Best Pennsylvania Dutch Chicken Corn Soup image

This is a classic favorite! A Pennsylvania Dutch chicken corn soup - complete with rivels (for anyone who doesn't know what rivels are, they are little dumplings). Garnish with chopped fresh parsley.

2 (3 pound) whole chickens, cut into pieces
3 quarts water
3 onions, minced
1 cup chopped celery
2 ½ tablespoons salt
1 ¼ teaspoons ground nutmeg
¼ teaspoon ground black pepper
10 ears fresh corn
3 eggs
1 cup sifted all-purpose flour
½ cup milk

Steps:

  • In a large pot over medium heat, combine chicken, water, onions, celery, salt, nutmeg and pepper. Bring to a boil, then reduce heat and simmer 2 hours, adding water as needed, until chicken is very tender. Remove the chicken from the soup. Refrigerate chicken and soup.
  • When fat solidifies on surface of soup, remove from refrigerator and remove fat. Remaining soup should equal about 2 1/2 quarts.
  • Remove corn from cobs by splitting kernels lengthwise with a sharp knife and scraping corn from cob. Combine soup and corn in a large pot over medium heat and bring to a boil. Reduce heat and simmer until corn is tender, 10 to 15 minutes.
  • Meanwhile, place two of the eggs in a small saucepan and cover with cold water. Bring to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. Set aside.
  • Chop cooled chicken meat and add to soup.
  • In a medium bowl, beat remaining egg until light in color. Beat in flour and milk until smooth. Drop batter by partial spoonfuls into hot broth to make small (1/4 -1/2 inch round) dumplings. Cook, stirring constantly, for 2 to 5 minutes, until dumplings hold their shape and float to the surface. Stir in reserved cooked egg.

When I was growing up in Lancaster, PA, this soup was sold as a fundraiser by all the volunteer Firemen Women's Auxillaries. We'd take our own containers and fill up on the soup which contained fresh corn grown on the neighboring farms. This version of the recipe is my favorite. You may use fresh or frozen corn. If you wish to freeze the soup, cool and do so before adding the rivels.

1 whole Chicken cut into 8 pieces, (4-5 pounds)
3 quart Water
1 large onion cut in quarters
8 Whole Pepper Corns
2 tablespoons Salt or to taste
1/4 teaspoon Crushed Saffron or 8 to 10 strands (optional)
8 ears White Corn or 4 cups frozen corn kernels
3 stalks Celery coarsley diced with leaves
2/3 cup Parsley chopped
2 Eggs hard-boiled, chopped
1/2 teaspoon Salt
1 pinch Pepper ground
1 large egg beaten
3/4 cup Flour more if needed

Steps:

  • To Make Soup: Place chicken in soup pot with enough water to cover. Bring to a boil, reduce heat, and skim foam as it rises to the surface. When it has subsided, add onion, peppercorns, salt, and saffron. Simmer gently but steadily, partly covered, for about 1-1/2 hours or until tender. Remove chicken. Trim and discard bones and skin, and onion. Let soup cool, then skim fat from surface. Tear meat into spoonable pieces and return to soup. Cut kernels from 4 ears of corn, then grate kernels from remaining 4 ears using the large side of a box grater, catching all milk and pulp in a large bowl. If using frozen kernels, puree half in a food processor or blender, adding a little soup if liquid is needed. Add whole kernels and grated or pureed corn to soup along with celery and noodles, egg barley, or rivels. Simmer gently until corn and noodles or rivels are cooked. Add salt and pepper to taste. Stir in parsley and serve, garnishing each portion with chopped hard-cooked egg. This soup freezes well, but do that before adding the noodles, barley, or dumplings. Prepare those when reheating soup. To Make Rivels: Stir salt and pepper into egg and add 2/3 cup flour and beat. Keep adding and beating in flour until mixture is crumbly but a bit sticky. Rub between hands or pinch off pea-size pieces and drop them into simmering soup. Cover loosely and let cook for about 15 minutes or until rivels solidify. To make the rivels ahead of time, cook them in lightly salted boiling water or some extra soup stock and then drain and reserve them to be reheated in the soup just before it is served.

