Time 1h30m

Yield 144

Number Of Ingredients 13

3 cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
1 cup butter, at room temperature
1 cup brown sugar, packed
3 eggs
½ cup milk
2 tablespoons vanilla-flavored cream sherry
7 cups chopped mixed nuts
2 cups chopped raisins
2 cups pitted chopped dates
1 pound candied pineapple, coarsely chopped
1 pound red and green candied cherries, chopped

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease several baking sheets. Sift together the flour, cinnamon, and baking soda in a bowl; set aside.
  • Beat together the butter and brown sugar in a large mixing bowl until fluffy, about 5 minutes. Beat in the eggs, one at a time. Gradually beat the flour mixture into the butter mixture, alternating each addition with about 2 tablespoons of milk until all the milk is incorporated and the dough is soft. Beat in the sherry, and mix in the nuts, raisins, dates, pineapple, and cherries until thoroughly mixed. Drop the dough by rounded teaspoons onto the prepared baking sheets.
  • Bake in the preheated oven until the cookies are set and the bottoms are very lightly browned, 20 to 30 minutes. Cool on wire racks.

FRUIT CAKE COOKIES

Fruit Cake Cookies image

Somewhere along the line, fruit cake got a bad reputation-unfounded or not. And whatever you may think of this stalwart, we won't argue with you. We'll only invite you to consider this recipe. It takes what fruit cake does best and repackages it in the form of a soft and chewy cookie. What does fruit cake do best, you might ask? Let us tell you. Fruit cake combines sweet dried fruits (golden raisins and chopped dates), warm spices (nutmeg, cinnamon, cloves), citrus (orange zest), crunchy toasted almonds and brandy. In other words, all the flavors of the season are wrapped up in fruit cake. It's a daring move and that's exactly why it works. The bold flavors and colors-did we mention the sugar-sweet maraschino cherries and candied green cherries?-are as exuberant as Christmas itself. Forget what you thought you knew about fruit cake and let these fun, nostalgic cookies be your new-and much more delicious-definition.

KOLACHKIES BY LADY ROSE

Kolachkies by Lady Rose image

The first time I made these flakey and delicate cookies, I thought the recipe had an error in it, since there was no sugar in the recipe. I had never made a cookie without sugar, and where I had lived in Arkansas we had never heard of a Kolachkie, but a coworker shared this recipe with me more than 40 years ago now, and it has...

Time 30m

Number Of Ingredients 4

2 stick butter, room temperature softened
8 oz cream cheese, softened room temperature
2 c all purpose flour
1 can(s) solo filling, fruit or nut

Steps:

  • 1. Cream butter with cream cheese until light and creamy and well mixed.Gradually add flour and beat until it is real creamy. I beat at least 15 to 20 minutes until the mixture looks like the texture of ice cream.
  • 2. Remove from bowl, and chill till dough is really cold. I usually refrigerate it over night and make the next day. I have also placed it in the freezer for a quick cool method. But prefer to let it sit over night in fridge.
  • 3. Break off a medium size portion, and roll on floured wax paper. Cut out with a shot glass. Make a thumb print in center and fill with about 1/2 teaspoon of solo filling. Place on buttered cookie sheet or use cooking spray Bake in Preheated 400 degrees oven for 10 to 12 minutes. Please note cookies do not get real brown. Dust immediately with powdered sugar while still warm and again before serving. Remove to cooling rack to cool completely.
  • 4. My personal prefrence to make these cookies is to pinch off a small amount of cookie dough, shape into a small ball, roll in floured hands, then press flat between both palms, and then place on greased cookie sheet. Make a thumb print in center of cookie and fill with fruit filling. Just seems easier for me, but which ever method is easier for you.

Time 45m

Number Of Ingredients 15

1 stick butter, room temperature
1 c brown sugar, firmly packed
4 large eggs, room temperature
3 c all purpose flour, divided
1 Tbsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 Tbsp orange juice
2 Tbsp orange marmalade
2 tsp orange extract
1/2 c grand marnier,(orange liqueur)
1 1/2 c candied red cherries,(12 oz) halved
1 1/2 c candied green cherries,(12 oz) halved
3 c chopped nuts, (your choice)

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F. Grease or spray a cookie sheet with non stick cooking spray and set aside till needed.
  • 2. In a mixing bowl, cream together the butter with the brown sugar till well mixed. Add the eggs one at a time, mixing well after each addition. Then add orange juice and orange marmalade & beat again to blend.
  • 3. In a small bowl add 1 1/2 cups flour, then add ,cinnamon, nutmeg, allspice, baking powder, mix together with spoon & stir about 1/3 of flour mixture into creamed mixture, and alternating with the orange liqueur, & orange extract, until all has been incorporated into batter.
  • 4. Next combine cherries with remaining 1 1/2 cups of flour, and toss to coat evenly in flour, then add to cookie dough. I switch to a wooden spoon at this point. Blend cherries and then add the chopped nuts, stir well until they are thourgly blended.
  • 5. Drop by tablespoon full onto prepared cookie sheet about 2 inches apart. Bake in preheated 350 degree F. oven for 12 minutes. Remove from oven but allow cookies to remain on cookie sheet for an additional 5 minutes, then remove to a wire baking rack to cool completely. You are now ready to enjoy.
