KOREAN LETTUCE AND ONION SALAD



Korean Lettuce and Onion Salad image

Number Of Ingredients 9

2 tablespoons soy sauce, or more to taste
2 tablespoons rice vinegar, or more to taste
1/2 teaspoon sugar, or more to taste
1/2 teaspoon paprika, hot or cayenne pepper
2 teaspoons sesame oil, Asian (dark)
1 1/2 tablespoons sesame seeds, toasted
1/2 teaspoon black pepper, freshly ground
6 to 8 Romaine lettuce leaves, rinsed, spun dry, and cut crosswise into 1/4-inch strips (about 3 cups)
1 sweet onion, such as Vidalia, Maui, or Walla Walla, thinly sliced

Steps:

  • 1. Combine 2 tablespoons each soy sauce and vinegar and 1/2 teaspoon each sugar and paprika in a serving bowl and whisk until the sugar is dissolved. Whisk in the sesame oil, sesame seeds, and pepper.2. Add the lettuce and onion to the dressing and toss gently but thoroughly. Correct the seasoning, adding soy sauce, vinegar, or sugar as necessary the salad should be highly seasoned. Serve immediately.Serves 4Note: If the stronger-tasting yellow onions are the only ones available, you may wish to blanch the slices in boiling water for 10 seconds, then rinse under cold water, to blunt the bite.
