LAVENDER COOKIES
Delightful little cookies that add a wonderful atmosphere to any afternoon tea. They have a delicate lavender flavor that is not overpowering at all! My first batch of these cookies disappeared before it had a chance to cool!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Cream together the butter and sugar. Beat the egg, and blend into the butter and sugar. Mix in the lavender flowers and the flour. Drop batter by teaspoonfuls onto cookie sheets.
- Bake 15 to 20 minutes, or until golden. Remove cookies to cooling racks, and sprinkle with decorative sugar and additional lavender flowers if desired.

LAVENDER SAUCE
I got this recipe from a community ed course that was held where I work about edible flowers. It said you can drizzle it over ice cream, cake or fruit.

Steps:
- Using a candy thermometer, heat water, sugar and honey to 235 degrees.
- Remove from heat and stir in flowers.
- Cool 3 minutes and strain.
- Add a few drops of lemon juice and stir.
- If the syrup gets too firm you can make candy bows or squiggles by drizzling it on parchment paper.

Steps:
- Heat sugar, water, and corn syrup in a medium saucepan over medium-high heat, stirring occasionally, until sugar dissolves, 3 to 4 minutes. Bring to a boil, and cook, washing down sides of pan with a wet pastry brush to prevent crystals from forming, until medium amber, about 5 minutes. Remove from heat, and add heavy cream. Return to heat. Cook, stirring, until combined. Remove from heat, and stir in butter, lavender, and fleur de sel. Let stand for 15 minutes. Strain.
BLUEBERRY SAUCE WITH FRESH LAVENDER
Blackberries can be used in place of blueberries. Try this sauce on pound cake, crepes, ice cream, waffles, etc. From Inn on the Twenty cookbook.

Steps:
- In a saucepan bring 1 1/2 cups blueberries, sugar, lavender and lemon juice to a simmer.
- Simmer ingredients 10 minutes then remove from heat.
- Remove lavender stems and puree sauce using a handheld immersion blender or food processor. Puree until smooth.
- Add the remaining 1/2 cup blueberries and bring back to a simmer.
- Sauce can be served warm, chilled or at room temperature.
