Steps:
- In a blender, mix all ingredients to desired consistency.
- If salsa is too runny, you can always add back 1/4 cup finely chopped tomatoes and green onions, and stir them in.
- Let sit half hour, or preferably covered in an airtight container in a refrigerator overnight.

SKIRT STEAK TACOS WITH ROASTED TOMATO SALSA

Steps:
- Heat grill to high.
- Wrap tortillas in aluminum foil and on the top rack of the grill while the steak is grilling.
- Heat grill pan over high heat. Brush steak with oil and season with salt and pepper on both sides. Grill on one side until golden brown and slightly charred, about 3 to 4 minutes. Turn the steak over and cook to medium-rare doneness, about 3 to 4 minutes longer. Let rest 5 minutes then slice against the grain into 1/4-inch thick slices.
- Fill each tortilla with some lettuce, 3 to 4 pieces of meat, onion, grilled tomato salsa, sour cream, and avocado.
- Heat grill to high.
- Heat oil in a small saute pan and saute the chiles, onion, and garlic until soft.
- Brush tomatoes with oil and season with salt and pepper. Grill on both sides until slightly charred and soft.
- Transfer tomatoes and serrano mixture to a food processor; add the lime juice and salt and pepper and process until smooth. Add the cilantro and pulse a few times (there should be flecks of cilantro in the salsa.) Transfer to a bowl.
STEAK TACOS WITH TOMATILLO SALSA

- Heat a large cast-iron skillet over medium-high heat. Add the cumin seeds and toast, stirring occasionally, about 1 minute; transfer to a bowl. Add the garlic and chiles to the skillet. Cook, turning occasionally, until soft and blackened in spots, about 5 minutes. Transfer to a food processor and let cool. Add the cumin seeds, vegetable oil, 1/4 cup lime juice and the brown sugar and puree until smooth. Season with 1 1/2 teaspoons salt and a few grinds of pepper. Transfer to a resealable plastic bag and add the steak, shaking well to coat. Refrigerate, 1 to 4 hours.
- Soak the onion in a bowl of cold water. Meanwhile, wipe out the skillet and heat over high heat. Cook the tomatillos, turning, until well charred, about 7 minutes. Transfer to a plate and let cool. Remove the charred husks and roughly chop the flesh. Drain the onion. Wipe out the food processor; add the tomatillos, onion, cilantro and the remaining 1 to 2 tablespoons lime juice and puree until smooth. Season with 3/4 teaspoon salt and a few grinds of pepper; set aside.
- Meanwhile, bring the steak to room temperature, about 30 minutes. Preheat a grill to high. Remove the steak from the marinade and shake off any excess. Lightly oil the grill, then grill the steak until charred on the bottom, about 5 minutes. Flip and cook until charred on the other side, 1 to 3 more minutes. Transfer to a cutting board and let rest 10 minutes.
- Warm the tortillas on the grill. Thinly slice the steak against the grain. Double up the tortillas and fill with the steak and tomatillo salsa. Top with cheese and radishes.
STREET TACO WITH MANGO SALSA
We are not vegetarian but like to eat healthy. I created this because we love to substitute grains and sometimes tofu for meat. When I make one that my husband raves about, I like to share it. Don't be afraid to try a variety of grains as meat substitutes. Doesn't have to always be tofu. Feel free to use ground turkey, pork, or chicken. Play with the spices. I sure do! Enjoy.

- Bring water and freekeh to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until freekeh is tender and liquid has been absorbed, 20 to 30 minutes.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir onion, green bell pepper, tofu, mushrooms, garlic, and serrano chile pepper until vegetables are tender and tofu is lightly browned, 10 to 15 minutes. Add corn, black beans, and freekeh; cook and stir until heated through, 2 to 3 minutes. Stir juice of 1/4 lemon, juice of 1/4 lime, cumin, 1 teaspoon white sugar, chili powder, coriander, paprika, and a pinch of salt into vegetable-tofu mixture; cook and stir until evenly coated and tofu is browned, 2 to 3 minutes.
- Mix tomatoes, mango, basil, cilantro, 2 tablespoons olive oil, juice of 3/4 lemon, juice of 3/4 lime, 1 tablespoon white sugar, oregano, and a pinch of salt together in a bowl until salsa is evenly combined.
- Spoon vegetable-tofu mixture into each corn tortilla; top each with mango salsa, about 1 tablespoon feta cheese, and 1 tablespoon yogurt.

TITO'S TACOS MEAT SAUCE (COPYCAT)
Call Culver City's Titos Tacos a dive or an institution, but they have one of the most famous all meat burritos in West Los Angeles. They have been in business for over 50 years with a line that never ends, no matter what time of day you go. Everything is homemade. When I was a kid I used to visit Titos Tacos when vacationing from Florida, and would order extra to freeze and take back to Florida with me. Now you can just make them at home, though not exact, they are pretty darn close. Now if I could only get their Salsa recipe.....

- Cut Chuck Roast into 1 inch cubes.
- Use a crockpot.
- Mix dry ingredients together and coat the meat in the crockpot.
- Pour in broth and mix well.
- Cook on high for a minimum of 8 hours or until meat is tender. If sauce is too thin, remove the lid and cook an hour longer so it will thicken.
- This sauce gets better after it sits for a while. I usually make it a day before, it will also thicken more in time.
- If desired, shred beef with a fork.
- Roll into Flour Totilla Burrito Style.

MATEO'S BETTER THEN YOUR TACO SHOP SALSA
This recipe came to me while I was just dabbling in the kitchen. I have tried a few different Mexican Salsa recipes but nothing really that taste like a fancy Mexican restaurant. This recipe is super easy and takes about 20 minutes. I hope you enjoy! I would love your feedback!

- Start by boiling the 8 Chili De Arbol Chili's for about 5 to 10 minutes until they soften.
- In the meantime, heat the diced tomatoes under high heat.
- When The Chili De Arbol Chilis are soft, drain and add to diced tomatoes. Add the Cumin, Pepper, Salt and Brown Sugar to the diced tomatoes and Chili De Arbol Mix. Let simmer.
- In a Kitchen Blender, combine Sweet Chilis, Garlic, Red Onion.
- When diced tomatoes and Chili De Arbol mix are simmered. Turn off heat and pour to add diced tomatoes and Chile de Arbol into the Blender mix.
- Mix ingredients on high until a smooth consistency.
- Add the juice of 2 Limes and 1 handful of Cilantro and blend again until a smooth consistency.
- Place in refrigerator and let cool for 20 minutes.
- When Salsa is Chilled, serve with Chips. Enjoy!

SOFT BEEF TACOS WITH SALSA

- Place eggplant slices on 2 baking sheets. Lightly salt eggplant on both sides. Let stand 1 hour. Drain on paper towels, pat eggplant dry, wiping off salt.
- Heat oil in heavy large pot over medium-high heat. Sauté half of beef until brown, about 3 minutes. Using slotted spoon, transfer beef to bowl. Sauté remaining beef until brown, about 3 minutes. Return all beef to pot. Add salsa, broth, garlic, sugar and soy sauce; bring to boil. Reduce heat to medium-low, cover and simmer until beef is tender, stirring often, about 1 hour 10 minutes.
- Uncover pot and simmer stew until sauce thickens, about 5 minutes. Mix in cilantro and lime juice. Season with salt and pepper. (Can be made 2 days ahead. Refrigerate until cold, then cover and keep refrigerated. Rewarm before continuing.)
- Heat tortillas 1 at a time on stove burner, about 10 seconds per side, turning with tongs. Cover with towel to keep warm.
- Serve stew with tortillas, allowing diners to assemble tacos.
