Classic homemade Lamb Pasties filled with a minced meat and vegetable filling, and encased in golden, flaky puff pastry, make a simple savoury snack or light dinner that will be on the table in just 1 hour.

Steps:
- Preheat oven to 200 degrees celsius (fan-forced).
- Heat the olive oil in a large frying pan or pot over medium heat. Add the diced onion, potatoes, carrots, lamb mince, peas and corn and cook for 5 minutes or until the vegetables have just started to soften.
- Add the Worcestershire sauce, tomato sauce, vegetable stock and cornflour powder (mixed with water) and cook for a further 5 minutes or until the sauce has started to thicken.
- Use a small round plate or bowl to cut 2 large circles out of each pastry sheet. This will give you 16 small pasties. Alternatively you can use a large round plate to cut 1 circle from each pastry sheet giving you 8 large pasties.
- Place a scoop of the mixture on one half of each circle. Brush the edge with egg and fold over to seal. Use a fork to create a crinkled sealed edge.
- Brush the pastry with egg and sprinkle with sesame seeds. Arrange on a greased baking tray.
- Bake for 30 minutes or until golden brown and cooked through.

LAMB PATTIES

- In a large pot, combine the ground lamb, onion, chilies, soy sauce and Worcestershire sauce. Season with ginger and garlic pastes, white pepper, cinnamon, cardamom and cloves. Cook, stirring occasionally, over medium heat until the meat is evenly browned and the onions are tender, about 15 minutes. Mix in cilantro, cover and set aside.
- Preheat the oven to 375 degrees F (190 degrees C). Lay sheets of puff pastry out on a lightly floured surface. Cut each one into 9 squares and roll out to 1/4 inch thickness. Spoon about 1 1/2 tablespoons of the meat mixture into the center of each square. Brush the edge with water, fold corner over to form a triangle, and press to seal. Do not overstuff the triangles, or they will burst in the oven. Place the patties onto a foil lined baking sheet leaving at least an inch between each one. Brush the tops lightly with beaten egg.
- Bake for 12 to 15 minutes in the preheated oven, or until golden brown all over. Serve hot for best flavor.

LAMB SAUSAGE IN PUFF PASTRY

- Preheat the oven to 400 degrees F.
- Bake the sausage on a baking sheet for 20 minutes. Turn the sausage and bake it 5 to 10 minutes more, until it's fully cooked. Cool to room temperature.
- Unfold the puff pastry on a lightly floured board. Cut each piece in half lengthwise and brush the top sides with mustard. Divide the sausage into 4 equal pieces. Starting at the long end of the pastry, place 1 piece of the sausage on top of the mustard and roll it up tightly, overlapping the end by 1/2 inch and sealing the pastry by brushing the edge with water. Cut off the excess pastry. Roll the other 3 pieces of sausage in puff pastry. Place the 4 rolls, seam side down, on a baking sheet lined with parchment paper. Brush with the egg wash. Lightly score each roll diagonally to make 7 equal pieces. Bake for 20 to 25 minutes, until browned. Slice and serve immediately with mustard.

- Preheat oven to 400°. In a large bowl, combine onion, cumin and paprika. Crumble lamb over mixture and mix well. Shape into eighteen 1/2-in.-thick mini patties. In a large skillet, cook patties in oil in batches over medium heat until a thermometer reads 160° and juices run clear, 3-4 minutes on each side., On a lightly floured surface, unfold puff pastry. Roll each sheet into a 12x12-in. square. Cut each into nine squares. Place a patty in the center of each square; top with cheese. Lightly brush egg over edges of pastry. Bring opposite corners of pastry over patty; pinch seams to seal tightly., Place seam side up on a 15x10x1-in. baking pan; brush with egg. Bake until pastry is golden brown, 18-22 minutes., Place sauce ingredients in a food processor; cover and process until blended. Serve with bundles.

