LAMB STEW WITH LEMON AND THYME

- Cut the lamb into one-and-a-half-inch cubes and trim off the fat. Pat the cubes dry with paper towels and sprinkle with flour.
- Heat the oil in a heavy casserole and brown the lamb cubes on all sides.
- Remove and add the shallots, leeks, garlic and thyme. Brown lightly and return the lamb cubes to the casserole.
- Add the stock, white wine, lemon juice, salt, pepper, herb bouquet and lemon peel. Scrape up the cooking juices, bring them to a boil and turn the heat down to medium low. Place the cover on the pan slightly askew.
- Cook for 45 minutes to an hour, until the lamb is tender. Correct seasoning and serve.

STIFADO - TRADITIONAL BEEF STEW WITH SHALLOTS

- Add a generous splash of olive oil in a cooking pot and heat over high heat.
- Brown the beef chunks on all sides. Do this by adding the meat in the pot in batches. So the temperature of the oil won't drop, and the meat sill sear properly. After you're done with the first batch, remove the meat from the pot and then add the next batch. Once all the meat is seared and browned all over, add it all back in the pot.
- Pour in 2-3 cups of semi-sweet red wine, and 2-3 cups of water in the pot. The amount of both liquids should be just enough to cover the meat. So whether you're using a wider or more narrow cooking pot you should adjust the amount to 2 or 3 cups (each) accordingly.
- Add the allspice, cloves, cinnamon stick, and bay leaves. Season with kosher salt and ground pepper.
- Reduce heat to low and cover the pot with its lid. Slow cook for approximately 2 hours.
- Meanwhile, cut off the tops and bottoms of the shallots and remove their skins. Place in a bowl and cover with cold water. Let them soak for about 30 minutes and then drain in a strainer. This is done to remove some of their sharp acidity.
- After the meat has slowly cooked for 2 hours, prick with a knife to make sure it's tender enough. Otherwise, cook a bit more.
- Add a splash of olive oil in a skillet or frying pan, and heat over medium-high heat. Toss in the shallots and cook until deep golden all over. Stir in 2 loaded tablespoons of tomato paste, and cook for 2 minutes more, while stirring constantly using a wooden spoon. Pour a good splash of water in the pan to help scrape off the paste from the pan and then add everything in the pot with the meat.
- Shake the pot for the shallots to spread evenly, and once you make sure there is enough liquid in the pot to almost cover everything, slow cook (covered) for another 45-50 minutes.
- Serve with freshly ground pepper on top!

LAMB STEW WITH SHALLOTS AND CHESTNUTS
This is a dish you can prepare well in advance. In Turkey, they may add a little grape molasses called pekmez, which you can buy in Turkish stores, but, for me, the dish is sweet enough as it is with the onions, chestnuts, and sugar. Serve it hot with plain rice or rice with chickpeas (see Variation page 193).

- To peel the shallots or baby onions more easily, blanch them in boiling water for 5 minutes. This loosens their skins. When they are cool enough to handle, peel them and trim the roots.
- Cut the meat into 6 to 8 pieces. Remove any skin, and trim some but not all of the fat.
- In a large saucepan, fry the shallots or onions in the oil over a medium heat, turning them, until they are brown all over. Then lift them out and put in the meat. Turn the pieces to brown them on all sides.
- Add water to barely cover the meat. Bring it to the boil, remove any scum, then add the cinnamon, allspice, sugar, salt, and pepper. Simmer, covered, for about 1 1/2 hours, until the meat is very tender, turning it over and adding a little water so that it does not dry out. Put back the onions and cook for 15 minutes more. Finally, add the chestnuts and cook for 10 minutes more.

- Crush 3 garlic cloves, chop 1 onion and grab a couple of bay leaves. Prepare a solution of water and vinegar and place in the pieces of the wild rabbit along with the garlic and onion slices. Cover and keep in the fridge overnight or for at least 4-5 hrs.

- Heat the oil in a large saucepan, season the lamb and add it to the pan. Cook for 3-4 mins until brown all over. Remove from the pan and set aside.
- In the same pan reduce the heat and soften the shallot or onion and ginger for 2-3 mins over a low heat.

- Prepare lamb: Preheat oven to 325 degrees F. Trim fat from meat. Using a paring knife, cut 1/2-inch-wide pockets about 1 inch deep in the meat at 1-inch intervals.
