A truly delicious, over-the-top brownie with creamy mint and chocolate toppings!

6 oz bittersweet chocolate chips - 60% cocoa ((or chopped bittersweet chocolate. I recommend Ghirardelli))
1/2 cup unsalted butter (, diced into tablespoons, plus more for baking dish)
1 1/4 cups granulated sugar
1/2 tsp salt
3 large eggs
1/2 tsp vanilla extract
2 Tbsp cocoa powder
2/3 cup all-purpose flour
1/2 cup unsalted butter (, softened slightly)
3 oz cream cheese (, softened)
1 1/2 tsp mint extract
5 drops green food coloring (, or more/less as desired (optional))
2 1/2 cups powdered sugar
1 - 2 pinches salt (, to taste)
8 oz semi-sweet chocolate chips
5 Tbsp unsalted butter (, diced into tablespoons)

Steps:

  • For the brownie:
  • Preheat oven to 325 degrees. Line a 13 by 9-inch baking dish with 2 sheets of aluminum foil (one going each direction) and leaving a two-inch overhang on all sides. Brush foil with melted butter (about 1/2 - 3/4 Tbsp), set aside.
  • Add bittersweet chocolate chips and butter to a microwave safe bowl. Heat mixture on HIGH power in 15 second intervals, stirring well after each interval until melted and smooth. Pour mixture into a large mixing bowl and using a rubber spatula (for entire mixing process), mix in granulated sugar and salt.
  • Blend in eggs one a time, mixing just until combined after each addition and adding in vanilla with last egg. Sprinkle cocoa powder into an even layer over batter and fold in just until combined.
  • Add half of the flour and fold several times then add remaining flour and fold just until combined (batter will be thick). Pour and spread mixture into an even layer in prepared baking dish.
  • Bake in preheated oven 20 - 23 minutes until toothpick inserted into center comes out with a few moist crumbs attached. Cool completely on a wire rack
  • Mint Cream Filling:
  • In the bowl of an electric stand mixer fitted with the paddle attachment, whip butter and cream cheese until smooth and fluffy. Blend in mint extract and green food coloring if desired, then with mixer set on low speed slowly add in powdered sugar, add 1 - 2 pinches salt to taste, and mix until smooth and fluffy.
  • Spread mixture over cooled brownies into an even layer. Transfer to refrigerator and chill 30 minutes.
  • For the Chocolate Topping:
  • To a microwave safe bowl, add semi-sweet chocolate chips and butter and heat mixture on HIGH power in 15 second intervals, stirring well after each interval until melted and smooth.
  • Remove brownies from refrigerator and spread chocolate topping into an even layer over brownies. Return to refrigerator and chill 30 minutes longer, or until chocolate has set. Cut into squares and store in an airtight container.

1/2 cup butter (softened)
1 teaspoon vanilla
2 eggs
2/3 cup flour
1/2 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup Andes Creme de Menthe pieces

Steps:

  • Preheat oven to 350 degrees. Grease or line with foil a 9 x 9 baking dish.
  • In a large bowl or the bowl of a stand mixer, cream together butter and sugar.
  • Add vanilla and eggs, and mix until smooth.
  • Add flour, cocoa, baking powder, and salt, and mix until just combined.
  • Gently fold in creme de menthe pieces, reserving a few to sprinkle on top.
  • Spread evenly in prepared pan, top with remaining creme de menthe pieces, and bake 20-25 minutes, or until a toothpick inserted about two inches from the side of the pan comes out clean.
  • Let cool and then cut into squares (I usually cut 16 squares, since they are pretty rich).

Steps:

  • Preheat oven to 350 degrees.
  • Mist 9x13 baking pan with cooking spray.
  • Prepare brownies: In double boiler, melt baking chocolate and 1 cup butter over simmering water; cool slightly.
  • In medium mixing bowl, beat eggs with a whisk until blended, then add the 2 cups granulated sugar and continue whisking until mixture is light and fluffy.
  • Add cooled chocolate mixture, salt, vanilla and flour.
  • Keep whisking until thoroughly blended.
  • Pour batter into prepared pan and bake 25 minutes.
  • Remove from oven and leave brownies to cool in pan.
  • Make filling: Using an electric mixer on medium speed, beat the 1/2 cup butter and confectioners' sugar together until well blended.
  • Stir in the creme de menthe and blend well.
  • Spread over cooled brownies.
  • Refrigerate in original baking pan until filling is firm.
  • Make icing: Melt the chocolate chips and 6 T butter in the top of a double boiler, stirring until smooth. (You can do this in the microwave, just monitor closely and stir a few times.).
  • Pour the warm glaze over the filling and tilt pan to distribute the icing evenly.
  • Refrigerate until chocolate hardens.
  • To cut, allow brownies to come to room temperature in the pan so chocolate doesn't crack.

his is a very easy recipe. My son won a purple ribbon (which is higher than a blue ribbon) at the county fair when he was 10 years old. This was also his first paid 'catering' job for a graduation party when he was 12 (he's married now, so that gives you a clue as to how long I've had this recipe). Great brownies with a mint flavored filling.

1 cup butter, softened

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.

  • To Make Creme De Menthe Frosting: Combine the confectioners' sugar, 1/2 cup butter or margarine and creme de menthe. Mix until smooth.
  • To Make Melted Chocolate Topping: Melt the chocolate chips and 6 tablespoons butter together. Stir until smooth and spread evenly over the top of the cooled filling.

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in syrup and vanilla. Add flour and salt; mix well. , Pour into a greased 13x9-in. baking pan. Bake 30 minutes (top of brownies will still appear wet). 1-1/2 pounds white candy coating, coarsely chopped, divided

3 tablespoons heavy whipping cream

  • Line a 13x9-in. pan with foil. Grease foil with butter. , Microwave 1 pound candy coating and chocolate chips until smooth, stirring every 30 seconds. These decadent rich minty brownies taste like creme de minth but are actually made with mint extract. They are fantastic and pretty darn easy. But a word of advice, don't make these unless you have somewhere to bring them because they are dangerous! If mint isn't your thing, you could easily vary the flavor of extract and the food coloring. Prep time does not include cooling time.

4 ounces baker's unsweetened chocolate squares, chopped
2 cups sugar
1 cup flour
1/2 teaspoon vanilla
1/2 teaspoon salt
4 eggs

4 1/2 tablespoons butter
2 1/4 cups powdered sugar
1 1/2 teaspoons peppermint extract
2 tablespoons evaporated milk
green food coloring (optional)
6 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13 inch pan with non-stick spray (I think the kind with flour works best).
  • In a medium bowl, melt chocolate and butter. Add sugar and beat by hand until well blended.
  • Add eggs, flour, vanilla and salt. Blend well.
  • Pour batter into pan and bake for 20 minutes.
  • Allow to cool, then move pan to freezer.
  • In a medium bowl, combine powdered sugar, 4 1/2 tablespoons butter, peppermint extract, evaporated milk and food coloring.
  • In a separate bowl or saucepan, melt the 6 ounces of chocolate chips.
  • Remove brownies from freezer. Spread mint filling over frozen brownies evenly.
  • Immediately pour chocolate over filling. Tip pan to coat evenly. Let set 15 minutes.
  • Cut into small squares.
  • Store bars in refrigerator or freezer until ready to eat.
