LEMON SABAYON WITH FRESH WILD BERRIES



Lemon Sabayon with Fresh Wild Berries image

6 egg yolks
1/2 cup light brown sugar
3 tablespoons lemon juice
1 teaspoon lemon zest
1/2 cup Marsala
1 cup water, as needed
4 cups mixed berries of your choice (blackberries, blueberries, raspberries, strawberries, boysenberries)
Powdered sugar, for dusting
Fresh mint leaves, for garnish

Steps:

  • Combine yolks and sugar in a mixing bowl and whisk until the color turns slightly pale. Set a pot of water over medium heat and place the mixing bowl over the pot of hot water to create a double-boiler. Continue to whisk over the medium-low heat until the mixture begins to thicken (the temperature should reach 160 degrees F) then add the lemon juice and zest. Continue to cook for 1 to 2 minutes until it thickens up again and then add the Marsala. Continue to cook while whisking until the mixture has thickened but is light and creamy, about 7 to 8 minutes, thinning with water as needed to achieve a soup-like texture. Serve in a bowl over fresh berries, dust with powdered sugar and garnish with fresh mint.

2/3 cup Champagne
1/3 cup granulated sugar
1/4 cup heavy cream
Mint sprigs, for garnish

Steps:

  • Combine the egg yolks, Champagne, and sugar in the top of a double boiler and whisk over simmering water (make sure the bowl does not touch the water in the bottom pot). Whisk constantly until thick and foamy. Remove to an ice bath and continue whisking until cool. Set aside.
  • Whip chilled heavy cream to soft peak stage and fold gently into custard. To achieve the most volume, plan to fold in whipped cream just before serving. Serve in chilled glasses layered with fresh fruit and/or sponge cake. Garnish with mint.

1 1/2 cups Champagne
4 ounces milk chocolate sauce
2 ounces heavy cream
1 cup mixed fresh berries
3 sugar cookies, pre-made

Steps:

  • To make the Champagne sabayon, put the egg yolks, sugar, and Champagne in a medium stainless steel bowl. Whisk over barely simmering water (145 degrees F) until mixture begins to thicken. When it has tripled in volume, and falls in ribbons into the bowl, remove it from the water. Place the bowl on a cool surface and continue to whisk until the sabayon has cooled slightly.
  • While the sabayon is cooling, heat the milk chocolate sauce in a small sauce pot over low heat. Slowly incorporate the heavy cream until smooth. Mix the chocolate with the fresh berries and pour into a martini glass. Serve the sabayon over the chocolate/berry mixture and garnish with sugar cookies.

3 grapefruits
2 whole large eggs
2 large egg yolks
3/4 cup sugar
1/2 cup fresh lemon juice
2 tablespoons cold unsalted butter, cut in half

Steps:

  • Cut peel, including all white pith, from grapefruits with a sharp knife. Cut segments free from membranes and divide among 6 bowls.
  • Whisk together whole eggs, yolks, and sugar in a metal bowl until combined well, 1 to 2 minutes. Set bowl over a saucepan of simmering water and whisk until foamy, about 2 minutes. Add one third of lemon juice and whisk until thickened, about 1 minute. Add half of remaining lemon juice and whisk until thickened, about 1 minute. Repeat with remaining lemon juice. Continue cooking, whisking constantly, until thickened and an instant-read thermometer registers 170°F, 7 to 8 minutes more. Remove from heat and whisk in butter, 1 piece at a time, until incorporated. Cool slightly.
  • Spoon warm sabayon over grapefruit segments. Serve remaining sabayon on the side.

A dessert on its own, or served with berries or baked puddings, sabayon is like champagne in sauce form: its tiny bubbles almost audibly fizz and pop as your tongue wraps around each luscious spoonful. "Sabayon" is a French transliteration of the Italian "zabaglione," originally made with one tablespoon sugar and two tablespoons Marsala per egg yolk; French versions typically use white wine instead of the sweeter Marsala, and increase the liquid by 50% for a softer, lighter cream.

2 tablespoons Grand Marnier

Steps:

  • In a zabaglione pan (or a metal bowl or round-bottomed double boiler), whisk together the yolks and sugar until lighter in color; then stir in the wine.
  • Se the pan or bowl over a smaller pan of simmering water, and whisk until the mixture swells and thickens into a stable foam; it is ready when the wires of the whisk start leaving light traces between strokes. The water in the lower pan should be actively simmering but not boiling violently, and should not touch the bottom of the upper pan. There's no need to beat hard; just use a gentle back-and-forth wrist motion, getting all over the pan so the mixture doesn't overcook on the bottom and sides. Don't cook past the "light traces" stage, or the sabayon may lose volume and become dense instead of airy.
  • Off heat, whisk in the Grand Marnier (or rum, kirsch, or whatever). Serve immediately.
  • For an Italian zabaglione, reduce the sugar to 1/4 cup, and use 1/2 cup of dry Marsala.

1 teaspoon dried ginger
1/3 cup brandy
1 cup apple juice
1/4 cup brown sugar
1/4 cup sugar
1/2 teaspoon vanilla
1 cup berries (fresh or frozen raspberries, blueberries, etc.)

Steps:

  • In metal mixing bowl, whisk together all except the berries.
  • Pour into double boiler or over simmering water in a saucepan if you don't have one.
  • Whisk the sabayon (that's what it is now!) continuously until thick which takes about 5 minutes.
  • This should look a lot like softly whipped cream and easily coat the back of a spoon.
  • Divide berries among 4 serving dishes.
  • Large wine glasses work well.
  • Equally pour the sabayon over the berries.
  • ENJOY!

1/4 cup sugar
4 large egg yolks
3 1/2 cup sparkling apple cider
2 tablespoons Calvados, a French apple brandy (regular brandy can be substituted)
1/4 cup heavy cream (1/2 cup whipped)

Steps:

  • Fill a medium stockpot a quarter of the way full with water. Bring to a boil, then reduce heat and let simmer. Fill a large bowl with ice water; set aside. Combine sugar and egg yolks in bowl of an electric mixer fitted with a paddle attachment, and beat until mixture is pale and has a thick consistency, about 2 to 3 minutes. Scrape down sides of bowl with a rubber spatula one time while beating. Add cider and Calvados, and beat for 2 more minutes.
  • Transfer the yolk mixture to a large metal bowl, and set over simmering water. Whisk together for 6 to 8 minutes, until the sabayon thickens and is fluffy and slightly stiff. The sabayon should begin to look satiny and start sticking to the bowl slightly. The air bubbles will become very fine, instead of large and loose.
  • Set bowl in ice-water bath. Continue whisking sabayon until chilled, about 3 minutes. Whip the cream to medium-stiff peaks, and fold into chilled sabayon. The sabayon can be stored in refrigerator for up to 24 hours.
