 1 small chopped shallot, 1 tablespoon lemon juice, 1 ½ teaspoons Dijon mustard, 1 ½ teaspoons monk fruit sweetener.
  • Process for 20 seconds. With the motor running on high, pour in ½ cup olive oil in a thin, steady stream.
  • Transfer the dressing to a mason jar and stir in 1 tablespoon poppy seeds.
  • Pour the dressing over the salad and toss to combine.
  • Garnish with fresh microgreens and enjoy!
