STRAWBERRY RHUBARB PIE

Strawberry Rhubarb Pie image

Old fashioned strawberry rhubarb pie made with a homemade pie filling and lattice pie crust.

Provided by meredith

Categories     Pie

Number Of Ingredients 9

1 homemade pie crust
2 pints ripe strawberries
1 1/4 pounds rhubarb
1 cup granulated sugar
2 Tablespoons all-purpose flour
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Make or purchase a pie crust - enough for a bottom and top crust.
  • Divide the dough into two balls; one ball slightly bigger than the other. Flatten the balls into discs and refrigerate them for at least 30 minutes.
  • Hull and Slice the strawberries. Remove the green leaves and slice the rhubarb into 1/2 inch pieces. Combine the rhubarb, strawberries, sugar, flour, cinnamon, salt, vanilla and lemon juice in a large bowl. Mix well.
  • Preheat your oven to 425˚ F.
  • Remove the dough discs from the refrigerator and roll the larger one out into a 12 inch circle. Gently press the circle into a 9-10 inch pie plate and tuck in the edges instead of trimming them. Set aside.
  • Roll out the smaller disc into an 11 inch circle and cut 1 inch strips with a knife or decorative cutter. Set aside.
  • Spread your strawberry rhubarb filling into the bottom crust.
  • Place six dough strips horizontally across the pie, about ¾ inches apart. Working from the right side, peel back strips 1,3 and 5 and place a new strip vertically across the pie on the far right side. Lay the peeled strips back over, covering the vertical strip. Next, again working from the right, peel back strips 2, 4 and 6 and place a new strip vertically across the pie next to the other vertical one. Lay the peeled strips back over. Repeat this process twice, working your way right to left. Tuck in the edges of the lattice into the folded edge of the pie.
  • Brush the top of the pie crust with cream and sprinkle with coarse sugar (optional)
  • Bake the pie on the center rack for 20 minutes at 425˚F.
  • Decrease the temperature to 375˚ F and bake an additional 50 minutes.
  • Cool completely before cutting. Serve with whipped cream or ice cream.

WINNING RHUBARB-STRAWBERRY PIE

Winning Rhubarb-Strawberry Pie image

While being raised on a farm I often ate rhubarb, so it's natural for me to use it in a pie. I prefer to use lard for the flaky pie crust and thin, red rhubarb stalks for the filling. These two little secrets helped this recipe win top honors at the 2013 Iowa State Fair. -Marianne Carlson, Jefferson, Iowa

STRAWBERRY RHUBARB PIE

Strawberry Rhubarb Pie image

This Strawberry Rhubarb Pie is simply the best. Sweet and tart, this pie is perfect for your summer get togethers. Incredibly easy to make, this Strawberry Rhubarb Pie is finger-licking good and is sure to impress all your guests!

Provided by Joanna Cismaru

Categories     Dessert

Time 1h30m

Number Of Ingredients 8

1 pie crust (whole recipe for top and bottom)
4 cups rhubarb (stalks cut small 1/4 to 1/2 inch pieces)
4 cups strawberries (cleaned and chopped small)
1 cup sugar (granulated)
⅓ cup tapioca flour
1 tablespoon orange zest
1 pinch salt
1 egg (for egg wash)

Steps:

  • Prepare The Filling: To a large bowl add the strawberries, rhubarb, sugar, tapioca flour, orange zest and salt. Toss everything together well then allow the filling to rest for 15 to 30 minutes before baking, for the tapioca to soften.
  • Craft your crust: After removing your home made or store bought crust from the fridge you'll want to allow it to rest for up to 10 minutes, this will make it easier to roll out. Once it's softened you'll want to flour your rolling pin, to prevent the dough from sticking, and get to work. Each disc will need to be 1/8 of an inch thick. Place the dough gently onto the pie plate before crimping the edges and removing any excess dough.
  • Assemble your pie: Add the filling to your bottom crust, roll out your top crust in the same way described above and drape it over your pie. Crimp and seal your edges before slicing vents in the top crust with a knife or if you really want to impress, cut into long strips and weave a lattice crust. From there you will brush with your egg wash mixture, making sure to seal the edges.
  • Bake the pie: Preheat your oven first to 425 F degrees. Add the pie to the oven, on the bottom rack and bake for 15 minutes. Reduce the heat to 350 F degrees and bake for another 45 minutes to an hour or until the crust is golden brown and the filling is bubbling.

