A great recipe to try when you're in the mood for fried chicken, but can't afford all the calories and fat. If you're out of buttermilk, you can just substitute 1/4 C milk + 1 TSP vinegar. I like to spice this up by adding lots of hot sauce. If time allows, I would recommend soaking the chicken tenderloins in the buttermilk, garlic powder and hot sauce mixture in the refrigerator for at least 2 hours. 1/4 cup buttermilk
1 teaspoon garlic powder, plus
1 teaspoon garlic powder
2 -3 teaspoons hot sauce
1/4 cup breadcrumbs
2 tablespoons flour
1 teaspoon paprika
salt & pepper
1/2 lb chicken tenderloins
2 teaspoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Spray baking tray with non-stick cooking spray.
  • Combine buttermilk, 1 teaspoon of garlic powder and hot sauce in shallow bowl. Stir well.
  • Combine breadcrumbs, flour, paprika, salt, and pepper in another plate.
  • Dunk chicken tenderloins in buttermilk mixture, then coat well with breadcrumb mixture.
  • Spread tenderloins in single layer on baking tray.
  • Drizzle with olive oil.
  • Bake for 20-23 minutes, or until chicken is thoroughly cooked.

1 fresh chicken
3/4 cup buttermilk
1 cup flour
1 1/2 teaspoons poultry seasoning (optional)
1 teaspoon paprika
1/2 teaspoon seasoning salt
1/4 cup margarine or 1/4 cup butter

Steps:

  • PREP: Heat oven to 425F.
  • CLEAN: Wash hands.
  • Place buttermilk in shallow dish.
  • On waxed paper or plate, mix flour, poultry seasoning, paprika and salt.
  • Dip chicken in buttermilk to coat completely.
  • Dredge in flour mixture to cover completely.
  • Place on clean sheet of waxed paper.
  • In foil-lined 15 x l0-inch baking pan, melt margarine in oven 3 to 5 minutes or until bubbly.
  • Place chicken skin side down in pan.
  • CLEAN: Wash hands.
  • Notes: CHILL: Refrigerate leftovers immediately.
  • Chicken may also be deep-fried.
  • COOK: Bake chicken at 425F for 30 minutes.
  • Carefully turn chicken over.
  • Bake 30 minutes more or until internal juices of chicken run clear.
  • (Or insert instant-read meat thermometer in thickest part ot chicken).
  • (Temperature should read 170°F for white meat, 180°F for dark meat).

5 -6 small baby potatoes, cubed
nonstick cooking spray
salt & pepper
2 teaspoons minced garlic
1 teaspoon paprika

Steps:

  • Pre-heat oven to 375 degrees.
  • Spray baking spray with non-stick cooking spray.
  • Throw potatoes into Ziploc baggie.
  • Spray liberally with non-stick cooking spray (at least 5-6 sprays).
  • Add salt, pepper, garlic and paprika. Shake well until potatoes are well-coated.
  • Place on baking tray, in single layer.
  • Bake for about 45-50 minutes, or until potatoes are tender.

This chicken is a great alternative to the heart attack on a plate fried chicken without sacrificing the texture and flavor of a good home made 'fried' chicken. I've been tweaking this recipe for some time and I have it just where we like it. My hublet loves this recipe, as do I.

1 1/3 cups Crispix cereal
2 1/4 cups bagel chips (or melba toast)
1 tablespoon canola oil
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon fresh ground black pepper
1/4 cup reduced-fat buttermilk
1 teaspoon Dijon mustard
4 chicken pieces (about 6 ounces each, bone-in, skinless )
Pam cooking spray

Steps:

  • Preheat the oven to 400 degrees F. Set a rack on a foil lined baking sheet. Spray the rack generously with cooking spray.
  • Finely grind the cereal and toasts together in a food processor. Transfer crumbs to a large gallon size plastic bag. Add the oil, salt, cayenne, paprika, and ground pepper and toss to mix thoroughly.
  • Whisk the buttermilk and Dijon mustard together in a medium shallow bowl. Add chicken to buttermilk/Dijon and turn to coat all the pieces evenly. Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated.
  • Place coated pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray, and bake until the coating crisps and browns, approximately 35 to 40 minutes.
  • Transfer to a platter and serve hot or at room temperature.
  • Cook's note: I like to cook the chicken on the bone for a real moist and juicy chicken experience. If you can't find bone-in skinless chicken, simply pull off the skin before coating. Chicken breast halves can be quite large. To get a healthy 6 ounce portion, cut the breast pieces crosswise with a heavy knife into pieces about the same size as a chicken thigh.

1 cup unbleached all-purpose flour
2 large eggs
1/2 cup buttermilk (Substitution: Blend 1 1/2 t lemon juice with enough milk to equal 1/2 cup; let stand 5 minute)

1/4 cup margarine or 1/4 cup butter, Melted

Fried chicken without all that guilt and oily flavor. You can use bone-in chicken but cooking time will be longer.

1 1/2 lbs boneless chicken tenderloins, thawed
1 cup brown rice flour
1/2 cup oat flour
1/4 cup cornmeal
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
salt, to taste
ground black pepper, to taste
grapeseed oil

Steps:

  • Combine flours, meal, garlic powder and paprika in a gallon Ziploc bag and mix well. Salt and pepper chicken pieces as desired and add to bag. Close bag and shake to coat chicken well. ( may want to do a few pieces at a time for better coverage.) Meanwhile in frying pan, add grape seed oil until bottom is covered and is about ¼ inch deep. Heat oil and once hot, add chicken one piece at a time. Cook, turning often, until internal temp of chicken is 180 degrees and outside is crispy. If you over cook, meat will be dry. Remove from oil and place in dish on paper towels and cover for 5 minutes.
