I make this often it's easy and a great way to use up leftover cooked spaghetti, after you chop the garlic and green onions this takes only about 5 minutes to make, the amounts listed are really only a guideline you may use any amount of spaghetti and adjust all other ingredients to suit your taste --- I have left the chili flakes as optional you may omit or adjust to heat level, we like spicy so I always use lots! --- make certain to use only cold spaghetti for this, you may use cooked Chinese soba noodles if desired in place of the spaghetti, I like to add in a few teaspoons sesame oil also while cooking, prep time does not include cooking the spaghetti

1/2 lb spaghetti (regular or thin)
4 tablespoons vegetable oil
6 garlic cloves, finely chopped (do not mince the garlic finely)
1/4 teaspoon crushed red pepper flakes (or adjust to heat level)
1/4 cup low sodium soy sauce (or to taste)
fresh ground black pepper (optional)
1 large green onion, finely chopped

Steps:

  • Cook the spaghetti in boiling water until al dente (it is best to slightly under cook) drain then rinse well under cold water, then drain again; transfer to a bowl, cover and refrigerate until cold.
  • Heat oil in a large skillet over medium-high heat; add in the chopped garlic and chili flakes, cook stirring for 2 minutes.
  • Add in the cold spaghetti and toss using long tongs until the pasta is hot.
  • Pour the soy sauce over the hot pasta and continue tossing with tongs adding in more soy sauce if needed until you have the desired flavor that you want.
  • Season with black pepper if desired.
  • Transfer to a bowl then toss with chopped green onions.

¼ cup high grade sesame oil
¼ cup soy sauce
1 tablespoon sugar
1 ⅔ lb fresh noodles, of choice, cooked and chilled
1 teaspoon garlic, minced
2 tablespoons scallion, thinly sliced
1 tablespoon chili oil
1 tablespoon sesame seeds

Steps:

  • In a medium bowl, mix together the black vinegar, sesame oil, soy sauce, and sugar. Set aside.
  • Cook the noodles according to the package instructions, then drain. Place the noodles in the bowl with the sauce and toss to coat.
  • Garnish with the garlic, scallions, chili oil, and sesame seeds.
  • Enjoy!

2 teaspoons vegetable oil
2 tablespoons onions, minced
3 teaspoons fresh ginger, grated and divided
1 garlic clove, minced
1/2 cup soymilk or 1/2 cup milk
1/4 cup creamy peanut butter
1 teaspoon fresh lemon juice
1 tablespoon dry white wine
1 tablespoon soy sauce
2 teaspoons cornstarch
1/2 teaspoon black pepper
8 ounces boneless skinless chicken breasts, cut into strips
8 ounces thin spaghetti, uncooked
cooking spray
1/2 cup snow peas, trimmed
1/2 cup carrot, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup green onion, diagonally sliced (scallions)

Steps:

  • First, prepare the peanut sauce. Heat 2 teaspoons oil in a small saucepan over medium high heat. Add onion, 1 teaspoon of the grated ginger, and garlic. Saute about 5 minutes until onion is tender. Next stir in the soy milk (or regular milk of your choice), peanut butter and lemon juice until the peanut butter is melted, stirring constantly. Remove from heat and allow to cool.
  • Next prepare the marinade. Combine the wine, soy sauce, 2 teaspoons ginger, cornstarch and 1/2 teaspoon black pepper in a medium bowl. Add chicken pieces and toss. Cover and marinate in the refrigerator at least 30 minutes.
  • Cook pasta according to package directions, omitting salt and fat. Drain, rinse and set aside.
  • Heat a large nonstick skillet, or wok, coated with cooking spray over medium high heat. Add the marinated chicken. Saute, stirring often, 2 minutes or until no longer pink inside. Add snow peas and carrot and cook 4 minutes, stirring often, until tender crisp. Stir in peanut sauce, salt, and black pepper. Add noodles and toss until heated through. Remove from heat and sprinkle with green onions.

This takes minutes to throw together, I have made this many times on a busy day it's very good for a quick easy meal --- feel free to add in some cooked chicken, shrimp or your favorite veggie to make it a more complete meal --- I have left the chili flakes as optional if you like some heat add them in with the garlic and adjust to suit your heat level., all amounts may be adjusted to taste.

