LAMB BURGERS WITH FETA TZATZIKI SPREAD



Lamb Burgers with Feta Tzatziki Spread image

Extra-virgin olive oil
2 red onions, 1 cut into 1/4-inch dice and 1 sliced, for garnish
Kosher salt
Pinch crushed red pepper
2 cloves garlic, finely smashed
1 1/2 pounds ground lamb
2 sprigs fresh oregano, finely chopped
1/2 bunch fresh dill, finely chopped
1/2 bunch fresh mint, finely chopped
Zest of 1/2 lemon
4 whole wheat pitas or 4 seeded hamburger buns
Feta Tzatziki Spread, recipe follows
1 beefsteak tomato, sliced, for garnish
2 cups baby spinach, for garnish
2 cups plain Greek yogurt
1/2 cup crumbled feta
1 tablespoon white wine vinegar
2 cloves garlic, smashed and finely chopped
2 sprigs fresh mint, leaves cut into chiffonade
1 small bunch fresh dill, finely chopped
1/2 English cucumber, coarsely grated
Kosher salt

Steps:

  • Coat a large saute pan with olive oil, toss in the diced onions and season with salt and crushed red pepper. Bring the pan to medium-high heat and cook the onions for 3 to 4 minutes. Add the garlic and cook for 2 to 4 more minutes. Turn the heat off and let cool.
  • In a large bowl, combine the lamb, the cooled onion mixture, the oregano, dill, mint, lemon zest and 1/2 to 3/4 cup water. Sprinkle with salt and combine well. Make a little "tester patty." Cook it and taste for seasoning.
  • Preheat the grill.
  • Form the lamb mixture into 4 equal patties and sprinkle with salt. Grill the burgers to your desired doneness, 4 to 5 minutes per side for medium-rare. Remove the burgers from the grill and let rest for 3 to 4 minutes.
  • Cut the pitas in half. Schmear each half generously with the Feta Tzatziki Spread. Top one half with a burger, then tomatoes, sliced onions and spinach. Place the other pita half on top.
  • Combine the yogurt, feta, vinegar, garlic, mint, dill and cucumbers. Season with salt. Let sit for at least 1 hour at room temperature before serving.

Steps:

  • Mix first 4 ingredients and 1 1/2 tablespoons oil in medium bowl; mix in lamb. Shape into four 3/4-inch-thick patties. Cook patties in large nonstick skillet over medium-high heat 4 minutes per side for medium.
  • Meanwhile, preheat broiler. Broil buns until golden, about 2 minutes. Top each bun bottom with burger. Toss spinach, feta, onion, vinegar, and 11/2 tablespoons oil in bowl. Place salad atop burgers. Cover with bun tops, pressing firmly to compact.

1 4-inch sprig rosemary, chopped
4 sprigs thyme, chopped
1 tablespoon garlic powder

Steps:

  • Preheat grill for medium heat and lightly oil the grate.

2 garlic cloves , chopped
4 tsp finely chopped rosemary needles
1kg lean lamb mince (10% fat)
ciabatta rolls or French bread
mayonnaise
3 red onions ,sliced and tossed with 1 tbsp each balsamic vinegar and olive oil
sliced tomatoes
good handful rocket

Steps:

  • Crush the garlic, rosemary, 1 tsp salt and ½ -1 tsp pepper with a pestle and mortar to make a paste. Add to the lamb and mix in well with your hands. Don't overwork the meat or you will toughen it.
  • Divide the mixture into 8, then shape into round burgers. If eating now, heat a barbecue or grill and cook for about 8-10 mins, turning frequently, until cooked to your liking. Split the rolls or bread, toast lightly on one side, spread with mayo, then add the burgers and the balsamic onions, tomatoes and rocket.

I love making these flavorful lamb burgers stuffed with creamy, delicious goat cheese. I use basil and oregano in mine, but feel free to use your favorite herbs and spices, this recipe is very forgiving. Using fresh rosemary in the goat cheese filling will give the burgers a real Greek flavor. Serve the burgers on hamburger buns or pita bread with tzatziki sauce, or on their own with a Greek salad.

