When I was growing up, whenever my family would order from our favorite Chinese restaurant, we'd order the same things: many orders of pot stickers and kung pao chicken, hold the peanuts (because my mom is allergic!). Even as a picky eater, I loved how saucy and flavorful the kung pao chicken was. Every single time we ordered it, my older sister would pick out a dried chile with her fingers, hold it in my face, and try to convince me to eat this "dehydrated carrot." I never fell for it!

Number Of Ingredients 16

2 teaspoons cornstarch
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 1/2 pounds skinless, boneless chicken thighs, cut into 1-inch cubes
2 tablespoons hoisin sauce
1 teaspoon sugar
2 cloves garlic
One 2-inch piece ginger
2 tablespoons neutral oil
2 to 3 dried red chile peppers
1/2 pound green beans or Chinese long beans, sliced on a diagonal into 1-inch pieces
1 small red bell pepper, seeded and sliced
1/2 bunch scallions, trimmed and sliced on a diagonal
1/2 teaspoon Sichuan peppercorn powder or crushed black peppercorns and coriander seeds
1/2 cup unsalted roasted peanuts, plus more for garnish
Cooked white rice, for serving

Steps:

  • Whisk together the cornstarch, 1 tablespoon soy sauce and 1 tablespoon rice vinegar in a medium bowl. Add the chicken, then toss to coat and let marinate at room temperature, 20 minutes.
  • Combine the hoisin, sugar, remaining 2 tablespoons soy sauce, remaining 2 tablespoons rice vinegar and 2 tablespoons water in a small bowl. Grate the garlic and ginger into the sauce. Stir and set aside.
  • Heat a wok or large skillet over medium-high heat. Add the oil, then add the chicken. Stir-fry until browned on the outside, 3 to 5 minutes. Add the chiles, green beans, red pepper, scallions whites, Sichuan peppercorn powder and peanuts. Stir-fry until fragrant and the veggies are crisp-tender, 3 to 5 minutes. Add the sauce and simmer until thickened slightly and the chicken is completely cooked through, 2 to 4 minutes. Garnish with the scallion greens and additional peanuts. Serve with the rice.

1 pound pork tenderloin, cut into thin strips
3/4 cup P.F. Chang's® Kung Pao Sauce, divided
1 tablespoon vegetable oil
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
2 cups shredded romaine lettuce
1/4 cup thinly sliced green onions
1/4 cup chopped fresh cilantro
8 flour tortillas (6 inch), warmed
thinly sliced jalapeño pepper rings
fresh lime wedges

Steps:

  • Place pork in large resealable bag; pour in 1/2 cup Kung Pao sauce, seal and refrigerate at least 1 hour. Heat oil in large nonstick skillet over medium heat. Add half of pork to skillet and cook until browned and sauce begins to caramelize. Remove from skillet and repeat with remaining pork.
  • Divide pork evenly between each tortilla. Top with bell peppers, lettuce, green onion and cilantro. Drizzle with remaining Kung Pao sauce and serve with jalapenos and lime wedges.

In the spirit of the American Chinese restaurant favorite, this stir-fry uses peanuts and chiles to give new life to leftover turkey (or rotisserie chicken).

1 1/4 pounds leftover roast turkey breast or rotisserie chicken (skin removed), cut into 3/4-inch cubes (about 4 cups)
2 tablespoons soy sauce
2 tablespoons mirin or other rice wine (or dry sherry)
2 bunches scallions (3 finely chopped, the remaining cut into 1-inch pieces)
2 cloves garlic, minced
1 tablespoon minced peeled ginger
1 tablespoon balsamic vinegar
1 tablespoon cornstarch
2 teaspoons sugar
3 tablespoons peanut oil
6 dried Chinese red peppers or chiles de arbol, seeded and halved crosswise if long
1/2 cup unsalted roasted peanuts or cashews
2 cups cooked white rice, for serving

Steps:

  • Toss the turkey and 1 teaspoon each soy sauce and mirin in a large bowl; set aside. Combine the 3 finely chopped scallions with the garlic and ginger in a small bowl; set aside. Whisk 1 cup water, the remaining 1 tablespoon plus 2 teaspoons each soy sauce and mirin, the vinegar, cornstarch and sugar in another small bowl; set aside.
  • Heat a wok or Dutch oven over high heat. Add the peanut oil, then add the dried peppers and stir-fry until lightly browned, 30 seconds. Immediately add the scallion pieces and stir-fry until tender, about 1 minute. Add the peanuts, turkey and the scallion-garlic mixture; stir-fry 20 seconds. Reduce the heat to medium. Add the soy sauce-cornstarch mixture and cook, stirring, until thick and glossy, about 2 minutes. Serve over the rice.

6 (14-ounce) cans low-sodium chicken broth
28 ounces water (2 cans)
8 ounces soy sauce
2 ounces dark soy sauce
8 ounces Worcestershire
4 ounces rice wine or gin
10 pounds boneless skinless chicken breast, diced
1-ounce cornstarch
2 onions, diced
2 bunches cilantro, leaves chopped
48 soft corn tortillas
1 cup unsalted roasted peanuts, chopped

Steps:

  • Coat a large saucepan with oil, add the red pepper flakes and toast over medium heat until aromatic. Add the chicken broth and 28 ounces (2 cans) water and bring to a light boil. Add the soy sauce, dark soy sauce, Worcestershire and rice wine, reduce the heat and simmer for a few minutes. Remove from the heat and let cool to room temperature. Add about 3 to 4 ladles of room temperature sauce to a resealable plastic bag and add the chicken. Let marinate for at least 1 hour.
  • Add the cornstarch to the remaining sauce and mix well.
  • Heat a large skillet or a flat top grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Cook the chicken in the hot skillet until cooked through and lightly browned. Add the remaining sauce mixture and cook to desired consistency, coating the chicken well. Transfer to a serving bowl or platter.
  • Mix the onions and cilantro together in a bowl.
  • Assembly: Warm the tortillas. Fill with Kung Pao Chicken and top with the onion/cilantro garnish and chopped peanuts.