- For stuffing:.
- Combine all ingredients and blend well.
- Cover and refrigerate.
- For pastry:.
- Disolve sugar and yeast in warm water and let stand until foamy and proofed.
- Combine flour and salt in large bowl.
- Using your hands, rub butter into flour until it is absorbed.
- Make well in the center of flour and pour in yeast and milk.
- Still using hands,push flour from sides of bowl into center and mix to form dough.
- Knead several minutes until smooth.
- Place in lightly oiled bowl and turn to coat.
- Cover with plastic wrap and let stand in warm area until doubled, about 1 hour.
- For lamb:.
- Preheat oven to 450 degrees.
- Set butterflied lamb skin side down on working surface.
- Pound to flatten slightly.
- Mix butter,garlic,salt and pepper to a paste; rub half thoroughly into lamb.
- Spread with stuffing and reshape leg.
- Sew closed with string;tie crosswise at 1 inch intervals and twice around length to hold stuffing.
- Rub outside with remaining butter mixture, then rub with rosemary.
- Set on rack in roasting pan and roast 20 minutes.
- Reduce oven temperature to 350 and roast an additional 40 minutes.
- Let cool, then remove string and brush off excess rosemary.
- * Lamb can be prepared ahead to this point. Wrap in plastic wrap and refrigerate up to 24 hours.Don't start the pastry until you take the lamb out of the refrigerator.
- Lightly oil shallow roasting pan.
- Knead dough once again.
- Roll out enough dough on lightly floured surface to make rectangle 1/4 inch thick, large enough to completely enclose lamb with a 1 inch overlap.
- Set lamb on one end of rectangle.
- Beat yolks with milk and brush some on edges of dough;fold dough over lamb.
- Press seams together; trim and reserve excess dough.
- Set seam side down in roasting pan and brush with some of yolk.
- Preheat oven to 450 degrees. Roll excess dough into long thin ropes. Braid in threes to go around top perimeter of lamb.
- Remaining dough can also be made into smaller and thinner ropes and/or worked into more intricate designs such as leaves,tiny birds, flowers and coiled snakes inside the encircling braid, all symbols of Easter in Greece.
- Brush decorations with yolk mixture.
- Bake until pastry sets, about 15 minutes.
- Reduce oven temperature to 300 degrees and bake an additional 20 to 30 minutes(use a meat thermometer to check doneness).
- Transfer to heated platter and garnish with fresh mint sprigs, if desired.
- Let stand several minutes before slicing.

- Heat 1 tbsp oil in a large frying pan, fry the onions with the ginger, garlic and spices for 5 mins until soft, then tip into a large bowl to cool.
- Mix together the lamb, peas and egg with the onion and season with a little salt. Shape the mixture into 12 patties. You can freeze for up to one month at this stage, then defrost in the fridge. Alternatively, refrigerate up to 1 day in advance. Heat the remaining oil in the pan and fry the patties, 4 mins each side, or until cooked through.

LAMB & ROSEMARY ENVELOPES
Cook lamb steaks with herbs and wrap into a puff pastry parcel - you'll need just five ingredients

- Season on the lamb all over and sprinkle with chopped rosemary. Heat 1 tbsp oil in a pan and fry the lamb for about 2 minutes on each side, until browned. Transfer to a plate and leave to cool.
- Unroll the pastry and cut into four rectangles. Roll out each piece large enough to enclose the lamb.
- Place a lamb steak on each piece of pastry, then pop 1 rounded tbsp cranberry sauce on each.
- Brush the pastry edges with a little beaten egg, then fold over to enclose the lamb, pinching the edges to seal. (You can freeze at this point, or prepare and chill up to 4 hours ahead.) Place on a baking sheet and chill for 20 minutes to set the pastry (if there's time). Preheat the oven to 200C/gas 6/fan 180C.
- Brush the parcels with beaten egg, stick a rosemary sprig into the top of each and bake for 20-25 minutes until puffed and golden. Serve with your choice of green vegetables.

CORNISH LAMB PASTIES

- To make the filling, in a small frying pan over medium-low heat, melt the butter. Whisk in the flour and cook until golden brown, about 3 minutes. Remove from heat. Whisk in the broth. Return to medium heat and bring to a boil, whisking occasionally. Boil, whisking until slightly thickened, about 2 minutes. Remove from the heat. Stir in the Worcestershire sauce. In a large bowl, combine the broth mixture, lamb and vegetables. Add any leftover juices from cooking lamb. Season with salt and pepper. Set aside. Meanwhile preheat electric pie maker. Cut the pie dough into 4 larger rounds and the puff pastry into 4 smaller rounds. Working quickly, place each large pie dough round into the pie maker. Using the accompanying pastry press, mold the dough into the wells to form the bottom crusts. Divide the filling among the crusts and spread evenly. Place a small puff pastry round over each filled crust. Bake about 10 minutes.