1/2 lb fresh spinach, stems discarded and leaves rinsed
3 tablespoons extra virgin olive oil, plus more for brushing
1 small red onion, peeled and finely diced
1 1/2 lbs ground lamb
2 tablespoons dry red wine, preferably Pinot Noir
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
salt & freshly ground black pepper, to taste
1 large garlic clove, peeled and minced
4 slices bread (rustic peasant-type)
2 -3 tablespoons olive oil, for brushing on bread and lamb patties
4 ounces fresh goat cheese, cut into 4 pieces

Steps:

  • Heat a medium skillet over moderately high heat. Add a large handful of spinach and cook, stirring, until the leaves are wilted. Transfer the wilted spinach to a colander and repeat with the remaining leaves. Gently squeeze the spinach dry, coarsely chop and reserve.
  • In the same skillet, heat 1 tablespoon of olive oil. Add the red onion and cook over moderate heat until softened, about 7 minutes. Transfer the onion to a large bowl and let cool.
  • Add the ground lamb to the bowl with the onions and break it up slightly. Add the red wine, cumin, cinnamon, 1/2 teaspoon of salt and 1/2 teaspoon of black pepper and blend well. Gently form the mixture into four 4-inch patties.
  • In the same skillet, heat the remaining 2 tablespoons of olive oil. Add the minced garlic and cook over moderate heat until fragrant, about 40 seconds. Add the wilted spinach and cook, stirring, until hot. Season the spinach with salt and pepper, cover and keep warm.

Handful walnut halves, about 3 to 4 tablespoons
3 tablespoons extra-virgin olive oil
1/2 small red onion, finely chopped
1/3 cup whole milk
2/3 cup feta crumbles
1 tablespoon freshly chopped marjoram or oregano, or 1 teaspoon dried
Few sprigs mint, leaves chopped
Salt and freshly ground black pepper
1 1/2 pounds ground lamb
1 teaspoon paprika or smoked paprika
A couple pinches ground cinnamon
1 clove garlic, crushed
2 bunches farm spinach leaves, stemmed, washed and dried
Nutmeg, freshly grated
Ciabatta rolls or sliced crusty bread, toasted

Steps:

  • Toast the walnuts in a dry skillet over medium heat. Remove to a plate and set aside.
  • Add 1/2 tablespoon extra-virgin olive oil, half a turn of the pan, and the onions. Cook for 5 minutes to soften, then put them in mixing bowl to cool.
  • While onions cool, put the milk, feta, half of the marjoram or oregano, mint, salt and pepper, to taste, and the nuts in a food processor and process to a thick, smooth sauce.
  • Add lamb to the bowl with the onions and season with salt and pepper, to taste. Stir in the remaining marjoram or oregano, paprika and cinnamon. Form the mixture into 4 patties, thinner at the center and thicker at the edges. Heat 1/2 tablespoon extra-virgin olive oil, in nonstick skillet over medium-high heat and cook the patties 3 to 4 minutes on each side for pink centers.
  • Meanwhile, heat 2 tablespoons extra-virgin olive oil in another skillet over medium-low heat. Add the garlic clove and let it infuse the oil for 1 to 2 minutes. Add the spinach and let it wilt, then remove the pan from the heat, and season with salt, pepper and nutmeg, to taste.
  • Add the lamb patties to the bun bottoms or charred bread. Shake off excess liquid as you remove the spinach and pile it on top of the burgers. Slather the bun tops with the feta sauce. Cover the burgers with the bun tops and serve.

