EASY CROCK POT CHILI
My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

- Mix all ingredients in Crock Pot.
- Cover; cook on HIGH for 3 to 4 hours.
- Note: To make on stovetop, mix all ingredients in a big soup pot; cover and simmer for about an hour or so.
CROCK-POT® CHICKEN CHILI
Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

Steps:
- Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
- Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
- Remove chicken to a cutting board and shred completely; return to chili in slow cooker and stir.

- Brown your choice of ground meat in a large skillet on medium-high heat. Stir often till thoroughly cooked, Drain in a small-holed colander, rinse with hot water to get rid of excess grease, drain. Place meat in the crockpot (Don't turn the crockpot on until the rest of the ingredients are done).
- Heat butter and oil In a skillet over medium-high heat. Cook and stir onions and bell peppers for 5-6 minutes, add garlic, and cook 1 minute until fragrant. Pour onions,

Steps:
- Spray the inside of the slow cooker with pan spray. Add one can of diced tomatoes to the slow cooker.
- Add 1 pound of browned ground beef to the diced tomatoes. Stir the ingredients together. If using already browned ground beef that has been frozen, thaw it out ahead of time.
- Add 1/2 cup water and stir
- Drain & Rinse 1 can of Black Beans and add to the slow cooker
- Add 5 Tablespoons of the Chili Mix to the ingredients in the slow cooker
- Mix all ingredients together in the slow cooker, plug in and turn to low.
- cook on low for 4 to 5 hours.
- Prepare bowls of assorted toppings for the Chili . Toppings can include shredded cheese, sour cream and corn chips. If your family likes black olives, they could be used also
- serve in bowls and let everyone add toppings to their own bowl
JIM'S BIG BATCH SLOW COOKER CHILI
In researching many recipes to achieve the perfect, awesome chili that I could make in a large batch by using my 6 qt crock pot (slow cooker), I came across 3 different ones that I deconstructed and then reconstructed using my own variations and twists. I had a wonderful success on my first try. I served this during the holidays in 2012 to a large group and many came back for 3RDs! Chili is normally regionalized, but this one is so GOOD, that any part of the country will love it and gobble it up! For Nutritional Data purposes, I calculated a recommended serving size to be approximately 13 oz. per serving to feed 10 people. Realistically if you have several hungry guys with large appetites hanging out, watching football, playing cards, etc. this may only yield enough to serve 8 people 16 oz.

- Optional Adds: 1 Green Bell Pepper chopped OR 2 Jalapeno Peppers seeded and chopped for extra added heat. Personally, I do not use either of these, but you may. You may also use 2 (14.5 oz. cans) of Hunt's Diced Tomatoes, undrained, if you like a chunkier chili. Personally, I do not use these either.
- Optional Substitution: Although the beer is utilized to give the chili a great flavoring, it is NOT to have any alcoholic content after cooking it for over 2 1/2 hours according to the USDA. If you decide to omit the 12 oz. beer for any reason, use an ADDITIONAL 14.5 oz. of Chicken Broth to take its place.
- Cook the meats in at least 2 separate batches in a Large Skillet over Med-High heat right before it crumbles. Add and mix in the finely chopped onions. When the meat crumbles and no longer is pink; drain.
- Place the meat and onion mixture in the large crock pot (slow cooker). Add the rinsed/drained light red kidney beans and the remaining ingredients.
- Cover and cook on LOW for 8 hours, may stir a couple times. Since this is a Slow Cooker, it is always discouraged to use the HIGH setting... but if you must and running short on time, can be done roughly around 5 hours on HIGH.
- Remove and Discard the Bay Leaves before serving.
- Condiments and/or Sides to consider having on hand when serving: Sour Cream, Sharp Shredded Cheddar Cheese, Rice, Chopped Green Onions, Black Sliced Olives, Crackers, Limes (cut in quarters), Jalapeno Slices, Baguette Bread Sliced, Cornbread (or Jalapeno Cornbread), Salad.
- Beverage Pairing: Milk, Beer, Ripe Zinfandel, or Syrah.
- ENJOY! For whatever reason, a well-made Chili is much like Jambalaya. The leftovers, the day after, is generally better. . Maybe it takes a day for the flavors to truly fuse together.
- Directions for freezing and/or reheating portions:.
- Let Chili cool before freezing.
- Evenly divide chili into 2 (1-gallon) zip-top freezer bags (only 1 1-gallon bag needed if you are looking to freeze only half).
- Seal and lay each bag flat.
- Stack bags of chili in freezer.
- Freeze up to 1 month.
- Thaw 1 bag of frozen chili overnight in refrigerator (or defrost in microwave).
- Pour thawed chili into a 9-inch square baking dish.
- Cover tightly with heavy-duty plastic wrap, and fold back a corner to allow steam to escape.
- Microwave at HIGH 6-7 minutes or until bubbly (stirring once after 3 1/2 min mark).
BILL'S CROCK POT CHILI
This recipe uses the spicy flavor of green chili pepper, without the sharp heat of chili powder. The Chuck Blade Steak has enough marbling to remain soft and moist after 8 hours in the crock pot. If you like a little sweeter taste, use canned Stewed Tomatoes. There is nothing quite like chili to prove that Cooking is a Creative Sport.

- In a large skillet, heat the olive oil and start to brown the meat.
- When the meat starts to lose it's pink color, push to one side of the pan and add the onions in the fat.
- Saute the onions until nearly transparent, stir the meat and onions together and pour into a crock pot.
- Add the rest of the ingredients, except the flour and butter, and cook on the low setting for 8 hours. Or if you are in a hurry, 4 hours will be enough on the crock pot's high setting.
- Stirring occasionally About an hour prior to serving, melt the butter in a small frying pan, add the flour and stir until a brown paste has formed.
- Add to the crock pot and stir.
- Recipe # 85268 is a Vegetarian version of this chili, using rice.

- Ground the beef in a pan until cooked through. Drain and add to the crock pot.
- Add the pinto beans, kidney beans, beef broth and diced tomatoes to the crock pot.
- Dice the onion, green pepper, jalapeno.
- Heat a pan with the olive oil and add the onion, green pepper and jalapeno until the onion started to caramelize/brown.
- Add the chili powder, oregano and cumin. Mix. Next add the tomato paste and mix. Add to the crock pot.
- Cook for 4 hours on high, 6-7 hours on low.
