Steps:
- Put the light rum, aged rum, orange juice, agave, lime juice, sherry and nutmeg in a punch bowl (or bucket) and stir thoroughly. Add large ice cubes and garnish with orange wheels studded with cloves. Ladle into punch glasses or drink with straws from the container.
KICKIN' ZITI BAKE
This baked ziti dish gets its kick from a bit of cayenne-and its creamy, cheesy deliciousness from a blend of cheeses.

Steps:
- Heat oven to 375ºF.
- Cook pasta as directed on package, omitting salt. Drain, reserving 1/2 cup of the cooking water.
- Meanwhile, melt butter in medium saucepan on medium heat. Add chopped onions and garlic; cook 3 min., stirring frequently. Add flour; mix well. Cook 1 min. or until bubbly, stirring constantly. Gradually stir in broth. Bring to boil, stirring constantly; cook and stir 2 min. or until thickened. Add cream cheese; stir until melted and mixture is blended. Remove from heat; add 1/4 cup Parmesan, pepper and reserved pasta water.
- Combine cream cheese mixture and pasta in large bowl. Spoon into 2-qt. casserole sprayed with cooking spray. Top with remaining cheeses and green onions.
- Bake 15 min. or until cheeses are melted and golden brown.

- Mix chicken strips with seasonings and lemon juice and set aside.
- Heat olive oil in a medium pan on medium heat and add the garlic, sautéing for about a minute. Quickly add the chicken broth stir to avoid burning the garlic.
- Add in the chicken and peppers, cover and cook on medium for about 5 minutes. Then, add onion and remove from heat once the broth is bubbling and the peppers look fully cooked.
- Mix Mongolian sauce with quinoa.
- Serve chicken and veggies alongside prepared quinoa.
- Enjoy!

- Pour pasta into a large glass dish and add sauce on top, stirring into the pasta.
- Broil for five minutes.

KATE'S KICKIN' SPICE BLEND
I put this together because I found myself using these same seasonings a lot in everyday cooking and I finally got tired of adding things separately! I use (with a tablespoon of olive oil) to season water before I steam greens or corn, to roast potatoes or yams (cut into 1/2 inch cubes and toss with olive oil), as a dry rub on meat for bbq, and in soups to add a little extra kick. It tastes similar to the seasoning they use in some restaurants for French fries. I use it pretty liberally because I like extra spice, can be used more sparingly if you like less. Start with a tablespoon and make it yours!

- In a large, heavy pan brown meat well.
- Add garlic, celery, and onions and sauté for 10 minutes.
- Add tomatoes, tomato sauce, spices, seasonings, chili peppers, sugar, and the beans.
- Bring to a boil, then reduce heat and simmer, uncovered for 1 1/2 hours.
- Stir often to prevent sticking.
KICKIN' CAROLINA TEA
My own concoction with my new favorite vodka, Firefly Sweet Tea Vodka, made in South Carolina. I discovered it on my recent vacation in Charleston. Measurements are approximate; adjust to your taste. Be careful; this doesn't taste alcoholic! I use diet Sprite to keep the calories down; you could use regular.
