SPLIT PEA SOUP WITH CRISPY KIELBASA

Split Pea Soup with Crispy Kielbasa image

One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

Provided by Ina Garten

Time 1h45m

Yield 6 servings

Number Of Ingredients 13

Good olive oil
2 cups chopped leeks, white and light green parts, spun-dried (2 leeks)
1 1/2 cups chopped yellow onion (1 large)
2 cups (1/2-inch) diced, scrubbed carrots (3 large)
1 tablespoon minced garlic (3 cloves)
1 pound dry green split peas
8 cups good chicken stock, preferably homemade
1 smoked ham hock
8 fresh thyme sprigs, tied with kitchen twine
2 large fresh bay leaves
Kosher salt and freshly ground black pepper
12 ounces smoked kielbasa, halved lengthwise and sliced diagonally in 1/4-inch-thick pieces
Minced fresh parsley, for serving

Steps:

  • Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
  • Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
  • To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
  • Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

Veggie-Packed One-Pot Split Pea Soup Recipe by Tasty image

Here's what you need: sourdough loaf, olive oil, onions, carrots, celery, garlic, split peas, dried thyme, salt, pepper, turmeric, red pepper flakes, potatoes, vegetable stock, bay leaves

Provided by Merle O'Neal

Categories     Lunch

Time 1h10m

Yield 12 servings

Number Of Ingredients 15

1 sourdough loaf
2 tablespoons olive oil
2 onions, chopped
2 carrots, chopped
3 stalks celery, chopped
3 cloves garlic, minced
2 ½ cups split peas
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
1 teaspoon turmeric
½ teaspoon red pepper flakes
3 potatoes, cubed

  • In a large soup pot, combine the olive oil, onions, carrots, and celery, and cook 5 minutes over medium heat until onions are translucent.
  • Add the garlic and cook 2 minutes.
  • Add the split peas, thyme, salt, pepper, tumeric, and red pepper flakes, and stir until well combined.
  • Add the vegetable stock and bay leaves, cover with a lid and cook for 40 minutes.
  • Add potatoes, then cover and cook 20 more minutes.
  • Remove bay leaves and serve soup in your bread bowl.
  • Enjoy!

SPLIT PEA SOUP A LA JULIA CHILD

Split Pea Soup a La Julia Child image

This is the only split pea soup I've ever made more than once. The basic recipe comes from Julia's "The Way to Cook", and has a very clean, fresh flavor. It requires some work, but I like that I can freeze the ham stock and then make the soup at a later date without the murky taste of a lot of one pot pea soups.

Provided by TCookie

Time 5h40m

Yield 6 serving(s)

Number Of Ingredients 15

2 well-washed and scrubbed split ham hocks
3 quarts water
1 cup chopped carrot (coarse is fine)
1 cup chopped onion
1 stalk celery, chopped
3 bay leaves
1 teaspoon thyme
5 whole cloves or 5 allspice berries
3 tablespoons butter
2/3 cup diced celery
2/3 cup diced onion
1/2 cup diced carrot
3 tablespoons flour
2 quarts ham stock, heated
1 1/2 cups split peas or 1 1/2 cups yellow split peas

Steps:

  • For the stock, put the ham hocks in a kettle with water to cover by 2 inches.
  • Make an herb bouquet with washed cheesecloth, using the bay leaves, thyme and cloves or allspice.
  • Put this in the pot, along with the carrots, onions and celery.
  • Simmer 3 to 4 hours with the kettle cover slightly open.
  • Or, simmer in crockpot for 8 hours on low.
  • Skim occasionally.
  • Strain and degrease.
  • Easiest way to degrease is to make ahead and chill, remove fat when cold.
  • Freeze if you want.
  • To make the soup, set a saucepan over medium heat and melt the butter.
  • Saute the vegetables, stirring, for 5 minutes.
  • Blend in the flour and cook, stirring for 3 minutes.
  • Remove from the heat and cool briefly, blend in the hot ham stock and the split peas.
  • Bring to a simmer, stirring.
  • Cover and cook about 45 minutes until peas are tender.
  • Salt and pepper to taste after 1/2 hour of simmering.
  • When cooked, mash or puree the soup depending on the consistency you want.
  • Garnish with homemade croutons or sauteed ham bits if desired.

SPLIT PEA SOUP

Split Pea Soup image

This is Megan's version of split pea soup, my version skips the croutons and includes ham. But, because we occasionally have to make something she will eat, I just add the ham to my bowl. If you don't have a vegetarian in your house, putting ham or a ham bone in the soup while it is cooking adds a great flavor.

Yield serves 8 to 10

Number Of Ingredients 9

1 pound dried split peas
2 carrots
1 onion
2 bay leaves
12 cups water
Salt and pepper
5 slices bread
1/3 cup melted butter
1/2 teaspoon garlic powder

Steps:

  • To prepare the soup: Pour the peas into a stockpot and carefully check them for any foreign objects. (I know it sounds weird, but occasionally small stones will slip through during processing.)
  • Peel the carrots and onion and dice them into about 1/2-inch pieces. Place the carrots, onion, bay leaves, and water into the stockpot and bring to a boil over medium-high heat. Decrease the heat to low and simmer, stirring occasionally, for 1 1/2 to 2 hours, or until the peas have broken down. Season to taste with salt and pepper.
  • Preheat the oven to 350°F.
  • Cut the bread into 1/2-inch cubes and place them on a baking sheet. Combine the butter and garlic powder in a small bowl and pour over the bread cubes. Toss the bread cubes until they are evenly coated and bake them for 10 minutes, or until they are golden brown.
  • Ladle the soup into bowls and top with the croutons.
  • It's time to pull out that math you learned in third grade:
  • 2 cups = 1 pint
  • 2 pints = 1 quart
  • 4 quarts = 1 gallon
  • If you remember this, then you won't panic when a recipe calls for 2 quarts of water and you only have a 1-cup measure. You will know:
  • 2 quarts = 4 pints = 8 cups
