1/4 cup vegetable oil
1/2 large onion, thinly sliced
1/2 cup parsley leaves, packed
1/2 cup cilantro leaves, packed
1/4 cup dill fronds, packed
3 medium leaves romaine lettuce, very thinly cut crosswise
1/4 cup thinly sliced (crosswise) scallion greens
3 tablespoons fine bread crumbs or all-purpose flour
1/4 teaspoon ground turmeric
1/4 cup barberries (optional, see note)
1 large egg, lightly beaten
Salt
ground black pepper
2 beef tenderloins, about 2 1/2 pounds each, trimmed
2 teaspoons sumac
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cinnamon
1/2 teaspoon ground cardamom

Steps:

  • Preheat oven to 350 degrees. Pour oil in ovenproof skillet on medium-high heat, fry onion until crisp and golden. Drain on paper towels and reserve oil in pan.
  • In a food processor, mince parsley, cilantro and dill. Combine in bowl with onions, romaine, scallions, bread crumbs, turmeric and barberries, if using. Add beaten egg and mix just until combined. Season lightly with salt and pepper.
  • Make a slice lengthwise down middle of each tenderloin to about 1/2 inch from bottom, to open like a book. Season all sides with sumac and a mix of cumin, coriander, cinnamon and cardamom. Put herb mixture into opening of meat (it will be very full) and tie with twine at 1-inch intervals.
  • Return skillet to high heat. When pan is hot, add tenderloins, turning to sear on all sides until browned. Transfer skillet to oven. Cook until an instant-read thermometer inserted into thickest part of meat (not the stuffing) reads 130 degrees for medium-rare, 20 to 25 minutes. Transfer tenderloins to a warm platter, cover lightly with foil and allow to rest for 10 minutes. Cut into slices, discarding butcher's twine, and serve.

¼ cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9x13 inch baking dish and top with the cheese.
  • Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes.

Kuku sabzi is a traditional Persian dish that is a herb-heavy frittata. The egg is really just a binder to hold all of the herbs together, it is not the main component of this dish. Serve with flatbread, yogurt, pickled onions, feta, and pomegranate seeds. It is wonderful hot, or at room temp. Great light lunch or an appetizer for a casual cocktail.

1 large leek
3 tablespoons extra-virgin olive oil, divided
4 large eggs
1 teaspoon baking powder
1 teaspoon ground fenugreek
¾ teaspoon kosher salt
½ teaspoon ground turmeric
1 ½ cups finely chopped fresh parsley
1 cup finely chopped fresh cilantro
¾ cup finely chopped fresh dill

Steps:

  • Slice leek in half lengthwise, then thinly slice crosswise.
  • Heat 1 tablespoon oil in a 10-inch, nonstick, broiler-safe skillet over medium heat. Add leek and cook, stirring occasionally, until softened and cooked through, 8 to 10 minutes. Remove from heat.
  • Preheat the oven's broiler with the rack in the upper third position.
  • Whisk eggs in a large bowl. Add baking powder, fenugreek, salt, and turmeric, and whisk to thoroughly combine. Fold parsley, cilantro, dill, and leeks into eggs. Gently stir to combine; the mixture will be mostly herbs, with just enough egg to wet the mixture through.
  • Heat remaining 2 tablespoons oil in the same skillet over medium heat. Add herb mixture and distribute evenly in the pan, smoothing the top. Cover and cook, undisturbed, until the bottom and edges are just set, about 8 minutes.
  • Remove cover and transfer to the preheated oven. Cook until the top and middle is cooked through, 1 to 2 minutes.

2 large eggplants or 6 small eggplants, peeled and cut into thin strips
1 egg white, lightly beaten
1/2 cup vegetable oil, butter or 1/2 cup ghee
2 large onions, peeled and thinly sliced
4 garlic cloves, peeled and crushed
4 eggs
4 tablespoons chopped fresh parsley
1/4 teaspoon powdered saffron, dissolved in 1 tablespoon hot water
1 lime, juice of
1 teaspoon baking powder
1 tablespoon all-purpose flour
1 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Peel the eggplants, cut them lengthwise in quarters if they are large, and salt them to remove bitternes if necessary.
  • Brush each side of the eggplant pieces with eggwhite to reduce the oil needed for frying.
  • In a skillet, heat 4 tablespoons oil over medium heat.
  • Add the onion and stir-fry for 10 minutes, until translucent.
  • Add the eggplant and garlic and stir-fry 10 minutes longer, until all sides are lightly golden brown.
  • Remove from heat and allow to cool.
  • Preheat the oven to 350°F.
  • Pour 4 tablespoons of oil into an 8-inch baking dish lined with parchment paper.
  • Break the eggs into a large bowl.
  • Add the parsley, saffron water, lime juice, baking powder, flour, salt, and pepper.
  • Beat thoroughly with a fork.
  • Add the eggplant, onion and garlic and mix thoroughly.
  • Pour the mixture into the dish and bake uncovered for 45 to 50 minutes, until the edge is golden brown.
  • Serve the kuku from the baking dish or unmold it by loosening the edge with a knife and inverting the dish onto a serving platter.
  • Remove the parchment paper.
