Yay! General Mills reformulated their Rice and Corn Chex to be gluten-free! Watch for gluten-free on the labels. This recipe makes a GREAT snack for kids especially since the cereal is fortified with iron and folic acid. The peanut butter is also good for protein, but watch out for PB allergies. For the recipe to be casein free, you have to check the ingredients in the chocolate chips.

1 (12 7/8 ounce) box Rice Chex or 1 (12 7/8 ounce) box Corn Chex
1/2 cup margarine
1 cup peanut butter
1 (12 ounce) bag chocolate chips (look for casein free ingredients)
1 lb confectioners' sugar

Steps:

Melt chocolate chips, margarine, and peanut butter over medium heat. Stir.
Pour over cereal, using a large bowl or a ziploc bag. Coat well.
Add confectioner's sugar to bowl/bag and mix/shake vigorously to coat well. Break apart any large chunks sticking together.

A delicious simple stirfry - and gorgeously coloured, to boot! You can use oranges instead of tangerines. Serve on rice noodles or rice, if desired. Add onions and garlic if you'd like (I never do because I'm allergic).

Ingredients

2 tablespoons olive oil
2 chicken breasts, cut into bit sized pieces
1 red bell pepper, sliced thinly
2 cups snow peas
4 tablespoons Braggs liquid aminos or 4 tablespoons gluten-free soy sauce
2 tablespoons vegetable cocktail or 2 tablespoons tomato juice
2 tablespoons water
1 tablespoon tomato paste
1 tangerine, juice of
1 tangerine, zest of
1 1/2 teaspoons cornstarch
2 large tangerines
3 cups bean sprouts

Steps:

Heat oil in a wok or fry pan. Saute chicken until almost cooked through.
Add pepper and snow peas to the pan, and fry until chicken is cooked through and veggies are tender.
Mix together aminos, juice, water, paste, zest and juice of tangerine and cornstarch, then add tot he pan and stir until thickened.
Peel and cut tangerines into segments, and add to pan with bean sprouts. Cover for a few minutes if you like your sprouts on the more tender side (as I do).

Add the chocolate chips, peanut butter, and butter to a large microwave-safe bowl. Melt at 50% power in 30-second intervals until the chocolate is melted. Stir well after each interval. Do not overheat.
Once melted, add the cereal to the bowl and stir to coat all of the cereal with the chocolate mixture. Set aside.
Add half of the powdered sugar to a large ziplock bag. Add half of the cereal to the bag and seal it closed. Shake the bag to coat all of the cereal with the powdered sugar. Add extra sugar as necessary for an even coating.
Transfer the puppy chow to a serving bowl or air-tight container and repeat the process with the remaining cereal.
