Oatmeal cookies with raisins and craisins.

1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups quick cooking oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup raisins
1 cup dried cranberries

Steps:

  • Beat butter, sugars, eggs and vanilla for 5 minutes. In another bowl, combine oats, flour, baking soda, baking powder, and salt. Add to butter mixture 1 cup at a time.
  • Mix in raisins and craisins.
  • Drop by spoonfuls onto greased cookie sheets and bake for 12-14 minutes at 350 degrees F (175 degrees C). These freeze very well. Enjoy!!

I took a standard Oatmeal Raisin Cookie recipe and modified it to my liking. These cookies are ALWAYS a HIT!

3/4 cup sugar
1/4 cup brown sugar, packed
1/2 cup butter, softened
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup all-purpose flour
1 1/2 cups quaker quick-cooking oats (not instant)
1/2 cup chopped walnuts
3/4 cup dried cranberries (Craisins)

Steps:

  • Preheat Oven to 375°F.
  • In a large bowl with an electric mixer combine, sugar, brown sugar and butter and mix well.
  • Add in egg and vanilla and mix until combined.
  • Add in cinnamon, baking soda, salt and flour and mix well.
  • Fold in by hand the oatmeal, walnuts, and dried cranberries making sure that all ingredients are uniformly distributed.
  • Roll dough into 1-inch balls and place 3-inches apart onto a greased cookie sheet and bake for 10-12 minutes, just until the edges are lightly golden.
  • Remove from oven and let cool for 2-3 minutes on the cookie sheet.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray baking sheet with cooking spray.
  • Whisk flour, oats, baking powder, baking soda, and ground cinnamon together in a bowl; stir in carrots and dried cranberries. Add dark brown sugar, light brown sugar, eggs, butter, oil, maple syrup, vanilla extract, and salt to the carrot mixture and stir until dough is well combined.

1 cup dried cranberries
1/4 cup coffee liqueur or strong brewed coffee
1-1/4 cups semisweet chocolate chunks
1/4 cup unsalted butter, cubed
2 large eggs, room temperature
3/4 cup packed brown sugar
3 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly ground pepper
1/8 to 1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°. In a small saucepan, combine cranberries and liqueur. Bring just to a simmer; remove from heat. In a microwave-safe bowl, microwave chocolate and butter on high in 30-second intervals until melted; stir until smooth (mixture will be thick). Cool slightly., In a large bowl, beat eggs, brown sugar and vanilla on high until thickened, about 3 minutes; beat in chocolate mixture. In another bowl, whisk flour, baking powder, salt and seasonings; fold into sugar mixture just until combined. Fold in cranberry mixture., Drop by rounded tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake 10-12 minutes or until cookies are shiny and tops are crackly. Cool on pans 2 minutes. Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl combine sugar, brown sugar, and butter. Mix well with a hand mixer.
  • Add in the eggs and vanilla and mix together.
  • In another bowl, combine oats, flour, baking soda, baking powder, and salt. Add to butter mixture 1 cup at a time. Slowly add in the dried cranberries until well combined.
  • Roll dough into 1-inch balls and place 3-inches apart onto a greased cookie sheet and bake for 12-14 minutes, just until the edges are lightly golden.
  • Remove from the oven and let cool for 2-3 minutes on the cookie sheet.

1 cup butter
3/4 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 1/2 cups quick oats
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon clove
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon cayenne pepper
1 tablespoon hot water
1 1/2 cups craisins
1/2 cup white chocolate chips
1/2 cup chopped nuts walnuts or 1/2 cup pecans

Steps:

  • Heat oven to 400 degrees F.
  • Add water to craisins in small saucepan and heat over stove burner allowing craisins to become plump. Take off burner and allow to cool.
  • Cream butter and sugars together.
  • Mix dry ingredients and spices together. (Adjust cayenne pepper to taste - 1 teaspoon supplies a good amount of heat, you may want to start with a lesser amount.)
  • Add to butter mixture in ½ cup portions.
  • Add craisins, chocolate chips and nuts.
  • Use a 1' scoop and place on cookie sheet covered in parchment paper. Bake 7 to 10 minutes do not over bake.
  • Allow cookies to cool 2 minutes before moving them to cooling rack.
