Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, stir together, flour, sugar and salt. Add water, 1 egg white and melted butter; mix well to make a stiff dough. Knead until dough is smooth, about 5 minutes.
- Divide dough into 10 balls. Roll each ball on lightly floured surface until paper thin. Place on ungreased baking sheet. Brush with egg white and sprinkle with sesame seeds.
- Bake in preheated oven for 10 to 12 minutes, until browned.

LAVASH (ARMENIAN FLATBREAD)
A recipe for Lavash (Armenian Flatbread). Flour, salt, and water are combined to form a smooth dough, rolled into thin sheets, and baked until golden.

- Place a large pizza stone in the center rack of an oven and preheat to 500˚F.
- In the bowl of a stand mixer fitted with a dough hook or a large bowl, combine the flour and salt. Stir in the water and knead to form a smooth and soft dough. If too crumbly, add a little more water. If too sticky, add a little more flour. Cover the bowl with plastic or a towel and allow to rest for 30 minutes.
- Cut the rested dough into 4 equal pieces. Place one piece on a work surface and cover the others. Roll the dough into a long oval or rectangle as thin as possible.
- Carefully transfer to the preheated stone and cook until puffed with golden spots, about 2-3 minutes. Remove to a plate and lightly spray or sprinkle with water. Cover with a damp cloth and repeat with remaining pieces of dough, spraying them with water and stacking with the previously cooked lavash.
- After cooling, store in an airtight bag at room temperature or freeze for up to one month.
SMOKY CHICKPEA LAVASH WRAP
Vegan lavash wraps stuffed with a smoky chickpea, tomato, and onion mixture, crisp slices of refreshing cucumber, and fresh spinach make the best lunch or dinner! The wraps are easy to make and ready in 30 minutes! Enjoy them at home or eat them on the go for a satisfying and filling meal.

- In a large pan over medium heat, saute the diced onion in 3-4 tbsp vegetable broth until soft and translucent.
- Add minced garlic, 1 tbsp smoked paprika, 2 tsp cumin, 1/4 tsp salt, 1/4 tsp black pepper, and 3 tbsp tomato paste to the pan with the onions. Stir and let it cook for 2-3 minutes, it will smell very fragrant.
- Add 3 tbsp lime juice, 1 tbsp apple cider vinegar, 1 tsp maple syrup, 1 tbsp hot sauce, 1 cup water, and 3 cups cooked chickpeas to the pan. Stir to combine and let it cook for 15 minutes or until the sauce has thickened.
- Lay a lavash wrap on a flat surface. Put 1 handful of spinach on the left side of the wrap (closest to you). Next to the spinach, put about 1/2 cup of chickpeas. To the right of the chickpeas, arrange a thin layer of cucumbers. If you want to add mashed avocado or any type of sauce, spread it on the right side of the wrap (farthest from you) so it will seal the wrap as you roll it. Sprinkle green onions over the top. Fold the center in and roll it up.

LAVASH CRACKER BREAD
This is identical to the cracker bread sold at delis in large grocery stores that costs six dollars for three big rounds. You can make it for pennies! I fell it love with it as an appetizer with Harvarti cheese melted on it but with the price of the cheese and lavash we didn't have it much.

Steps:
- In a large bowl, stir together the water, whole wheat flour, and yeast until moistened. Mix in the salt and 1 cup of all-purpose flour. Gradually mix in the rest of the flour using a mixer with a dough hook attachment or wooden spoon.
- When the dough comes together, knead in your mixer or on a floured surface for 8 to 10 minutes to make an elastic ball. Add more flour or water if needed to keep dough from getting sticky or too stiff. Pour a little bit of oil in the bowl and turn the dough to coat. Cover and let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and divide into 30 pieces about the size of small walnuts. Rolling the dough into a long log helps to divide it evenly. Roll each piece into a ball and cover with a damp kitchen towel for 30 minutes to rest.
- Preheat the oven to 500 degrees F (260 degrees C). Place a baking sheet on the center rack of the oven so it can preheat at the same time. Do not grease.
- Roll each ball into a circle about 8 inches across. The dough should be paper thin, almost translucent. If they are too thick, they will bubble up like pita breads.
- Pull out the oven shelf and place as many crackers on your baking sheet as you can fit, 2 or 3. Close the oven and bake for about 3 minutes. The crackers should be lightly browned on the top with small bubbles. You may have to adjust your thickness for the next batch.