1 -2 tablespoon minced fresh garlic (or to taste)

1 cup grated parmesan cheese
salt & freshly ground black pepper (lot's of black pepper!)

Steps:

  • Place the cooked pasta in a bowl; keep warm (do not rinse pasta).
  • In a small skillet saute the garlic in olive oil until golden and tender (try not to burn the garlic) then pour the oil with the garlic over the cooked pasta.
  • Season with salt and lots of black pepper.
  • Add in the Parmesan cheese; toss to coat then serve immediately.

1 1/4 cups sugar (add in more for a sweeter taste)
1 1/4 cups milk
1 -2 teaspoon vanilla (optional) or 1 -2 teaspoon almond extract (optional)
3 teaspoons baking powder
1 pinch salt
1 large egg (optional)
1/2 cup brown sugar (can use more or less)
1 -2 teaspoon cinnamon
1/4 cup melted butter
chopped walnuts (optional) or pecans (optional)

Steps:

  • Set oven to 350 degrees F.
  • Prepare a greased 13 x 9-inch baking dish, or two 8 or 9-inch round cake pans (although the batter will seem like it will fit into only one 8 or 9-inch pan, this flop rises very high and will run over the sides if baked in just one pan).
  • In a bowl mix the 2 cups flour, 1-1/4 cups white sugar, milk, vanilla or almond extract, baking powder, pinch of salt and egg (if using) until just combined careful not to overmix.

Don't bother ordering Chinese chicken balls make these at home they are just as good if not even better and the sweet and sour sauce is the same as what is served at your Chinese restaurant!-- these are a great weekend snack or can be served as appetizers, if you want some extra flavor to you chicken batter feel free to add in some garlic or onion powder or spices of choice --- this makes a large amount so you may want to reduce the chicken ball batter amount by half (using 4 chicken breasts) --- NOTE: the sauce recipe is one you may have to make a few times before you get the consistancy and sweetness to your liking, 1 cup white sugar and 1/2 cup lightly packed brown will give you a sweet sauce you may reduce the white sugar amount by a few tablespoons

1 teaspoon soy sauce
1/3 cup white vinegar
1/2 cup brown sugar, lightly packed
1 cup white sugar (can reduce a 2-3 tablespoons for a less sweeter taste)
3/4 cup cold water (or can use unsweetened pineapple juice or half each, I prefer the pineapple juice)
3 tablespoons cornstarch (for a thinner sauce reduce to 2 tablespoons, if you want an very thick sauce use 4 tablespoons)
1 cup all-purpose flour
1 cup cornstarch
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon garlic powder (garlic lovers add 1 teaspoon)
2 teaspoons sugar
1 1/3 cups cold water (if you are reducing to half a recipe use 1/2 cup plus 2-1/2 tablespoons water)
1 -2 teaspoon sesame oil (optional but good to add)
oil (for frying)
8 chicken breasts, cut into bite-size pieces
seasoning salt (optional)

Steps:

  • To make the sweet and sour sauce sauce; in a saucepan combine the first 5 ingredients until combined.
  • In a cup or bowl whisk the cold water or pineapple juice with cornstarch until smooth and well blended, then whisk vigorously into the ketchup mixture; bring to a boil stirring or whisking constantly over medium-high heat until bubbly.
  • Reduce the heat to medium-low and continue simmering and mixing until thickened (be patient the sauce takes a few minutes to thicken up) remove from heat and allow to sit at room temperature while making the chicken balls or you may cool to room temperature then refrigerate until ready to use (I prefer the sauce at room temperature).
  • To make the chicken balls: in a large bowl combine flour, cornstarch, baking powder, baking soda, garlic powder; add in water and sesame oil; whisk vigorously until smooth.
  • Add in chicken pieces; using clean handsand mix until well coated.
  • Heat oil in a deep-fryer or Dutch oven to 375 degrees.
  • Carefully dip the battered chicken pieces in hot oil and fry until golden brown (about 3-4 minutes).
  • Remove to a paper towel.
  • Sprinkle with seasoning salt immediately after frying if desired.
  • Serve immediately with sweet and sour sauce.
  • Delicious!
