This recipe, from former first lady Lady Bird Johnson, was featured in the 2011 exhibition "What's Cooking, Uncle Sam?" at the National Archives in Washington.

4 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
2 tablespoons chili powder, or to taste
1 1/2 cups canned tomatoes, cut up
2 to 6 dashes hot sauce, or to taste
Salt to taste

Steps:

  • Cook the meat, onion and garlic in a Dutch oven over medium heat, stirring, until lightly browned. Stir in the oregano, cumin, chile powder, tomatoes, hot sauce, salt and 2 cups hot water. Bring to a boil, lower heat and simmer, covered, for about 1 hour, skimming off the fat as it cooks.

Butter is a traditional ingredient in old Southern-style barbecue sauces and it's responsible for a lot of flavor here. This is a thin, tasty sauce that both goves over the meat while it's being grilled and gets passed at the table, warm.

4 tablespoons butter
1/4 cup apple cider vinegar (preferably organic)
1/4 cup ketchup
1/4 cup lemon juice, fresh
1/4 cup Worcestershire sauce
Tabasco sauce, to taste
1 tablespoon garlic, minced (optional)
salt & freshly ground black pepper, to taste

Steps:

  • Melt the butter in a small saucepan. Stir in the remaining ingredients and bring to a boil. Serve warm.

  • In a large skillet over medium-high heat, add olive oil and heat until warm. Add chicken and sautto warm up the meat and then add the chile powder. Stir with spatula until chili powder is distributed evenly over all the chicken meat. Remove chicken meat from skillet and set aside.
  • Turn heat down to medium, add butter and heat until just melted. Add onions and bell peppers and sautfor a few minutes until vegetables are softened and onions appear translucent.
  • Next add nacho cheese soup, cream of mushroom soup, cream of chicken soup, and the diced tomatoes with liquid and green chiles. Stir together to combine and heat until mixture just begins to boil, stirring occasionally. Remove from heat and add the chicken mixture and stir together to combine; set aside.
