KRAMER CHICKEN PICCATA WITH TARRAGON
This is different than most piccata's because of the tarragon- it really compliments the lemon well. Also, more sauce with this than most, so you have enough to flavor the rice or noodles you might want to serve this over. Pretty and aromatic- good enough for company!

Steps:
- Cut your chicken into thin strips (this is easy if it's slightly frozen and you use a sharp knife).
- Mix the flour and garlic powder in a bowl.
- Dip the chicken strips into beaten egg, then dredge generously in the flour mixture.
- Melt the margarine in a large skillet and cook chicken quickly over medium-high heat, about 8 minutes.
- Remove chicken strips, add chicken broth and stir, making sure you get the browned flour off the bottom of the pan.
- Sauce should thicken slightly-if not, add a bit of flour which you mixed well with a little water.
- Add tarragon and place chicken back in the sauce.
- Turn heat to low, cover, and simmer about 15 minutes, adding the lemon slices for the last 5-8 minutes.
- Serve over rice or noodles.
CHICKEN TARRAGON
Steps:
- Sprinkle chicken with salt and pepper and dredge in the flour. Reserve flour. In a large skillet, heat 3 tablespoons butter, add chicken and brown on both sides. Transfer to heated platter. Add shallots to skillet and saute briefly. Add wine. Cook until nearly evaporated. Add reserved flour, stir, and cook 3 minutes. Sprinkle with tarragon and add chicken broth. Return chicken to pan and simmer 10 minutes. Transfer to heated platter and keep hot. Add 1 tablespoon each butter and cream to pan, heat and pour over chicken.;
CHICKEN WITH TARRAGON-CAPER SAUCE WITH MIXED GREENS

- Whisk together mayonnaise, white wine vinegar, shallots, tarragon, and capers in small bowl. Season sauce to taste with salt and pepper.
- Season chicken breasts to taste with salt and pepper. Toss mesclun in bowl with olive oil. Sprinkle with salt. Divide mesclun among 4 plates. Slice chicken breasts and fan atop salads. Drizzle tarragon-caper sauce over chicken. Garnish with red pepper slices. Serve immediately.

Steps:
- Sprinkle chicken with salt and pepper and dredge with flour; reserve remaining flour.
- In large skillet, heat 3 tbsp butter and brown chicken on both sides.
- Transfer to a plate to hold.
- Add shallots to the skillet and saute briefly.
- Add wine; cook the liquid over high heat until most is evaporated, while scraping loose all brown particles.
- Add reserved flour and whisk to make thick paste.
- Sprinkle with tarragon and whisk in the broth.
- Return the chicken to skillet; cover and cook until tender, about 25 minutes.
- Transfer chicken to heated platter and keep hot.
- Add remaining butter and the cream to the skillet.
- Heat, stirring the sauce, then pour over the chicken.
- Garnish with fresh tarragon sprigs.

- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain.
- Whisk flour and lemon-pepper seasoning together in a shallow bowl; dredge chicken through mixture until evenly coated, shaking excess back into bowl.
- Heat olive oil in a large skillet over medium-high heat; cook chicken until light golden brown and no longer pink in the center, 6 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate, retaining oil mixture in the skillet.
- Mix white wine, lemon juice, water, and chicken bouillon granules into oil mixture in the skillet. Bring liquid to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon until sauce is slightly reduced, 2 to 4 minutes. Stir capers into sauce.
- Divide pasta among serving plates; top with chicken. Spoon sauce over chicken and garnish with lemon wedges and parsley.

- Sprinkle chicken with paprika. In a large skillet, brown chicken in 2 teaspoons butter. Place the vegetables in a greased 13-in. x 9-in. baking dish. SAUTéED CHICKEN BREASTS WITH TARRAGON

- In a small bowl mix together paprika and curry powder, and sprinkle on both sides of chicken breasts; cover and refrigerate for 2 hours.
- Place 2 breasts on large sheet of plastic wrap, cover with more plastic and pound with a mallet until they are about 1/4-inch thick. Repeat with remaining breasts. (Chicken may be wrapped and refrigerated for up to 12 hours.)
- Preheat oven to 200 degrees. Season chicken on both sides with salt. In a large skillet over medium-high heat, add enough canola oil to film the bottom of pan. Working in batches, without crowding, place breasts smooth side down and let cook until golden brown, 1 to 1 1/2 minutes. Turn and cook for another 1 to 1 1/2 minutes. Transfer to a baking sheet and keep warm in oven.
- Wipe out skillet and return to medium heat. Add 1 tablespoon of butter and shallot, and sauté for 30 seconds, swirling pan to coat shallot with butter. Add wine, raise heat to medium-high, and cook until wine is reduced by half, about 1 minute. Add stock, bring to boil, and cook until reduced and slightly thickened, 1 to 2 minutes.
- Stir in chopped tarragon, remaining 2 tablespoons butter, and any juices that have accumulated on baking sheet. Swirl to melt butter, and season to taste with salt and pepper. Arrange chicken on a warmed platter, pour sauce over it, and garnish with whole tarragon leaves.

ROAST CHICKEN WITH TARRAGON

- Preheat oven to 500 degrees. Remove fat from the crop and cavity of the chicken. Remove the neck, gizzards and liver and freeze for another use.
- Squeeze half the lemon all over the skin of the chicken. Season the skin with salt and pepper. Stuff the cavity with the remaining half lemon, garlic and 1 bunch whole tarragon.
- Put the chicken in a roasting pan, breast side up, and roast 45 minutes to 1 hour, or until the juices run clear. During the first few minutes, either shake the chicken or move it frequently with a wooden spoon to keep it from sticking.
- When chicken is done, tilt it over the roasting pan to let the cavity juices run into the pan. Remove the chicken to a platter. Pour off the fat from the roasting pan.
- Put the pan on top of the stove. Add the wine and bring the contents of the pan to a boil, while scraping the bottom vigorously with a wooden spoon. Stir in tarragon leaves. Let simmer 5 minutes once the pan is thoroughly deglazed. Serve the pan juices over the chicken or pass it separately in a sauce boat.
