SOLDIERS KISSES
These cookies are so good and so easy to make! They are a favorite of ours. The recipe came from the WWII era. They were made by my great-grandmother.

Steps:
- Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.
- Beat the egg whites with an electric mixer until light and frothy; beat in sugar, about 1 tablespoon at a time, until incorporated. Continue beating until the mixture is thick and shiny, 1 to 2 more minutes. Lightly fold in the walnuts. Drop by heaping teaspoonful onto the prepared baking sheet.
- Bake until dry to the touch, about 40 minutes. Cool thoroughly.

Steps:
- Preheat oven to 325 degrees Fahrenheit.
- Cut butter and sugar into flour as you would for a pie crust.
- Add egg yolks and mix.
- Form into walnut sized balls and chill overnight.
- Flatten each one with the bottom of a glass on a lightly floured surface.
- Make an indentation in the center of each cookie with your thumb and fill with a small amount of jam.
- Place on an ungreased pan and bake for 15 minutes.
- Sprinkle with powdered sugar.

"SOLDIERS" BISCUITS/ANZAC - WWI RECIPE - (4.2/5)

Steps:
- Mix dry ingredients together in a large bowl. Gently melt the butter and golden syrup in a saucepan and heat, stir until combined. Put the baking soda in a cup or small bowl then pour in the boiling water. Pour this foaming mixture into the warm butter/golden syrup mixture and stir well - it will foam up. Now gradually add the wet mixture to the dry ingredients, mixing everything together well. Place walnut size pieces of the dough on a buttered or baking paper lined oven tray and then press down with the back of a fork to flatten. Bake at 175 degrees C for approx 17 mins.
SOLDIER'S BISCUITS (ANZAC BISCUITS)
From the handwritten recipe book of Margaret E. Walker's grandmother. Brian Wilson states:"Soldiers Biscuit was one of the original names for these biscuits and was only changed to ANZAC sometime after the Gallipol landing. Therefore, you can date the Soldier's Biscuit recipe to somewhere most likely between 1914 and 1920 or so. The anzac recipe however, would be dated after 1927 as they didn't begin to include coconut until after this year."

Steps:
- Preheat oven to 180° C (350° F).
- Combine oats, flour and sugar in a mixing bowl.
- Melt butter and Golden Syrup (or honey) together over low heat.
- Mix baking soda with water and add to the butter mixture.
- Mix liquids with dry ingredients and mix well. Spoon dollops of mixture, about the size of a walnut shell, onto a greased tin, leaving as much space again between dollops to allow for spreading.
- Bake in a preheated, 180° C (350° F) oven for 15-20 minutes. Cool on a wire rack and seal in airtight containers.

- Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Beat egg whites until foamy. Sprinkle with cream of tartar and salt; beat until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form, about 5-8 minutes. If desired, divide batter in half and fold in red and green food coloring. , Drop by rounded tablespoonfuls 1-1/2-in. apart onto lightly greased baking sheets. Press a chocolate kiss into the center of each cookie and cover it with meringue, using a knife. , Bake at 275° for 30-35 minutes or until firm to the touch. Immediately remove to a wire rack to cool. If desired, sprinkle with cocoa. Store in an airtight container.
