Rakott krumpli is a gloriously simple layered potato recipe from Hungary, eggs and smoked sausage are all layered up with sour cream to make a super-rich and delicious dish.

450 g (4 small-medium) Potatoes
3 Eggs + 1 Egg Yolk
125 g (4 oz) Smoked Sausage
225 g (1 Cup) Sour Cream
Salt to Taste
Pepper to Taste
Butter for Greasing

Steps:

  • Bring a pan of well-salted water to the boil.
  • Add in the potatoes and the eggs.
  • Boil the eggs for 10 minutes before removing.
  • Remove the potatoes after 30 minutes.
  • Allow both to cool for 10 minutes and then peel both.
  • Mix the egg yolk with the sour cream.
  • Cut the sausage, boiled eggs and potatoes into 3-4mm thick slices.
  • Grease an 18cm X 12cm gratin dish with butter.
  • Layer up the dish starting with potatoes, then sausage, then egg and then a third of the sour cream.
  • Season this layer with salt and pepper and add another identical layer.
  • Finish with a layer of potatoes and then add the remaining sour cream.
  • Place in an oven and cook for an hour at 200°C or 400°F.

Rakott Krumpli or layered potato is a traditional Hungarian casserole. This is an incredibly tasty, quite simple and quick dish to make.

Potatoes: 1 kg
sausage chopped: 100 g
eggs: 6 pcs
sour cream: 500 ml
Oil: 2 tablespoons
Salt: 1 teaspoon
Black pepper: a pinch

Steps:

  • In a deep pan cook potato in the skin for 15 minutes, without being overcooked. Remove the potatoes from the water and set aside to cool, then peel and slice them.
  • In another pan, boil the eggs for 15 minutes to be cooked hard. When eggs are cooked, peel and slice them.
  • Coat the baking dish with oil and put: - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt) and coat with sour cream
  • Place in oven and bake for 35-40 min at 200 C.

4 közepes db Burgonya
5 db Főtt tojás
25 dkg Kolbász
660 g Tejföl
2 ek Sertészsír
0 ízlés szerint Só

Steps:

  • Főzzük meg héjában a krumplit és a tojásokat is. Mindkét alapanyag ha megfőtt, pucoljuk meg, és vágjuk őket szeletekre.
  • Míg a krumpli és tojás fő, addig vágjuk fel a kolbászt is karikákra.
  • A zsírt olvasszuk meg, keverjük bele a tejfölt, és picit sózzuk meg, majd egy nagy tepsi alját ezzel kenjük ki. Karikázzuk fel a tojásokat és a krumplit.
  • Első rétegnek a burgonya jöjjön, amit ha lepakoltunk, locsoljunk meg a zsíros tejföllel. Erre jöhet a tojás, amit ugyancsak zárásként locsoljunk meg. Majd a kolbászokat is rakjuk le egy rétegben, és zárásként a maradék burgonyát.
  • A maradék tejföllel locsoljuk meg az egészet, nem baj, ha kicsit "tocsog" a tejfölben a rakott krumpli, másnap annál jobb lesz.
  • A tepsit tegyük 200 fokra előmelegített sütőbe, és 1 órán át süssük a krumplit. Ha kész, vegyük ki, egy picit pihentessük, aztán már fogyaszthatjuk is!

2 tablespoons butter
2 tablespoons olive oil
1 large onion, diced
1 1/2 tablespoons Hungarian paprika
6 large potatoes, diced 3/4 inch (waxy type)
1 small green pepper, diced
1 large tomatoes, peeled and diced
salt and pepper, to taste
water

Steps:

  • In a large saucepan, melt butter and olive oil.
  • Sauté the onions for 5 minutes.
  • Put all of the rest of the ingredients into the pot, just barely covering the potatoes with water.
  • Bring to a boil, then reduce to a simmer.
  • Avoid stirring as much as you can to keep the potatoes from breaking apart.
  • Cook for 30 minutes or until tender.

Steps:

  • Boil peeled potatoes until fork inserted tells you it's cooked.
  • Boil eggs until hardboiled.
  • Slice potatoes to form medallions.
  • Slice eggs.
  • In casserole dish, layer butter, sour cream, potatoes and eggs until used up.
  • Sour cream should be top layer.
  • Cover, put in 350 degree oven for about 1 hour or until brown.
