Steps:

  • In an electric blender, mix together orange juice, kiwi, bananas, pineapple, and pineapple juice until well blended. Pour the mixture into a pitcher.
  • Place the ice in the blender, then pour the fruit mixture over the ice. Process until the ice is blended in with the fruit juices.

2 tablespoons canola oil
1/2 pound fully cooked Spanish chorizo links, sliced
2 cups cubed fully cooked ham
3/4 pound boneless skinless chicken breasts, cubed
1 can (28 ounces) diced tomatoes, undrained
3 cups chicken broth
2 large green peppers, chopped
1 large onion, chopped
1 tablespoon Cajun seasoning
2 teaspoons hot pepper sauce
3 cups instant brown rice
1/2 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add chorizo and ham; cook and stir 3-4 minutes or until browned., Add chicken to pan; cook 5-7 minutes or until no longer pink. Stir in tomatoes, broth, peppers, onion, Cajun seasoning and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, 8-10 minutes or until peppers are crisp-tender., Return to a boil; stir in rice and shrimp. Reduce heat; simmer, covered, 7-9 minutes or until shrimp turn pink. Remove from heat; let stand, covered, 5 minutes or until rice is tender.

Okra stew is a classic Middle Eastern dish made mainly with okra and tomatoes and sometimes lamb, as in this version. It's very flavorful, thanks to cilantro, seven spice and lemon. To keep the okra from becoming slimy, I opt to cook them whole, with the tops intact. Using frozen small okra also helps; you can find them (and Lebanese seven spice) in many supermarkets and/or Middle Eastern and Mediterranean food shops, or buy the smallest fresh okra you can find. Serve the stew with plain white rice or vermicelli rice noodles, according to tradition.

1 pound boneless lamb stew meat, cut into 1-inch pieces (see Cook's Note)
2 teaspoons Lebanese seven spice
3 tablespoons olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
1 cup lightly packed fresh cilantro leaves and tender stems, chopped
One 14-ounce bag frozen small okra (see Cook's Note)
Kosher salt
One 14-ounce can diced tomatoes
2 tablespoons tomato paste
Juice of 1 lemon

Steps:

  • Mix the lamb with 1 teaspoon seven spice blend in a large bowl, tossing to coat, and set it aside. Heat 1 tablespoon of the olive oil in a Dutch oven or heavy-bottom pot over medium heat. Add the lamb to the pot and sear until brown on all sides, stirring occasionally, about 7 minutes. Remove the lamb from the pot and set it aside.
  • Heat 1 tablespoon of olive oil in the same pot over medium heat. Saute the onion until tender and golden brown, about 5 minutes. Add in the minced garlic and cilantro and stir to combine. Add the remaining 1 tablespoon of olive oil and the okra. Stir in 1 teaspoon kosher salt, the remaining 1 teaspoon of seven spice and add the browned lamb. Add in the diced tomatoes, tomato paste and 3 cups of water.
  • Cover and cook the stew over medium heat until the lamb is fully cooked, 30 to 40 minutes. Add the lemon juice to the stew right before serving. Taste and adjust the seasoning with more salt.

2 tbsp vegetable oil
2 large onions, chopped
20g tomato purée
900g braising beef, chopped
200g smoked white fish (we used smoked mackerel, but any smoked white fish will work)
1 red pepper, chopped
1 garlic clove, crushed
large pinch of chilli flakes
2 bay leaves
900g okra, roughly chopped
250g sustainably sourced palm oil
¼ tsp baking powder
boiled rice, to serve

Steps:

  • Heat the oil in a large pan over a low heat, and fry the onions until softened. Add the tomato purée and cook for 5-7 mins, then pour in 2½ litres water. Tip in the beef and fish. Bring to the boil and cook for 15 mins. Transfer the fish to a plate using a slotted spoon. Set aside.
  • Stir in the pepper, garlic, chilli, bay and okra. Season with salt.
  • Reduce the heat to low and simmer, uncovered, for 25 mins. Add the palm oil and baking powder. Simmer for another 25-30 mins, stirring occasionally. Return the fish to the pan and continue to simmer for 15 mins. Serve with rice.

How to make Kinalas broth from scratch?
Put a liter of water in the pot containing the beef shank and add the black pepper, salt and onions. Bring to a boil and simmer for 2 hours. Remove the scum while cooking the beef. Add more water if necessary as it may dry up the soup stock which you will use later for the kinalas broth.