STRAWBERRY-RHUBARB PIE

Strawberry-Rhubarb Pie image

Provided by Food Network Kitchen

Time 2h50m

Yield 8 servings

Number Of Ingredients 13

2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 sticks cold unsalted butter, cut into chunks
2 tablespoons milk
2 tablespoons coarse sugar
1 1/4 pounds rhubarb
2 pints strawberries
1 cup granulated sugar
2 heaping tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
Pinch of salt
2 teaspoons vanilla extract
Juice of 1/2 lemon

Steps:

  • Make the crust. Combine the flour, salt and butter in a large bowl. Gently cut the butter into the flour using 2 sharp knives in a crisscross motion until the butter is about the size of small peas. (The lighter the hand, the flakier the crust.) Slowly drizzle in 1/2 cup ice water and fold into the mixture with a fork until the dough comes together-you want to work the dough as little as possible. Add more water, 1 tablespoon at a time, if the dough is too dry. Turn the dough out onto a floured surface and divide into 2 balls. Form each into a disk, wrap in plastic and refrigerate at least 30 minutes. Meanwhile, trim the rhubarb and cut into 1/2-inch pieces. Hull the strawberries and slice. Combine the rhubarb, strawberries, granulated sugar, flour, cinnamon, salt, vanilla and lemon juice in a large bowl; toss.
  • Prepare the bottom crust. Preheat the oven to 425 degrees F. Roll out 1 disk of dough on a floured surface into a 12-inch round. Roll the dough onto the rolling pin, then carefully unroll it over a 9-inch pie plate. Gently press the dough into the plate with your fingers. Add the strawberry-rhubarb filling. Do not trim the overhanging dough.
  • Make the lattice. Roll out the remaining disk of dough into a 12-inch round. With an old-fashioned crimper, sharp knife or pizza cutter, cut into 1-inch-wide strips. Lay about half of the strips on the pie in one direction, about 1/2 inch apart. Fold back every other strip halfway. Lay a strip perpendicular to the first ones. Unfold the strips back over the new strip, then fold alternate strips back halfway. Add another perpendicular strip; unfold the strips back over it. Repeat to form a lattice. Pinch the overhanging top and bottom crusts together, trimming as needed, then fold the dough under itself and crimp with your fingers.
  • Bake the pie. Using your fingers, pat the lattice top with milk and sprinkle with coarse sugar. Put the pie on a baking sheet and place in the preheated oven. Bake 20 minutes, then reduce the oven temperature to 375 degrees F and bake until the crust is golden brown and the filling is bubbling, 50 more minutes. Let cool completely before slicing.

STRAWBERRY RHUBARB PIE

Strawberry Rhubarb Pie image

Bake a Strawberry Rhubarb Pie like grandma used to make! The best dessert with a scoop of ice cream to go with the fruity filling & buttery crust.

Provided by Nora from Savory Nothings

Categories     Dessert

Time 2h30m

Number Of Ingredients 18

2 1/2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup cold unsalted butter (diced)
1 teaspoon apple cider vinegar
1/2 cup ice-cold water
3 cups sliced rhubarb (1-inch pieces)
3 cups strawberries (quartered)
1 cup sugar
1/3 cup light brown sugar
1/4 cup minute tapioca
2 tablespoons cornstarch
1/2 tablespoon vanilla extract
1 teaspoon lemon juice
1/2 teaspoon ground cinnamon
Pinch of salt
2 tablespoons butter (diced)
1 egg white (beaten)
granulated sugar

Steps:

  • Blend dry ingredients and butter:Mix flour and sea salt in a large mixing bowl. Add the butter and blend using pastry blenders or your fingers until you have a bowl filled with crumbs.
  • Make pastry:Mix vinegar and water in a measuring jug. Slowly pour over dry ingredients and mix just until it comes together into a dough. Push into a ball. Do not knead or overwork! Divide into 2 disks, wrap in foil and chill for 1 hour.
  • Roll out bottom crust: Place 1 disk of the pastry between 2 sheets of baking parchment. Roll into a circle slightly larger than a 9 inch pie dish. Fit into the lightly greased pie dish and place back into the fridge to chill.
  • Prep:Preheat oven to 420°F.
  • Mix filling ingredients:Place all ingredients for the filling in a large bowl and mix well. Pour into prepared bottom crust. Evenly dot with the diced butter.
  • Add top crust:Remove the second disk of dough from the fridge and roll into a 10 inch circle between two sheets of baking parchment. You can either place it on top as a whole (make sure to cut some air vents into the top if doing this!) OR cut it into strips to make a lattice. The lattice is a bit of a pain with this crust... But it looks pretty and helps the filling to thicken and set as more liquid can evaporate.
  • Crimp edge:Pinch together the edges of the top and bottom crust, then crimp. Brush with egg white and sprinkle with granulated sugar.
  • Hot bake:Bake the pie on the bottom rack for 10 minutes at 420°F. Place a pie shield or aluminum foil over the edge once these 15 minutes are up.
  • Finish Baking:Lower the heat to 375°F and finish baking the pie for 35-45 minutes, or until the filling is bubbly and the crust is baked. Cool on a wire rack before slicing.
  • To get neat slices, cool overnight. If you want to eat the pie warm after a shorter cooling period, the filling will be a little more lose like in a crisp. But it's delicious either way!