Number Of Ingredients 8

1 whole chicken
Water
Chicken stock
1 -2 eggs
As much sweet corn as you want (2-3 bags is a good place to start)
Thin noodles, optional (If you can find a homemade type noodle, they're best. If you can't find them, small egg noodles will work, too.)
Salt
Pepper

Steps:

  • 1 Cook chicken in slow cooker with plenty of water. I usually fill mine 3/4 of the way full. I also often will cook the chicken overnight. 2 Pick all the meat, light and dark, off the bones. 3 Strain broth from slow cooker into a stock pot. 4 Add water to broth. Don't add too much or you'll lose the flavor. If you accidentally do add too much water you can balance it out with the chicken stock. 5 Add chicken and corn. 6 Bring to boil. 7 Drop in whole, uncooked egg(s) (in the shell). You're basically going to hard boil these in the broth. 8 Allow mixture to cook for 5-10 minutes. 9 Remove egg(s). Shell and dice them. Return them to soup. 10 Add noodles until cooked al dente. 11 Taste and season with salt and pepper as needed.

For the Soup:
4- to 5-pound chicken (cut into 8 pieces)
2 1/2 to 3 quarts water (or as needed)
1 large onion
8 to 10 black peppercorns
2 teaspoons salt (or to taste)
Optional: 8 to 10 threads saffron or 1/4 teaspoon saffron (crushed)
10 ears corn or 4 cups corn (frozen)
3 stalks celery (diced with leaves)
6 ounces wide egg noodles, packaged egg barley or rivels (see below)
Optional: salt (to taste)
Optional: white pepper (freshly ground, to taste)
2/3 cup parsley (finely chopped, fresh)
2 hard-cooked eggs (chopped)
For the Rivels:
1/2 teaspoon salt
1 pinch white pepper (ground)
1 large egg (beaten)
3/4 to 1 cup flour (all-purpose, as needed)

Steps:

  • Gather the ingredients.
  • Place chicken in a soup pot with enough water to cover.

1 - 1 1/2 lb. hamburger, ground turkey, or ground venison
1 Tbs. oil
2 cloves garlic, minced
1/4 c. onion, chopped
1/4 c. green pepper, chopped
3 cans chili beans, or you can use any beans you prefer, I like to use the mixed chili beans
1 can petite diced tomatoes
3 c. tomato juice
1 c. sliced mushrooms, optional
1 c. black olives, optional
1 - 2 Tbsp. chili powder (depending on how spicy you want it )
1 tsp. garlic salt
3/4 tsp. cumin powder
1/2 tsp. black pepper
1/4 tsp. paprika
1 tsp. sugar
1/4 tsp. salt, or as needed to suit your taste

Steps:

  • Brown, crumble and drain your hamburger.
  • Put oil in large pot, add chopped garlic, onion, and pepper. Saute for a minute or two.
  • Add the remaining ingredients. Bring to a boil.
  • Let it simmer for about 15 minutes, to get all the flavor incorporated.

1 1/2 Tbs. butter

1 tsp. parsley flakes
1 tsp. dried thyme
3/4 tsp. black pepper
3/4 tsp. seasoned salt

Steps:

  • If you don't have any cooked chicken on hand, you will need to cook some chicken.
  • In a large pot, melt the butter. Add the garlic, onion, celery, and carrots. Saute for a few minutes over medium heat.
  • Add the chicken broth, water, and seasonings. Bring to a boil.
  • Add the noodles and stir. Let it cook, uncovered, at a low boil for about 15 minutes. (This time can vary depending on the type of noodles you use. Check your noodle package for cooking time.)
  • Add the corn and cooked chicken and bring back to a boil. Serve.

A filling and satisfying soup. Barley may be substituted for the noodles. If you want a bit of extra crunch, add some sliced water chestnuts. If the breasts and thighs you're using are large, you can cut down on the number. If not used to low-sodium cooking, you may want to add more salt. May be frozen (see instructions below).

4 boneless skinless chicken breasts
4 boneless skinless chicken thighs
1 large onion
10 black peppercorns
1/2-1 teaspoon celery salt
1/4 teaspoon crushed saffron
4 cups frozen corn kernels, thawed
6 ounces wide egg noodles
white pepper
2/3 cup finely chopped fresh parsley
2 hard-cooked eggs, chopped

Steps:

  • Place chicken in soup pot with enough water to cover. Bring to a boil, reduce heat, and when it subsides, add onion through saffron. Simmer gently, partly covered, for 1-1/2 hours.
  • Remove chicken and let soup cool, then skim any fat that appears from the surface. Meanwhile, tear the chicken into bite-size pieces.
  • Puree 2 cups of the corn with 1/4 cup of the soup in a food processor or blender; add to the soup along with the chicken, 2 cups whole corn kernels and noodles.   • Simmer gently until noodles are cooked; season with white pepper to taste and stir in the parsley. Ladle into bowls, sprinkle chopped eggs over top and serve.
