EASY RUM CAKE



Easy Rum Cake image

This is an easy recipe for a rum-soaked cake filled with walnuts and a rum glaze.

1 cup chopped walnuts
1 (18.25 ounce) package yellow cake mix
½ cup dark rum
4 eggs
½ cup water
½ cup vegetable oil
1 (3.5 ounce) package instant vanilla pudding mix
½ cup butter
⅛ cup water
½ cup white sugar
¼ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
  • Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
  • Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
  • To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.

I've been searching for recipes to use up coconut rum that was given me, and I found this on the internet. I've not tried it yet, so no idea whether it tastes good or not.

Kick

This recipe was developed by a friend of mine after she recovered from her breast cancer surgeries and reconstructions. Do not attempt to drive or operate machinery after consuming this very heavy laden with "the Captain" cake. For supreme results do not deviate from techiques or quantities. This is a very fun recipe to serve. Especially everyone's "oh my".

1 box(es) French vanilla cake mix 18.25 ocs.
4 large eggs
3/4 cup(s) Captain Morgan Coconut Rum 90 proof
3/4 cup(s) Coco Lopez (cream of coconut)

Steps:

  • Preheat oven to 325
  • Prepare tube pan according to mix directions.
  • Use 4 eggs instead of 3 as noted on box directions.
  • Substitute water with rum & cream of coconut
  • Add oil and follow mix directions
  • Bake in tube pan for 45 to 50 mins. Sides will pull away from pan.
  • Cool cake.
  • Use a turkey injector to pu additional rum into cake after cooling using one cup or so of Captain Morgan.
  • To frost cake after cooling: Mix until smooth. One 1 lb. box confectioners sugar, 1 8 oz cream cheese, softened. 2 tbs parrot bay coconut Rum & 2 Tbs cream of coconut
