BERRIES WITH SABAYON
A creamy like sauce over berries. This will make a perfect summer dessert. Sounds very easy to make and the photo on the magazine looks divine. From Canadian Living Issue June 09.

Steps:
- combine strawberries and raspberries in a bowl.
- divide among 6 dessert goblets or dish, set aside.
- To Make Sabayon:.
- In large heatproof bowl over saucepan of gently simmering (not boiling) water, whisk together egg yolks, Marsala and sugar until thick enough to mound softly on spoon (5 to 7 minutes).
- spoon over fruit, sprinkle with almonds if using.

ROASTED BERRIES WITH SABAYON
Steps:
- Preheat oven to 425°F.
- Place cleaned berries in a large bowl. Add sugar, Cointreau, orange juice and orange zest and toss together.
- Pour on a baking sheet and place in preheated oven for 10-15 minutes until the fruit is just softened. While berries are roasting, make the sabayon.
- Mix yolks and sugar to combine and become frothy.
- Add wine, Cointreau, and salt.
- Mix well and place over simmering water, making sure water is not touching the bottom of the yolk mixture. Constantly whisk the mixture to incorporate air and bring it to 160°F. The sauce will become thick. If unsure, check with an instant-read thermometer.
- Remove sauce from heat.
- Place prepared berries in individual serving dishes and top with a generous amount of sabayon sauce. If desired, brûlée the top by sprinkling on a little sugar and quickly torching or setting under the broiler.
- Garnish with mint and enjoy!
WARM SABAYON WITH GLAZED PLUMS AND RASPBERRIES
Steps:
- 1. Stir the sugar and butter in a large skillet over medium heat until combined, about 2 minutes. Add the plums and cook until soft and coated with syrup, 8 to 10 minutes. Remove from the heat; stir in the raspberries.
- 2. Meanwhile, make the sabayon: Put about 1 inch of water in a saucepan and bring to a simmer over medium-high heat.
- 3. In a heatproof bowl that can rest in the saucepan without touching the water, beat the egg yolks and sugar with a large whisk, making sure to scrape the sides of the bowl. Add the wine and salt and beat until foamy. Set the bowl on the pan and continue whisking constantly, moving in a circular motion around the bowl, until the eggs can hold a thick ribbon, 4 to 6 minutes. Remove from the heat and continue whisking to cool slightly. Serve the fruit warm in shallow bowls or small glasses with sabayon spooned on top.
EASY FRESH FRUIT SABAYON

Steps:
- In metal mixing bowl, whisk together all except the berries.
- Pour into double boiler or over simmering water in a saucepan if you don't have one.
- Whisk the sabayon (that's what it is now!) continuously until thick which takes about 5 minutes.
- This should look a lot like softly whipped cream and easily coat the back of a spoon.
- Divide berries among 4 serving dishes.
- Large wine glasses work well.
- Equally pour the sabayon over the berries.
- ENJOY!

Steps:
- Heat water in a pan.
- Allow it to boil.
- The pan is to be used as a double boiler.
- Reduce heat, allow to simmer.
- Beat egg yolks in a bowl.
- Add sugar to the egg yolks.
- Mix well.
- Keep this bowl containing yolks and sugar (sabayyon) over the pan in which the water is simmering.
- Keep mixing the tolks- sugar mixture for 3-5 minutes while holding it over the pan.
- Put the chopped fruits in a bowl.
- Pour the sabayyon over the fruits.
- Gratinate for 2-3 minutes until a crisp brown colour appears over the fruits.
- Serve immediately if you want a hot dessert or add some ice cream (your favourite flavour) over the fruits-sabayyon mixture and serve as a cold dessert.
- Pour the sabayyon over this.
