1 shallot, finely chopped
1 teaspoon Italian seasoning
1/2 cup pitted niçoise or kalamata olives, cut in half
1 can (6 oz) albacore tuna, well drained, broken into chunks
1 medium tomato, seeded, coarsely chopped
1 hard-cooked egg, finely chopped
1 tablespoon chopped fresh parsley
48 crackers

Steps:

  • In small bowl, mix cream cheese, shallot and Italian seasoning until well blended. Spread in 8-inch circle on serving plate.
  • Top with olives, tuna, tomato, egg and parsley. Serve with crackers.

1/4 cup chopped onion
1 tablespoon butter
1 (10 3/4 ounce) can cream of chicken soup
1 (12 ounce) can solid white tuna, drained and broken in to chunks (water pack)
1 (9 ounce) package frozen artichoke hearts, thawed and cut up
2/3 cup milk
1/2 cup shredded mozzarella cheese
3 tablespoons sun-dried tomatoes packed in oil, drained and sniped
3 tablespoons sliced pitted ripe olives
1/2 teaspoon dried thyme, crushed
3 tablespoons grated parmesan cheese

Steps:

  • Cook fettuccine by following the package directions; drain.
  • In a large skillet, sauté onion in hot melted butter over medium heat until tender.
  • Remove skillet from heat; stir in soup, tuna, artichoke hearts, milk, mozzarella, tomatoes, olives, and thyme.
  • Stir in cooked fettuccine.
  • Transfer mixture to a greased 2-quart casserole.
  • Sprinkle with parmesan cheese.
  • Bake, covered, in a preheated 350°F oven for 20 minutes.
  • Uncover and bake about 20 more minutes or until casserole is bubbly.
  • Let stand 10 minutes before serving.

2 English cucumbers, seeded and chopped
1/2 teaspoon salt
2 garlic cloves, minced and mashed to a paste with
1/2 teaspoon salt
fresh ground black pepper
1/4 cup olive oil
2 cups finely chopped onions
4 teaspoons minced garlic
1 teaspoon dry oregano, crumbled
1 cup white wine
1/2 cup low sodium chicken broth
5 1/2 cups drained canned navy beans
salt & freshly ground black pepper
4 (6 1/2 ounce) cans tuna in olive oil, drained and flaked
1 1/3 cups finely chopped red onions
1 cup kalamata olive, pitted and minced
2 cups minced fresh parsley leaves
1/4 cup red wine vinegar
2 tablespoons extra virgin olive oil
salt & freshly ground black pepper
4 plum tomatoes, diced
2 green bell peppers, diced
1 red onion, sliced thin
1/2 cup kalamata olive, pitted and sliced

Steps:

  • Make the cucumber layer: Drain the yogurt in a coffee filter-lined sieve set over a bowl for 1 hour.
  • Put the cucumber in another sieve, sprinkle it with the salt, and let it drain for 1 hour.
  • Pat the cucumber dry between paper towels and transfer it to a bowl.
  • Stir in the yogurt, garlic, and salt and pepper, to taste, and combine the mixture well.
  • Set aside Make the bean layer: Heat the oil in a skillet over medium heat.
  • Add the onion, garlic, oregano, and cook, stirring, until softened.
  • Add the wine and simmer until reduced by 1/2.
  • In a food processor, puree the beans and the onion mixture with the broth and season with salt and pepper.
  • Transfer the mixture to a bowl and chill.
  • Make the tuna layer: In a bowl toss together the tuna, onion, olives, parsley, vinegar and olive oil.
  • Season with salt and pepper.
  • Assemble the salad: Spread the bean puree in the bottom of a trifle bowl, top with the tuna mixture, and spoon the cucumber mixture over the top.
  • Chill covered, for at least 3 hours or overnight.
  • When ready to serve, sprinkle the top with the garnish and serve.

1/3 cup olive oil, plus more for baking dishes
Coarse salt and ground pepper
1 pound wide egg noodles
2 red bell peppers (ribs and seeds removed), thinly sliced
1/2 cup all-purpose flour
5 cups whole milk
4 cans (6 ounces each) tuna in olive oil, drained
1 can (14 ounces) artichoke hearts, drained and thickly sliced
5 scallions, thinly sliced
1/2 cup finely grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Lightly oil two 8-inch square (or other shallow 2-quart) baking dishes. In a large pot of boiling salted water, cook noodles until 2 minutes short of al dente; drain, and return to pot.
  • Meanwhile, in a 5-quart Dutch oven or heavy pot, heat oil over medium. Add bell peppers; season with salt and pepper. Cook until crisp-tender, 4 to 6 minutes. Add flour and cook, stirring, 1 minute. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to a simmer.
  • Remove from heat; add mixture to noodles in pot, along with tuna, artichoke hearts, and scallions. Season with salt and pepper, and toss. Divide between prepared baking dishes, and sprinkle with Parmesan. Bake until golden and bubbling, about 20 minutes.

I found the original recipe in an article and tweaked it to my taste. Have to say that I like this Mediterranean version of tuna salad better than normal mayo/prepared mustard version. Spread into pita bread or on sandwich bread and enjoy... I like to add slices of Swiss or Cheddar cheese and a handful of fresh spinach leaves.