  • Place the dough in a lightly oiled mixing bowl, cover with plastic wrap and let rise in a warm place until the dough has doubled in size, about 1 1/2 hours.
  • Preheat the oven to 500 degrees F.
  • Divide the dough into 8 equal pieces and roll into 7-inch rounds (1/4-inch thick). Divide the dough between 2 sheet trays, cover them loosely with a clean tea towel or plastic wrap and let rest for 20 minutes.
  • Bake the pitas for 3 to 4 minutes, then turn the pitas over and bake for 2 more minutes. Let cool and use as desired.
  • Place the vinegar, sugar, salt, tea bags, bay leaf and herb stems, if using, in a small saucepan along with 1 cup water. Heat until the sugar and salt has dissolved. Remove from the heat and let cool.
  • Place the feta in a small container. Add the vinegar mixture and be sure that the feta is submerged in the liquid. Let sit for a couple of hours outside the refrigerator if using right away, or in the refrigerator if using in the future.
  • Strain the feta from the pickling liquid and discard the tea bags, bay leaf and stems. Place the feta in a food processor and add the yogurt. Pulse until combined.

10 ounces frozen chopped spinach, thawed, drained and squeezed dry
1 tablespoon lemon juice
1/4 teaspoon black pepper
1/4 teaspoon salt
1 teaspoon dried basil
1 egg, lightly beaten
1 lb ground lamb
1/2 cup feta cheese, crumbles (I used feta with olives & sundried tomatoes)
1/4 cup plain yogurt or 1/4 cup sour cream
1 -2 garlic clove, minced
1/4 teaspoon dried dill
4 hamburger buns
4 slices tomatoes (optional)

Steps:

  • Mix together spinach, lemon juice, pepper, salt, basil and egg.
  • Add lamb and feta and mix together (your hands work best for this).
  • Divide mixture into four portions and shape into patties.
  • Grill or broil burgers for about 5 minutes on each side, or to desired doneness.
  • Meanwhile, combine yogurt or sour cream, garlic and dill.
  • When burgers are done, spread yogurt mixture on buns, add burgers and tomato slices (if using) and enjoy!

1 (200 g) box frozen chopped spinach, thawed and drained
1 small onion, finely chopped
2 cloves garlic, crushed
1/2 cup breadcrumbs
1 egg
100 g feta cheese, crumbled
3 tablespoons grated parmesan cheese
1 tablespoon lemon juice
1 tablespoon chopped of fresh mint
3 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • Mix the ingredients together in a large bowl.
  • Form into 8 patties about 8cm (3inches) in diameter.
  • Pan fry, grill or broil about 8 minutes each side, or until cooked through and done to your liking.

1 pound ground lamb
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh oregano
1 tablespoon garlic, chopped
1 teaspoon sherry
1 teaspoon white wine vinegar
1 teaspoon molasses
1 teaspoon ground cumin
¼ teaspoon ground allspice
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon ground black pepper
4 pita bread rounds
4 ounces feta cheese, crumbled

Steps:

  • Preheat grill for medium heat.
  • Place the lamb in a large bowl, and mix with the mint, cilantro, oregano, garlic, sherry, vinegar, and molasses. Season with cumin, allspice, red pepper flakes, salt, and black pepper, and mix well. Shape into 4 patties.
  • Brush grill grate with oil. Grill burgers 5 minutes on each side, or until well done. Heat the pita pocket briefly on the grill. Serve burgers wrapped in pitas with feta cheese.

1 lb ground lamb
3 tablespoons mint, chopped
2 tablespoons rosemary, chopped
1 egg yolk
1 garlic clove, finely chopped
7 ounces Greek yogurt
1 pinch salt and pepper
1 tablespoon olive oil
4 ounces arugula
4 hamburger buns, halved and toasted

Steps:

  • Combine the lamb, 2 tablespoons of the mint, rosemary, the egg yolk together in a bowl, then season with salt and pepper. Mix well and form into patties.
  • Brush each burger with a little olive oil and cook in a heated oiled griddle pan on each side for 3-4 minutes on each side until cooked through but slightly pink in the middle.
  • Meanwhile make a dressing for the burgers by combining the yogurt, garlic and olive oil. Add the rest of the chopped mint and mix well, then season to taste with salt and pepper.
  • Place the lamb patties on the bun half and drizzle over the dressing. Scatter a handful of arugula and place the other half on top.
