APPLE PEANUT BUTTER DELIGHTS



Apple Peanut Butter Delights image

6 whole-wheat English muffins
1 cup peanut butter
2 medium Granny Smith apples, cored and thinly sliced
1/2 cup sugar
1 tablespoon ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.
  • Put the muffin halves on a baking sheet and bake for 10 minutes. Set the oven to low broil and cook until bubbly and caramelized, about 3 minutes.

1 cup firmly packed brown sugar, divided
3/4 cup flour
1/4 cup (1/2 stick) cold butter or margarine

Steps:

  • Preheat oven to 350°F. Toss apples with 1/2 cup of the sugar until evenly coated; spoon evenly into greased 9-inch square baking pan.
  • Combine flour and remaining 1/2 cup sugar in medium bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in pecans. Sprinkle over apple mixture.
  • Bake 1 hour or until apples are tender and topping is lightly browned.

Steps:

  • Divide apples among four ungreased 10-oz. microwave-safe bowls. Top each with 1 teaspoon of brown sugar. Sprinkle with cinnamon; top each with 1 teaspoon butter. , Cover and microwave on high for 7-1/2 minutes or until apples are tender. Cool slightly; drizzle with caramel topping if desired.

Substitute what you like for a sweetener...I've used stevia, aspartame, and agave nectar, all with success. Greek yogurt takes some getting used to -- it's not for everyone!

5 apples, peeled sliced (5 cups)
1/2 cup white sugar (divided)
1/2 teaspoon cinnamon
1/4 teaspoon fresh grated nutmeg
1/2 cup all-purpose flour
1/2 cup plain breadcrumbs
2 cups shredded medium cheddar
1/4 cup melted butter
1/2 cup toasted sliced almonds or 1/2 cup pine nuts
1/2 cup sultana raisin (dried cranberries or cherries)

Steps:

  • Preheat oven to 325 degrees F.
  • Toss prepared apples with 1/4 cup of the white sugar, cinnamon, and nutmeg.
  • Spread into a buttered 9 inch baking pan.
  • Mix the flour, bread crumbs, remaining 1/4 cup white sugar, shredded cheese, almonds and raisins( or fruit of choice).
  • Sprinkle mixture evenly over the apples.
  • Bake 40 minutes or until golden and apples are tender.
  • Serve warm with whipping cream, or ice cream.
  • Apple recommended is Gala, Granny Smith, Ida Red,Pinks, or Spartan, an apple that holds its shape when cooked.

On a graham cracker base, apple pie filling and toffee bits are layered with a creamy brown sugar-cinnamon mixture in this rich and delicious chilled dessert.

1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
2 tablespoons brown sugar
1 teaspoon cinnamon
½ cup skim milk
1 (8 ounce) container whipped topping
2 (4.8 ounce) packages graham crackers
2 (21 ounce) cans LUCKY LEAF® Premium Apple Fruit Filling
1 (8 ounce) container frozen whipped topping, thawed
1 cup toffee bits
¼ cup caramel sauce

Steps:

  • To prepare the cream cheese layer: Beat cream cheese, powdered sugar, brown sugar and cinnamon with an electric mixer until light and fluffy.
  • Add the skim milk and whipped topping and beat on medium-high speed until it is fully mixed into cream cheese.
  • Divide into thirds.
  • For the layers: Cover the bottom of your 9x13-inch pan with graham crackers. Try to fill in as much of the bottom pan as you can with the crackers.
  • Cover graham crackers with LUCKY LEAF®Premium Apple Pie Filling. Then spoon 1/3 of the cream cheese filling on top of the apple filling. Add a small handful of toffee chips on top and cover with a thin layer of whipped topping. Repeat this twice so that you end up with three layers. Cover the top layer of whipped topping with additional toffee bites and then drizzle with caramel.
  • Let it set up to two hours in the fridge so the graham crackers will soften. Store in an airtight container and keep refrigerated. Best served cold.

4 tart apples, in 1/4 inch slices
1 tablespoon lavender flowers (half the amount if dried)
1/2 teaspoon ground cinnamon
1 tablespoon lemon juice
3 tablespoons butter
3/4 cup brown sugar
1 cup flour
1/2 teaspoon baking powder
1 egg
1 pinch salt

Steps:

  • Combine apples, lavender, cinnamon and lemon juice in a baking dish.
  • Mix apple slices gently to allow them to coat evenly.
  • Dot with butter.
  • Mix sugars, flour, and baking powder together, then add egg and salt.
  • Spread over apple slices.
  • Bake at 350 degree F for 40-45 minutes.
