CARAMELIZED ONION BURGERS
An excellent grilled burger from the Southern Living's cookbook "30 Years of Our Best Recipes".

Steps:
- Cook onions and sugar in hot oil over low heat 20 to 25 minutes until onion is caramelized, stirring often. Stir in the 1/4 cup water, vinegar, and 1/4 teaspoon of the salt. Set aside and keep warm.
- Combine beef, parsley, tomato paste, Worcestershire sauce, 1/2 teaspoon salt, and pepper. Shape into 4 patties.
- Grill over medium-hot heat until beef is no longer pink.
- Serve on buns with caramelized onions, tomato slices and lettuce.

BEEF AND CHORIZO STUFFED BURGERS WITH CARAMELIZED ONIONS

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- For the caramelized onions: Add the butter, onions and a pinch of salt to a medium saute pan. Place the pan on the indirect heat side of the grill and cook, stirring occasionally until the onions are tender and deeply caramelized, about 1 hour. When ready, remove from the grill and set aside.
- In a mixing bowl, combine the beef and chorizo. Divide the mixture evenly between 8 deli container lids. Flatten the meat into each lid to create an even disk. Pop the 8 meat disks out of the lids. Add the cheese to the center of 4 of the meat disks, then top with the remaining 4 meat disk and seal the edges.
- Preheat a large cast-iron pan on the direct heat side of the grill. Season both sides of the burgers with salt and drizzle with olive oil. Place the burgers in the pan and immediately smash them with a spatula. Cook the burgers for about 2 minutes per side. Remove the burgers from the grill. Spread the mayo on the burger buns and toast them the indirect heat side of the grill.
- To build: To each bun, add some caramelized onions, a burger, the condiments of your choice and cilantro. Serve!
LATIN BURGERS WITH CARAMELIZED ONION & JALAPENO RELISH

- To make the Latin Burgers:.
- In a large bowl, mix thoroughly by hand the ground beef, the chorizo, the adobo seasoning, the grated onion and the bread crumbs.
- Form the burgers into 6 patties without pressing them too much or they can become tough.
- Line a baking pan with waxed paper and put the burgers side-by-side in a single layer.
- Cover and refrigerate for at least 30 minutes.
- This will help the burgers hold together.
- If you make more than you need just separate with waxed paper and insert into a storage freezer bag for future use.
- To make the Caramelized Onion and Jalapeno Relish:.
- Heat the olive oil in a heavy skillet over medium-low heat.
- Add the onions and season with salt and pepper.
- Add the jalapeno chiles and the brown sugar.
- Saute for 15 minutes or until the onion and the chiles are caramelized and soft.
- Set aside.
- To make the Red Pepper Mayonnaise:.
- Drain the roasted red peppers and put them in a blender or food processor. Add the mayonnaise, and season with salt and pepper.
- Puree the mayonnaise and roasted red peppers until well combined and the mixture is smooth.
- NOTE: This may be done up to 2 days ahead of time, and in fact the flavor will be more complete with an overnight chilling.
- To cook the Latin Burgers:.
- Preheat an outdoor grill or grill pan on the stove top over medium-high heat. Place the burgers on the hot grill or pan until cooked to desired doneness. Due to the raw chorizo in the recipe, at least medium-well is recommended, approximately 10 minutes on each side.
- In the last 5 minutes of cooking, top the burgers with the slices of cheese so it can melt.
- If your grill has a lid, putting it on briefly will help the cheese melt quickly and evenly.
- To serve: Spread about 1 tablespoon of the red pepper mayonnaise on both sides of the rolls.
- Lay a burger on the bottom halves, and top with a couple of spoonfuls of the caramelized onion and jalapeno relish.

LAURA'S STUFFED BURGERS WITH CARAMELIZED ONIONS AND SWISS
This may seem like a lot of time for preparing a hamburger, but the extra time spent sauteing the onions is worth it. Yum!

- Combine lean ground beef and next 3 ingredients; (shape into 12 equal-size patties for 6 servings or 16 patties for 8 servings); cover and chill.
- Cook onions and sugar in hot oil over medium-low heat 30 minutes, or until caramel-colored, stirring occasionally. Cool 10 minutes.
- Spoon onions evenly over half of the patties. Top evenly with cheese slices, tearing cheese slices as needed to fit patties. Cover with remaining patties, pressing edges to seal.
- Coat grill rack with cooking spray. Grill, covered with grill lid, over medium-high heat (350 degrees to 400 degrees ) 5 to 7 minutes on each side or to desired degree of doneness.
- Arrange stuffed patties over bun bottoms, top with lettuce, tomato, and if desired, ketchup and mayonnaise.

- First step is to caramelize the onions. This takes a little time, but it's well worth it. Spray a large skillet with cooking spray and place all onions in the skillet. Turn heat to low/ medium setting. Just hot enough to brown the onions a little, but do not let them get blackened. You can add a little salt as you stir, but just a pinch. Add tbsp. of water if they start to get too dry. Keep stirring the onions every 10 minutes until they are golden brown and sweet tasting. Add the mushrooms to the onions and cook until the mushrooms are cooked through and about half the size they were. Add the Golden Mushroom Soup at this point and let the mixture simmer while you prepare the burgers.
- To prepare the burgers you will first separate the meat into 4 parts. Then split the parts in half. Use one half to form the bottom part of the patty. Then on top of the bottom half... lay a slice of Swiss cheese that has been cut a little to strips so that you can add it to just the middle. Then lay the other half of the beef on top of that and form the patty with the Swiss cheese inside. Form all patties this way. Cook on medium high heat until the inside temp reaches the safe point for ground beef.
- Once the meat is finished cooking then layer on the meat and then the onion and mushroom sauce to the top. I let the sauce drip off the sides because it's so good! Then it's ready to enjoy!
